Cheese and Beef Enchiladas

I subbed a few things like fajita seasoning for taco seasoning, and added 3 tbs. salsa to the meat mixture, and I topped with a jarred enchilada sauce before putting in the oven. Other than that, I stayed pretty true to the given recipe and we really loved it. My first enchiladas and it's going into my regular rotation! Thanks for the recipe!

Skillet Chops with Mushroom Gravy

Major tweaks made for a great recipe. I followed other suggestions and used bread crumbs and parmesan cheese at a ratio of 1:1.... I also seasoned the breading mixture with additional salt and pepper. I used a handful of sliced, fresh mushrooms and a few cloves of roasted garlic. In addition to the can of mushroom soup, I used 1c. heavy whipping cream, 1c. chicken broth and 2 handfuls of the breading mix that was suggested for thickening. It worked like a charm with plenty of gravy here! Cooked everything on low for about 20mins and it was to temp. Really awesome with mashed potatoes and steamed green beans! Will definitely add to the family collection! Thank you for a great starter base recipe.

Minnesota Broccoli Salad

Love this! My mother used to make it back in the early 80's but it was never called Minnesota anything, just Broccoli Salad. Glad to find this recipe again! I don't see the purpose of par-boiling the broccoli (we never did) so I skip that step and save myself the trouble. It's just fine if you let it sit overnight, and I don't change any ingredients. Great as is!

Toasted Pecans

So Easy, So Good! I only used 3/4 stick of butter, and fresh ground sea salt. Baked at 275F for 40mins stirring every 10mins. Yummy!!!

Slow Cooker Apple Butter

This was my first apple butter. I used 1/2 peck of winesap apples and cut this recipe in half. It turned out wonderful. The flavor and texture is very close to commercial brands that I've purchased.

Mom's Best Peanut Brittle

Oh Boy! This was easy and yummy! My only changes were to add 1tsp of homemade vanilla extract and use 1.5cups of salted mixed nuts (omitting the salt/peanuts called for in the recipe, of course). Will definitely be making this again! Thank you!

Angel Food Cake III

Seriously, this is an AWESOME cake! I had an angel food pan for years and was intimidated by all the egg whites. My first one turned out perfect and will definitely use again! Much better than store bought any day! Thanks!!!

Blackened Salmon Fillets

Great recipe! I use these spices for Blackened Shrimp 'n Grits too! My husband loves this. I also omit the butter and just use a non-stick pan with a small amount of Saffron oil. Simply delicious and couldn't be easier.

Easy Pancakes

I was looking for an easy, basic pancake recipe and this is it! I adjusted the baking powder and salt as suggested by other reviewers and it worked perfectly. The only other change I made was to substitute vanilla sugar in the same amount. This recipe made 8 - 4in. cakes and I'll definitely use again. Thanks!
