Basil and Pesto Hummus

Love it! I followed the recipe exactly, except that I squeezed half a lemon into it. I make hummus a lot and this one's definitely a keeper!!

Summer Squash Bread

Delicious!! I took the advice of other reviewers and used only half the amount of nutmeg called for (which was still quite a bit). I used apple sauce instead of vegetable oil. I may try to spice it up some more next time with raisins and more cinnamon.

Graham Cracker Muffins

Delicious and easy recipe! I added chocolate chips, a teaspoon of vanilla and a shake or two of cinnamon. Oddly, although I followed the recipe amounts, mine only made 8 small muffins. I'll have to up the amounts next time.

Soft Ginger Cut-Outs

The recipe's great, but the instructions could be a little better. First of all, my dough was very crumbly and difficult to stick together, even after adding two teaspoons of water to it. Second, it should be noted that the cookies expand significantly when baked, so leave lots of room between each gingerbread-person on the tray. Finally, for some reason I was never able to get the icing firm enough. It says to beat on high for 7 to 8 minutes: I beat on high for 20 minutes and it still didn't form stiff peaks. As a result, the icing ran a little on the cookies, making it very difficult to make faces, buttons, and the like. If you're short on time or simply want to avoid the mess, It's probably a better idea to buy the icing. Otherwise the cookies are delicious and low in fat - definitely a keeper!

Baked Sweet Potato Sticks

Even better than I imagined! I suggest using much more paprika, and also adding salt. LIke others, I found 40 minutes to be way too long. I took them out at 35 minutes and already a few were burned, so I'd suggest 25 to 30.

Brownie Oat Cookies

Delicious! I did make two significant changes: I used the whole egg, and instead of unsweetened cocoa, I actually used Mexican-spiced ground chocolate (which is actually just a hot cocoa mix that I happened to have at home). They came out moist and chewy and delicious - more like cookies than brownies though.

Yummy Bok Choy Salad

A delicious, fresh recipe that can be thrown together in minutes! I have made the recipe twice now - the first time toasting the almonds in the oven, and the second time toasting them in a frying pan. The latter is slightly faster - but both work. I never knew bok choy could taste this good uncooked!

Vegetable-Stuffed Portobello Mushrooms

Delicious, healthy, and easy! I used fresh chopped onion and garlic instead of the powders. I also cut out the mozzarella cheese to cut down on the fat content. The result was hearty and full of flavor!

Creamy Spinach-Stuffed Portobellos

What a surprise! I was expecting something bland and watery, given the lack of spices in the ingredients. I thought this dish was absolutely delicious. I made several substitutions because I didn't have all the ingredients: I used condensed cream of mushroom soup instead of cream of celery; frozen spinach instead of fresh; olive oil instead of vegetable oil; and I cut out the bread crumbs altogether. Healthy, hearty, easy, and full of flavor!

Spinach and Yogurt Soup

Surprisingly delicious! I used olive oil instead of butter, and I didn't have any tarragon at home. I also reduced the amount of yogurt by a little bit, just to retain the spinach flavor. This recipe's a keeper!

Italian Kale

I thought this recipe was great - easy, healthy, and delicious! I followed the directions, while adding a bit of water to the kale during the first step (as others suggested). I also tripled the amount of garlic. I also chopped up the stems and threw them in with the leaves, and was glad that I hadn't discarded them. The result was a tender, yummy side dish - not too oily or tangy, like some other vegetable sautees that use oil and vinegar.

Chayote Soup

Delicious! My only change would be to use a food processor instead of a blender. I have a really good blender, but it still came out not quite creamy enough until I put it through the food processor. It might be good with a dollop of queso fresco at the end too - I'm going to try that next time.
