Chocolate Truffle Cookies with Sea Salt

Loved these cookies, and so did the friends I shared them with. Everyone wanted the recipe. My only change was to eliminate the chocolate chips added at the end, and instead, added 1 cup Heath Toffee bits and 1 cup chopped pecans. Soooo yummy!

Roasted Vegetables

Excellent! Didn't have the peppers on hand so I used carrots and they were great. Didn't have fresh herbs so I used dried and just adjusted the quantity and it was delish!

Garlicky Quinoa and Garbanzo Bean Salad

This is definately a 5 star recipe! I have made it twice now, the first time I used dill instead of tarragon (never used it before & didn't have any) and it was good, but nothing special. Bought tarragon and WOW, it is an amazing blend of flavors! Absolutely fantastic... Only other changes were: Added 1 cup of sugar snap peas (because I love them), cut the garbanzo''s down to 1 cup (to make it more WW friendly) and cut the EVOO down to 2 teaspoons. Don't think these changed the taste too much, just brought down the calories a little. I also cooked the quinoa in veggie broth, because I like it that way and added the garlic to the quinoa while it was cooking. Thank you jjane123 for an amazing vegan recipe, love it, love it!!

Easy Fried Eggplant

Very good and very easy! I have never made fried eggplant, and it couldn't have been easier. To cut down on fat, I used only 1 t of olive oil, just enough to coat the pan. I also used italian seasoned Panko bread crumbs and added a little chili powder for kick and garlic salt. Wonderful!

Jacky's Fruit and Yogurt Muffins

Love these! I used fat free yogurt and also used applesauce instead of the butter. I also used 50/50 white and wheat flour. The last change I made was to cut the sugar to 1/2 cup. I've made these twice, first with lime yogurt with strawberries and kiwi, second with raspberry yogurt with raspberries and blueberries. Thanks for the great recipe, even with the calorie cutting measures, they were still great. I imagine making them as written woudl be a 10 star!

Tomato-Cream Sauce for Pasta

Very, very delicious recipe! And super easy. The sauce was done before my pasta was finished. For those who had found this to be too thin, be sure to do the step where you boil the liquid down off the tomatos, it will help the sauce not be runny.

Dutch Babies II

I have never had a Dutch Baby before, so I am rating this on taste and ease, and it definately deserves a 5 star for that. Don't know if it is an authentic Dutch Baby, but it is a VERY delish breakfast dish. And it is super easy. I do not own a cast iron skillet, so I used a glass deep dish pie plate and it puffed up beautifully. My only other change was to follow some other reviewers and put the butter in the dish in the oven while it was heating. But don't put it in right away, it will get too dark. Great recipe!

Syracuse Salt Potatoes

Very good potatoes. I had never heard of them, so tried them. Wonderful creamy texture and a light salt flavor. Definately let them dry so you get the light salt coating on the skin. A nice simple potatoe dish. I followed the recipe, used baby reds. Only addition was some fresh chives added to the butter. Yum!

I have never made bread machine bread as good as this one! Thanks for sharing this great recipe. I added the olives after it had been kneading awhile so that they weren't just little bits. It worked very well.

Quinoa and Black Beans

This is wonderful! It was my first time using Quinoa and it was so easy. I wanted something different to do with the cilantro from my herb garden and found this recipe. I followed the recipe exactly and the end results were perfect and really yummy!

Seafood Stuffed Avocados

For me this was just an average recipe. I found it to be very bland. I added my favorite seafood seasoning and it still didn't do much for me. It isn't a bad recipe, just not a real flavorful recipe.

Cottage Cheese, Avocado, and Black Bean Salsa

This is sooooo yummy!!!!! It was a big hit at the party I took it to. That was once people got over the look of it. It isn't the prettiest dish out there, but the flavor is soooo good. I used low fat cottage cheese and only used a 16 oz container, which seemed to be enough. I also added the juice of 1 fresh squeezed lime. Thanks for a wonderful recipe!!!

Blue Cheese Pear Salad
