Baked Oatmeal I

Wonderful alternative to regular oatmeal! In fact, my kids won't eat regular or instant oatmeal but they will eat this.

Stuffed Peppers My Way

Wow! These were fabulous! I wasn't quite sure what to expect and ended up loving them. I used red peppers (leave the stem on to help keep their shape) and had to do half of them without the feta because of my husband's dietary restrictions and he thought they were good as well. But the feta ... oh-h-h-h... it's wonderful.

Cranberry-Black Cherry Gelatin Salad

I made it for Thanksgiving and it was voted the best cranbery jello salad I have ever made (I try a new one every year). Kids don't seem to like the nuts but all adults loved it!

Hearty Breakfast Cookies

I love having a "healthy" cookie recipe that the kids will eat. Some of my kids don't like raisins so I only put them in half of the dough. They love taking them for a snack before basketball practice.

Baked Potato Soup II

Restaurants serve this soup with bacon bits, chives, and grated cheddar. It is reminiscent of eating a baked potato so adding garlic and skipping the sour cream totally changes the intent of the recipe. I will bake several potatoes at a time and keep them in the fridge to have on hand to throw this together in a hurry. Family loves it. It does need salt & pepper to taste.

Best Big, Fat, Chewy Chocolate Chip Cookie

I have to admit that I was skeptical, especially using melted butter (bad experience in the past). But they were great! I did try adding a little extra flour but they weren't as good. Stick to the original recipe.

Blueberry Buckle

YUMMY! My kids are begging to have it again. I used frozen blueberries and cooked it for 35 minutes (after reading other reviews). Center wasn't as done as the edges but wasn't doughy either and was my daughter's "favorite" part.

Roquefort Grapes

BIG HIT! If you like blue cheese (as in salad dressing) you will like this. I have always liked cheese and grapes together. This is a wonderful combination of flavors. Messy to make but divine to eat. My sister could not stay away from them.

Herbed Sweet 'n' Sour Chicken

Big hit with my family! Not your ususal sweet-n-sour and you can control the heat with the cayenne pepper (my husband likes it hot). I tried a lower fat version the second time substituting chicken broth for the olive oil and it worked out great!

Best Spanish Rice

This is restaurant style spanish rice, not the sticky, soupy stuff my mom always made. The grains separate from each other and it is not overwhelmed by tomatoes. Perfect!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I made these as a sugar free recipe substituting about one-half cup agave for the brown sugar. Turned out great - not too sweet but sweet enough. I will be making them often. Lovely texture.

Peanut Butter Banana Oatmeal Raisin

After reading the other reviews I made a few alterations and came up with a dense cookie my kids loved. I only had one cup of whole wheat flour so I used that plus about 2 cups white flour. I increased the soda to 1 1/2 tsp. and used 1/2 c. egg substitute (will use 1/4 c. next time). I rolled the dough into balls, flattened and baked at 350? for 10 minutes. I also omitted the raisins so that my kids would eat them.

Cabbage Roll Casserole

This recipe has real potential but needs more seasonings (I forgot to add garlic as other reviewers suggested). It is simple and similar to cabbage rolls, just needs more flavor. Also, I bought a 3 1/2 lb. cabbage and only used half of it because it overfilled my 9 x 13 pan.
