About this Cook
My family immigrated from sunny Italy in the late 1890's through the 1920's. They knew their tomatoes! My grandfather's first job in the U.S. was selling tomatoes at the original South Water Market in Chicago during the depression era. As a tribute to him (and to my entire tomato-loving family), I'm buiding a website called Tomato Basics.

Guacamole
I was fresh out of lime, but lemon subbed just fine... Excellent!

D's Famous Salsa
Whether you are using canned or fresh tomatoes, you simply can't go wrong with D's recipe. I've been using it and the family is like "Where'd you buy that salsa?" LOL. If you're using fresh tomatoes I'd go with either beefsteak or roma, but then you have to do the whole skin/seeds/water removal. Just keep in mind, there's something about a stewed tomato that is all about flavor enhancement. Way to go, D, it's a winner!
