Mexican Fiesta Pasta Salad

All I can say is FABULOUS! I did not have cilantro and added maybe only 1/2 the olives. Just a pinch of cayenne. Not a waist watchers but so yummy!

Chantal's New York Cheesecake

I really loved this cheesecake, however even after following the baking instructions it was not that "firm" in the middle. I was happy I ended up not bringing it to a dinner. After refrigerating 2 days it did firm more, but next time I will bake it longer. I am at sea level, so that should not have influenced the outcome.

Vegetarian Chili

This was very good and quick. I used minced garlic instead of garlic powder, added 1-2 teas. of Cayenne pepper (since we like spicy). Held the bayleaf, and ended up adding more tomato juice.

Brandied Shrimp with Pasta

This is a high end restaurant recipe!! Very, very good! My husband does not like tomatoes so I used fresh mushrooms instead. I put the garlic, salt, pepper, mushrooms in while sauteing the shrimp. I wanted the flavors to blend. Quick and fabulous!

Blueberry Streusel Muffins

Wonderful recipe. My husband loves these muffins. I used white sugar for the streusel instead of brown and doubled the amount of white sugar for a more crumbly mixture. Also added 1/4 cup more blueberries. This made 9 muffins for me. I filled each cup.

Ginger Glazed Mahi Mahi

This is a great tasting easy recipe. I used a ziplock bag to marinate, as I do all my marinades. The only thing I will change next time is use low sodium soy sauce and will not salt the fish. I thought it was too salty and took away from the other flavors. I will also try this with salmon.
