Mocha Icing

I like this recipe - the flavour is quite coffee like, and chocolatey - but i suggest a really really strong coffee. I once did it with a mild coffee and there was barely any taste. Instead of melting the butter, I've done it with a room temperature butter whipped first. Then added the coffee (lukewarm) and the chocolate and the consistency is almost perfect.

Molasses Sugar Cookies

I make these every year, for the last three years! I found a shortening alternative (Earth Balance) that doesn't have mono glycerides. I don't know if this recipe makes 72 I feel ilke it makes less. For some reason I dont' keep track. i will be doubling up this year!

Robin's Quinoa with Mushrooms and Spinach

I've made this three times now, and each all different. This is a classic base recipe and you can add anything to it. I added shallots with the onion and garlic, and collard greens along with the spinach. And sprinkled flaxseed all over it. Only used half the chicken stock recommended (bc it had yeast it in it, and I shouldn't have yeast) + water and salt The first 2 times I rinsed the quinoa before putting it in, and it did take out a bitter aftertaste. I didn't the 3rd time, but it's not noticeable unless you look for it. The baslamic vinegar and thyme do a lot to get rid of that.

This is the exact same recepie, word for word, that I found in a recipe collection for Alexis Fine Cheese. They used La Sauvagine cheese. It was excellent.

Chocolate Toffee Crunchies

Although it turned out very good, it was WAY too sweet. I like the idea of using vanilla wafers, because it gives a crunch you can't get with graham crackers. But you can't just buy the wafers crumbs. I don't know about anyone else, but I had to mash them up myself. There was probably no need to add the exact amount of sugar recom. I would add less next time. The amount of wafer I used didn't fill up the pan. I had to use some graham cracker to fill up the holes. The toffee was good, and I believe you need that much sugar to make it the correct consistency. For the chocolate top, I would use dark chocolate next time. It was too sweet with the semisweet chocolate chips, however, very easy to spread.

Gourmet Mushroom Risotto

SO AMAZINGLY GOOD and simple. I didn't have a lot of chicken broth. 3.5 cups, and rest water with salt. I didn't have dry white wine, but put chinese cooking rice wine. Before I even put anything in it, it was amazingly tasty. put half amt of butter it said. Added parsely, basil flakes.
