Butter Frosting

We love this frosting! It is so easy to make and frosts so nicely. Beats the canned frostings to heck. I had only a few cupcakes to frost (4-6) and I reduced the servings to 12 and it was the perfect amount.

30-Minute Minestrone

Spinach Frittata with Tomatoes and Goat Cheese

This was easy and good. I used feta instead of goat cheese. Since I do not have an oven safe skillet, I fried the tomatoes and garlic, transferred to a quiche disk and poured the egg/spinach mixture over it. Baking time was approximately double.

The Whole Jar of Peanut Butter Cookies

These were a hit at my house. My 4 yr old and 2 yr old ask for them daily. My husband, who isn't a sweets lover, also loves them! It's a keeper at our house.

Cinnamon Rolls III

Oh my God! These are awesome. If you doubt your abilities as a baker at all - these are the cinnamon rolls for you. Quick, easy and absolutely delicious. I made them Easter morning. What a treat! I impressed the sox off my family. This recipe will be in our family for years and years to come. Thank you!!

Asparagus and Shrimp Stir-fry with Noodles

This was a winner! I modified it a little by adding about 1/3 cup white wine and doubling the broth. I also added mushrooms. It was very quick and easy. The family loved it.

Ham and Cheese Omelet Casserole

This was a very good, quick and easy meal. Just as easy as making scrambled eggs with ham and cheese, but much much fluffier. It made New Year's day breakfast special. My husband and 2 year old son loved it.

Roasted Garlic Mashed Potatoes

I made this dish for Christmas dinner. It was wonderful. I would suggest not peeling the garlic and removing it before adding to the potatoes. This is definately a keeper in our home.
