Easy Cream Cheese Danish

The measurements on this review when prepared exactly are terrible. I made it as-written and this danish was a soggy saccharine mess. Should have used half the amount of cream cheese. Also, there is too much sugar in the glaze to ever "drizzle over" the danish. Won't make it like this again.

Mini Pineapple Upside-Down Cakes

The recipe could have clearer directions, but all in all it was a good end product. I need to rewrite instructions so it's easier. I did everything in order, but it was too tricky with doing the cake mix and getting the pineapple juice and juggling the melted butter and brown sugar. I think next time I'll do everything in reverse, beginning with the cake mix and ending with the butter/sugar combo.

Johnny Cake

I've never had Johnny cake, but this was a straightforward recipe. It's basically a dessert version of cornbread. I'll make it again when we have southern company visiting.

Bee Lian's Rich Orange Cake

This is a wonderful cake. It is a little dense but very good. It tastes even better after it has been refrigerated overnight. I used it with the topping from Orange Cream Cake IV: 1 (16 ounce) package frozen whipped topping, thawed; 1/4 teaspoon orange extract; 16 ounces sour cream; 2 cups confectioners' sugar, then put leftover orange zest on top. I made it two weeks ago, and my family loved it so much I've made it another three times since. This will be going in my recipe box forever!

Slow Cooker Chicken Taco Soup

This was amazing. Make sure to use a 6 or 7 quart crockpot. My 4 quart could not hold the recipe as written. It was delicious! I used Bill Echols' taco seasoning. This can't be beat.

Slow Cooker BBQ Chicken

Excellent recipe. As others suggested, I used only 1/4 maple syrup. I didn't need to make a second batch of sauce at the end as some people did. My chicken breasts were frozen and quite flat, so I had plenty of sauce in the crock at the 6 hour mark. This was a big hit with the family! Next time I'll try using 6 frozen chicken breasts, since mine were so flat to start.

Buckeye Balls II

What a great recipe. I have found ways to make this an easier method. I start with the PB mix in the stand mixer and add the butter and vanilla until it's all creamed, then start adding the sugar. I go until it's starting to get hard to mix, then I use my hands to finish. I definitely use 3 and a 1/2, sometimes not quite 4 cups. You need to get used to what the proper amount feels like, rather than measuring it all out. It should feel like stiff play-doh that doesn't crumble. I usually work with the mix divided in half to make my balls, so if I do add too much sugar I can take from the other mix still waiting to be made into balls. Then I freeze the balls on cutting boards covered in wax paper. It's important to get everything flat, which will make things much easier. Then I mix 1 1/2 cups chocolate chips and 1/4 bar of Gulf Wax, melted. I dip all the balls in the chocolate with tooth picks and return to the freezer. After I make sure to smooth over the toothpick holes so they look like real buckeyes. These are amazing! They are requested every Christmas.

Orange Oatmeal Muffins

I made them almost as directed (following other reviewers' suggestion to decrease the baking soda, which was a good idea) and these muffins were disastrous. They did not hold together, breaking apart in my hand. The taste was orangey, but it was very close to a cornbread. My significant other also agreed it was a lot like Johnny cake. I was highly disappointed in this recipe.

Jumbo Fluffy Walnut Apple Muffins

Very good, fluffy muffins. I made as directed and used a regular muffin tin. I used a medium cookie scoop to get a heaping scoop of batter, and doing that gave me exactly 24 muffins, which baked at 375 for 18 minutes and came out beautifully. Next time I'd do 2.5 cups of apples and .75 cup of walnuts, as well as doing half the sugar with brown sugar to give more depth of flavor.

Melt In Your Mouth Pumpkin Bread

I halved this recipe and it really is melt-in-your-mouth. Four stars because I'd like it a little more bread-like. I used banana cream pudding mix instead of coconut cream, since the latter was nowhere to be found in the store. The flavor wasn't noticeable, but it really made the texture silky in the end product.

Too Much Chocolate Cake

Apple Bread

This bread is delicious, especially a day or so after baking it. The flavors really come together and the apple gets a bit mushy, so it's like eating an apple pie in bread form! I used pecans instead of walnuts, and it came out beautifully.
