About this Cook
I am a mom to one boy and a wife to another, and boys like to eat! I am lucky that they are both like (or at least are tolerant of) my adventerous cooking selections. I am also a Type 1 diabetic, so I try to limit my intake of carbs. Let's be honest, though. Carbs are like my secret love affair...sometimes (okay a lot of times) I sneak some.
My favorite things to cook
We like all things chicken in this family, but my true passion is in refined carbs...oh sweet love of cakes, cookies, and breads! You are an enemy to my diet, but I never liked that diet anyways... Seriously, though, I love to bake, with yeast breads at the top of the list. There's just something about getting your hands dirty...
My favorite family cooking traditions
Pie, pie, pie. Every special occasion is an occasion special enough for pie. I also love that my mom made everything from scratch. Your stomach loves any food just a little bit more when you put a little heart into it!
My cooking triumphs
So far...I don't think anything I've cooked is spectacular enough to be called a triumph. Once I make popovers and don't burn them, I'll let you know. Those things are cursed. Same thing with oven fries. Why are they never crispy?
My cooking tragedies
Tragedies? That's a little harsh, right? But alas, I have failed a little bit at some things. Like when I burnt you know how bad burt eggs smell?!

Jamaican Burgers
Uber delicio-so! Used a jalapeno instead of the habanero, brown rice instead of white, and quick oats instead of breadcrumbs. I mixed them with my hands, and had no problem with them holding together. I baked them at 375 for about 15 minutes. Topped them with avocado and lettuce, and served them with homemade crispy sweet potato chunks for an awesome vegan meal. Thanks for this recipe!

Overnight Blueberry French Toast
This was fantastic. I followed the recipe to the letter, except for two things: I left out the butter in the sauce and added a little bit of powdered sugar to the cream cheese. Because of adding the sugar to the cream cheese, I didn't put it in the casserole as cubes, but spread it over the bread instead. Made this for myself for mother's day. I was so happy :P

Kung Pao Chicken
This was delicious. I used chicken stock instead of the wine, and only 1 tablespoon cornstarch (in the sauce, not the marinade. I cut the recipe in half, but kept the marinade and sauce ingredients the same. Used a bit of crunchy peanut butter instead of the peanuts, since I didn't have any on hand. Added some broccoli...this was just what I was craving for Asian food tonight!
