Carrot Cake III

Reviewed: Oct. 25, 2013
I believe this is my first from scratch cake. I did use half brown packed sugar and half white sugar. I also didn't use any nuts, although I may try that! Son C and I picked fresh carrots from our garden, and all the boys took turns shredding carrots to make packed cups to go into this cake. All of the kids and I loved this recipe! I did use 2 round cake pans and baked for 35 mins. I used fat free cream cheese, and may have used more powdered sugar than originally called for. After I frosted the cake I put in the fridge to set up a bit.

Oatmeal Raisin Cookies VII

Reviewed: Mar. 6, 2013
These were very, very good cookies! Made a double batch for my large family! I did microwave 3 C. of rasins in a liquid measuring cup with water that covered the raisins, for 5 minutes, then let them cool for 10 min before, draining, and adding them to the dough. I used 2 sticks of butter right from the fridge and 1 C. Brown & 1C. White sugars. Used a hand mixer to get all flour, etc incorporated and smooth. Used required double amount of oats, but then added addl oats as dough could use more when mixing. I also didn't measure my spices, just eyeballed it with extra cinnamon. Cooked them on 350 for about 13 minutes.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jan. 20, 2012
Very Good! My first time ever buying/cooking a whole chicken....so needless to say I only made 1! I did make a bag of the seasoning to have on hand like another reviewer suggested-but it was too salthy for our taste, so I will need to add more of the other spices before using it next time. Also, I will take the skin off the chicken before I season and cook it. But there will be many more times this recipie is used. Thanks for giving me the courage to try cooking a whole chicken!

Baked Teriyaki Chicken

Reviewed: Jan. 20, 2012
Very good! This is the first time I have made a sauce myself vs. buying a bottled version at the store! So needless to say I was so proud! I did use red wine vinegar b/c that's what I had on hand. Made a pot of white rice, and had stir fry veggies on the side. Yummy goodness my entire family enjoyed! Thanks!

Soft Oatmeal Cookies

Wow-this is the best recipe! I can't stop eating them! We made a bunch of different types of cookies for the holidays yesterday, and mixed up a double batch of these, but got too tired to bake them.....so I got them out today to ball them up and bake 'em. Oh so good! These are my husbands favorite type of cookies and I will be using this recipe from now on!

No-Fuss Rice Pudding

Reviewed: Nov. 21, 2011
So like many others I was looking for a way to use up old take out rice. I've not had rice pudding before, but I will be having it again-anytime I have left over rice! A yummy surprise. (I did omit the raisins, b/c I didn't have any on hand)

Tomato Chicken Parmesan

Reviewed: Nov. 21, 2011
OK... so on a busy weeknight chicken Parmesan sounded really good. I picked up some whole wheat thin spaghetti, a jar of sauce, and a pound of fresh boneless skinless chicken tenders. Then I began looking for a recipe....and decided to use this recipe, with changes based on my schedule and ingredients. So I used 1 egg to dip the chicken tenders in, and mixed bread crumbs with garlic powder, Parmesan cheese, and onion powder. I then dipped each tender in egg then in bread crumb mixture and placed in a sprayed 9x13 pan (I sprinkled the remaining bread crumbs over the tenders). Once all were breaded I covered with saran wrap and placed in the fridge while my daughter had basketball, then about 1.5 hrs later I put it uncovered in the oven on 350, started my pasta water boiling in a pan, and dumped sauce into a separate pan to heat up. Once the water was boiling I up the oven temp to 425 and kept it there until the noodles and sauce were ready (approx 5 min). Then I plated noodles topped with sauce topped with a couple chicken tenders, topped with more sauce and finished off with shredded mozzarella cheese. Also had a fresh salad.....it was amazing my 2yr, 5yr, and 10yr LOVED it! I will definitely be making it again soon.

Cinnamon Cream Roll-Ups

Reviewed: Nov. 3, 2011
VERY simple, quick and made with ingredients I usually already have at home. I used 100% whole wheat bread. Also filled canoli style. Filling is very much like a cream cheese filling. Ate hot for dessert, then cold for a snack. Good both ways. They are smaller than I envisioned but very good!

Apple Crisp II

I use this as a guide b/c I tend to measure like Rachel Ray (pinch here, palm full there, fill up to about here). I made a roasting pan of this: filled it 1/2 way up with apples, (i did then sprinkle some nutmeg like others mentioned) and the other half with topping....oh so yummy!

Orzo with Parmesan and Basil

Reviewed: Oct. 20, 2011
Good side dish. Family just assumed it was rice...until I made a point to tell them it was pasta! Didn't have fresh basil, so instead of using dried basil, went for the mac and cheese like other reviews mentioned. It was a nice change!

Spicy Pretzels

Reviewed: Oct. 20, 2011
Very good, but once you start eating them its hard to stop! So, needless to say they go quick! I use garlic powder-not garlic salt, olive oil-not vegetable oil, and no lemon pepper seasoning. Made a batch of these for my 5th grader to take to school for her fall party tomorrow-we put them in a big ice cream tub that we decorated like a jack o lantern. She loved it!

Easy Turkey Gravy

Reviewed: Oct. 2, 2011
It was past dinner time, and my family was starving! I had made a turkey but wasn't going to make mashed potatoes and gravy b/c no one ever eats too much of my gravy! My family really wanted to eat it with the turkey so, i jumped on my trusty AllRecipies site and looked for a basic gray recipe. I found this one and will never make gravy another way! I did have to make unintentional changes bc I didn't have poultry seasoning-so I left it out. Also i dumped the milk in before mixing in the flour-so i scooped out some of the liquid into a bowl and did it that way-perfect! Also used Skim Milk and reduced fat cream of chicken.....this was so quick and easy....but so delicious!!!! This was quickly added to my recipe box!

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Jan. 17, 2011
I made this yesterday for the first time. I put 6 frozen chicken breasts in the crockpot along with the recommended wing sauce and ranch seasoning pkt. It smelled wonderful cooking-just like hot wings! After the chicken was cooked I took it out and shredded it, (put in some butter) then put it back into the crockpot to reabsorb the juices and seasoning. My daughter and husband walked in from basketball and thier mouths started watering. They told me the could smell it all the way in the garage! We toasted regular buns in the oven and scooped the chicken on. It was very good, and low fat b/c of the breast meat. I think I will skip on the butter next time b/c I notice on the wing sauce bottle that butter decreases the wing sauce hotness. We will make again, over and over! Thanks for the great idea!
