Easy and Delicious Chicken and Rice Casserole

I actually just used this recipe as inspiration. To save time I made a sort of deconstructed casserole. I put 2 lg cans chicken breast, 1 can condensed cream of mushroom soup (+ 1 can water), 1 pkg dry onion soup mix in a skillet and seasoned with my favorite spices. I let it simmer for about 15-20 minutes, adding a can of peas toward the end and then served over rice. It was delicious!

Microwave Pralines

so easy to do! I followed the directions exactly (except I used real butter) but was not able to stir for 3 minutes because they started to set up very quickly! They didn't look so pretty but tasted great. My second batch I decreased the time by 1 minute and used about 2 cups pecans and they came out perfect, gorgeous and yummy!! would recommend this simple recipe to anyone! and I guess I make mine big because I only got about a dozen with each batch.

Brownie Pie

I put chopped Andes chocolates on top for a minty twist. It was really yummy but it wasn't spectacular. Next time I'll probably double the pudding.

Apple Gingerbread Cake

Unfortunately I didn't have any nuts but I did add a few raisins and just covered the batter with a thin layer of brown sugar (more than 2T) and it turned out really good. I'll definitely try this again with the nuts!

Vanilla Pumpkin Pie

Very easy,esp for beginners like me. It was good, better chilled than room temp. After reading the tips I used Pump.pie filling, dbled the vanilla and cinnamon, subbed 1/2 sugar with brown sugar and used a mix of evap. milk with sweet. cond. milk. Very creamy and mild tasting-sweet enough but no big WOW factor. Next time I will add more spice.

Vinegar Based BBQ Sauce

This is exactly what I was looking for and it hit the spot! I had a sauce like this at a catered event in NC and have been thinking about it ever since. I was worried about it being too sweet so I cut back the brown sugar just a tad. amazing!!

Hawaiian Wedding Cake III

made this for a Large family gathering and it was a huge success! I used the golden butter cake mix and it was SO delicious. not soggy at all but I didn't have the recipe in front of me and didn't realize I was supposed to pour the pineapple on while the cake was still hot so I did it once the cake had cooled completely.....but like I said, it turned out great. will be making this again and again!

Grilled Sausage with Potatoes and Green Beans

After reading several reviews I decided to roast in the oven (425 degrees) but it took about 75 minutes before the potatoes were done! I used canned green beans(added after 1st 30 minutes), extra onion, garlic, italian seasoning, season salt and a T or so of butter. It tasted great, it just took forever.

London Broil for the Slow Cooker

very easy to make, I didn't have any garlic so I sliced up a large onion instead and it was pretty tasty and after 7 hours the meat was very tender. I served it over rice and will definitely try this again but will add mushrooms next time!

Crisp Little Lemon Cookies

Quick Hoppin' John Soup

I left out the 2 c water to make it thicker. Added leftover ham, sauteed onions and peppers, some cajun seasoning. it was so delicious and thick like a stew rather than a soup and I served it with cornbread. Yummy!! Will definitely make this again!!

Red Skinned Potato Salad

I have never made potato salad before. Ever. I chose this for my first try and will never use another! My husband was skeptical of the bacon until he took the first bite. The bacon MAKES this dish, so flavorful and adds nice texture. The only thing I did different was to use green onions instead of regular. And to make sure it blended evenly I mixed my mayo, onions, celery, s&p in a separate bowl before adding to my potato/ egg mix. Bacon on top and stirred in. I cook my bacon very crisp and had no problems with it getting soggy, even after a couple days. Yummy!!

Rocky Road Ice Cream

Very delicious and creamy and EASY to make! My kids said "NO!" to the nuts so we just used the mini marshmallows and it was yummy. I will say that I did not stir the cocoa mix continuously while on the stove and it got a little clumpy. I added a big spoonful of marshmallow creme to smooth it out and it was fine. So make sure you keep stirring!!
