Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Jan. 17, 2011
I made this yesterday for the first time. I put 6 frozen chicken breasts in the crockpot along with the recommended wing sauce and ranch seasoning pkt. It smelled wonderful cooking-just like hot wings! After the chicken was cooked I took it out and shredded it, (put in some butter) then put it back into the crockpot to reabsorb the juices and seasoning. My daughter and husband walked in from basketball and thier mouths started watering. They told me the could smell it all the way in the garage! We toasted regular buns in the oven and scooped the chicken on. It was very good, and low fat b/c of the breast meat. I think I will skip on the butter next time b/c I notice on the wing sauce bottle that butter decreases the wing sauce hotness. We will make again, over and over! Thanks for the great idea!

Very brothy-was expecting it to be a little thicker... But very good! Had it cooking in the slow cooker and it snowed 4" while I was at work-great time to come home to this soup!

Sweet Potato Pie I

Reviewed: Apr. 24, 2010
This was the first time I have ever made Sweet Potato Pie. I wanted to try and impress my husband! I washed my (1) 1 lb sweet potato, poked holes in it, and wrapped in foil. I placed it in a 400 degree oven for 60 mins. Then I rinsed in cold water as I pulled the skin off. I used a frozen pie crust(let it thaw on the counter as I mixed up the ingredients-(I was very concerned about how runny it was!) and poured it into my pie crust. It filled my pie shell perfectly! It took a little longer to cook and for the middle to set up. I was afraid my crust would burn...but it didn't. It turned out great! It's less than 24hrs later and the entire pie is gone!!! My husband has already gave me a request for a second pie. This will be made often around my home!

Tomato Chicken Parmesan

Reviewed: Nov. 21, 2011
OK... so on a busy weeknight chicken Parmesan sounded really good. I picked up some whole wheat thin spaghetti, a jar of sauce, and a pound of fresh boneless skinless chicken tenders. Then I began looking for a recipe....and decided to use this recipe, with changes based on my schedule and ingredients. So I used 1 egg to dip the chicken tenders in, and mixed bread crumbs with garlic powder, Parmesan cheese, and onion powder. I then dipped each tender in egg then in bread crumb mixture and placed in a sprayed 9x13 pan (I sprinkled the remaining bread crumbs over the tenders). Once all were breaded I covered with saran wrap and placed in the fridge while my daughter had basketball, then about 1.5 hrs later I put it uncovered in the oven on 350, started my pasta water boiling in a pan, and dumped sauce into a separate pan to heat up. Once the water was boiling I up the oven temp to 425 and kept it there until the noodles and sauce were ready (approx 5 min). Then I plated noodles topped with sauce topped with a couple chicken tenders, topped with more sauce and finished off with shredded mozzarella cheese. Also had a fresh salad.....it was amazing my 2yr, 5yr, and 10yr LOVED it! I will definitely be making it again soon.

Roasted Garlic Lemon Broccoli

Reviewed: Nov. 20, 2010
Very good spin on broccoli! I was finishing a steak in the oven at 500 degrees, and put the broccoli in too, unsure of how it would work at such a high temp. It was great and only took about 6 minutes!

Raspberry Cheesecake Stuffed French Toast

Reviewed: Feb. 15, 2010
I used the reviews from this recipe to make my stuffed french toast for the first time. I would definitely use the 8oz cream cheese to 9oz raspberry mix. I also had problems finding "seedless raspberry". So I just used Red Raspberry Preserves (that had the seeds). It was still really good and I was not bothered by the seeds at all! Also a huge TIP: BUTTERFLY EACH SLICE OF BREAD THAT MAKES IT VERY EASY TO FILL, AND YOU DON'T HAVE TO WORRY ABOUT LINING UP THE BREAD...IT WORKED GREAT!

Soft Oatmeal Cookies

Reviewed: Dec. 12, 2011
Wow-this is the best recipe! I can't stop eating them! We made a bunch of different types of cookies for the holidays yesterday, and mixed up a double batch of these, but got too tired to bake them.....so I got them out today to ball them up and bake 'em. Oh so good! These are my husbands favorite type of cookies and I will be using this recipe from now on!

Spicy Pretzels

Reviewed: Oct. 20, 2011
Very good, but once you start eating them its hard to stop! So, needless to say they go quick! I use garlic powder-not garlic salt, olive oil-not vegetable oil, and no lemon pepper seasoning. Made a batch of these for my 5th grader to take to school for her fall party tomorrow-we put them in a big ice cream tub that we decorated like a jack o lantern. She loved it!

Fast Chicken Soup Base

Reviewed: Feb. 15, 2010
...and I used to throw all the left over peices of chicken and skin away-never again!!! This is fabulous! My daughter was home sick today and I figured today would be the perfect day to try making homemade chicken soup! I used this broth (with a little extra water and extra carrots minced) and then added a bag of egg noodles. VERY GOOD SOUP! So full of chicken flavor and not as salty as canned soup! Looked, smelled and tasted terrific!!!

Carrot Cake III

Reviewed: Oct. 25, 2013
I believe this is my first from scratch cake. I did use half brown packed sugar and half white sugar. I also didn't use any nuts, although I may try that! Son C and I picked fresh carrots from our garden, and all the boys took turns shredding carrots to make packed cups to go into this cake. All of the kids and I loved this recipe! I did use 2 round cake pans and baked for 35 mins. I used fat free cream cheese, and may have used more powdered sugar than originally called for. After I frosted the cake I put in the fridge to set up a bit.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jan. 20, 2012
Very Good! My first time ever buying/cooking a whole chicken....so needless to say I only made 1! I did make a bag of the seasoning to have on hand like another reviewer suggested-but it was too salthy for our taste, so I will need to add more of the other spices before using it next time. Also, I will take the skin off the chicken before I season and cook it. But there will be many more times this recipie is used. Thanks for giving me the courage to try cooking a whole chicken!

Baked Teriyaki Chicken

Reviewed: Jan. 20, 2012
Very good! This is the first time I have made a sauce myself vs. buying a bottled version at the store! So needless to say I was so proud! I did use red wine vinegar b/c that's what I had on hand. Made a pot of white rice, and had stir fry veggies on the side. Yummy goodness my entire family enjoyed! Thanks!

No-Fuss Rice Pudding

So like many others I was looking for a way to use up old take out rice. I've not had rice pudding before, but I will be having it again-anytime I have left over rice! A yummy surprise. (I did omit the raisins, b/c I didn't have any on hand)

Cinnamon Cream Roll-Ups

Reviewed: Nov. 3, 2011
VERY simple, quick and made with ingredients I usually already have at home. I used 100% whole wheat bread. Also filled canoli style. Filling is very much like a cream cheese filling. Ate hot for dessert, then cold for a snack. Good both ways. They are smaller than I envisioned but very good!
