Chocolate Zucchini Bread I
This is the first time I have ever made zucchini bread so I decided to try a chocolate recipe, b/c everyone likes chocolate!I used 3TBSP of cocoa Powder and 1 TBSP of butter in place of unsweetened chocolate. I used 2 of my larger loaf pans (not sure what size)-but split batter between the pans and placed in the oven. i checked them part way thru cooking and noticed they were not rising much at all! Then I realized the 2 cups each of Flour and sugar, had only total 1C each b/c i had been using the 1/2 Measuring spoon! cooked for 55min and they were chocolatey and fudgey and still eatable.

Stuffed Zucchini
This was my first attempt at any type of zucchini recipe! I had huge almost arm length zucchini (2)from my garden cut the ends off, sliced down the middle and scooped out the middle. put about an inch of water in (2) 9x13 pans and cut zuc to fit inside and turned cut side down into pans. baked in a 350 oven for about 20-25min. Meanwhile brown 1-1 1/2 lbs spicy sausage. Chop fresh green peppers, chopped jalapenos, chopped onion, half a head of garlic, 1/2 of the scooped out middles, then cook in pan with brown sausage. empty water from zuc pans, and fill zuc with mixture. scoop pasta sauce over the top. then sprinkle mozz cheese. bake uncovered about 10 min or until cheese is melted.

Carrot Cake III
I believe this is my first from scratch cake. I did use half brown packed sugar and half white sugar. I also didn't use any nuts, although I may try that! Son C and I picked fresh carrots from our garden, and all the boys took turns shredding carrots to make packed cups to go into this cake. All of the kids and I loved this recipe! I did use 2 round cake pans and baked for 35 mins. I used fat free cream cheese, and may have used more powdered sugar than originally called for. After I frosted the cake I put in the fridge to set up a bit.
