Grilled Chicken with Fresh Mango Salsa

This is one of the best recipes I've tried so far and one that I can't wait to make again. I marinated the chicken overnight in my own blend of OJ, lemon and lime juice with red onion, ginger, cilantro, garlic and jalapeno to compliment the mango salsa. I grilled the breasts on my barbeqque and they came out tender and very juicy and the mango salsa played off the flavors very well. Overall, a simple and easy way to serve otherwise a routine chicken dinner.

I've made this about five or six times and each time it gets rave reviews from family and friends alike. It was a huge hit with my Vietnamese neighbors on the 4th of July at our yearly block party. Definately one of my favorite desserts too!

Toads in the Hole I

I make this all the time and love it. For my personal tastes though I usually add some chopped herbs like basil, rosemary, thyme and oregano or sometimes a little bit of cumin or just some dill. Overall though it's a fantastic recipe and I like how easy it is that I can whip it up in a few minutes minus.

Slow Cooker Adobo Chicken

I made this yesterday and it came out perfect! The chicken was tender and moist, and the flavors all combined to make a perfect compliment to the sun dried tomato couscous I served with it.

Grilled Tropical Tuna Steaks

Probably one of the best pieces of marinated fish I've ever enjoyed! Tender, flaky and very tasty. I think it would also make a wonderful marinade for chicken or pork. I'll have to try it sometime.

Tangy Mango Slaw

I've made this three times so far and each time, my partner who doensn't like fruit salad loved it! I like it because it's simple and easy and tastes great. It's even better I find if I let it sit for about 30 mins in the refrigerator beforehand to let the flavors meld together.

Spicy Mango Salsa

I've made this several times now, and taking advice from others, I've cut down on the ginger, and it's very delightful, and it's helped perk up a couple of fish dishes as well as a salad when I didn't have enough dressing. This is one recipe I can see keeping on hand for a good long time.

Boscobel Beach Ginger Cake

Not having any all purpose flour on hand, I used some cake flour and the cake came out just as perfect, a nice dense and very moist cake with a wonderful flavor. Definately one I'll keep in mind for future events.

Grilled Beets in Rosemary Vinegar

I made this as an accompiniement for another recipe and they came out pretty good although a little dry because I didn't slice the beets thin enough and I think I should have marinated them overnight, but otherwise it's a great simple recipe and a new way to cook beets for me.

Stuffed Peppers with Turkey and Vegetables

I made this last night, and my partner raved about and said it so far is one of the best dishes I've made so far. The only thing I would do differently next time is add a little chipotle or jalapeno to give it a tiny kick. But it's still a fantastic tasting recipe.

Cathy's Banana Bread

I made this for a second time and this time I used non fat sour cream and margarine and whole wheat flour and I addded a whole pint of blueberries and it came out so moist and delicious! I took it with me to a meeting over the weekend and my friends couldn't stp talking about it, let alone devouring nearly all of the two loaves I had made!This has cemented it's place on my list of best desserts ever!

Baked Tofu Bites

I made this as part of a vegetarian meal the other night, and my partner raved about it! I've been searching for something to do with Tofu besides just using it in stir fry and Berber Stew and this was perfect. I'll be making this quite a bit I think.

Pork Chops with Jalapeno Jelly

I made these yesterday for dinner and grilled them, basting with some slightly warmed jelly and the chops came out moist and juicy with a very nice brown glaze to them. The only downside was they glaze wasn't as flavorful as I had hoped for with the spice from the jelly. But I think it was more that the jelly was rather mild to start with and next time I'll search for a slightly hotter version and maybe add some fresh peppers to the mixture as well.

Chipotle Peach Salsa with Cilantro

I made this the other night and served it over some grilled chicken I marinated in a mango sauce and it came out pretty good. I used fresh peaches however instead of canned because I wanted the flavor of the fruit to be the stand out. I also used about 3 chipotles instead of the one because with just the one it was a little on the bland side. Plus I enjoy food with a lot of fire to it, so adding that much more was perfect and it blended really well with the lime juice and the cilantro. I had enough left over and gave it to my neighbors and they loved it too! I'll make this again though and try it on some pork chops or halibut.

Sadly this recipe just didn't live up to my expectations. I read and reread it and I baked it as per the instructions in my cast iron skillet and it came out thin, hard, and salty so I ended up not using it.
