Acorn Squash

Soooo good! I can't believe I've waiting so long to try this recipe, its fantastic and almost too easy. I'm thinking next time I'll add some cinnamon, nutmeg, or even some red chili powder for a sweet/savory side...lots of options w/this one. Thanks for sharing!

Fava Bean Salad

excellent salad and very filling...made the mistake of using the large fava beans, will use the small ones next time. This was a great lunchtime salad with just the right amount of dressing for me. Thanks for sharing!

Pepper-Parmesan Dressing

A very tasty dressing, five starts with more black pepper (but that's just a personal preference). I did try to make it healthier by using nonfat plain yogurt in place of sour cream, but other than that I stuck with the recipe. I found this to be a heavier dressing so I will probably enjoy it more for lunchtime salads. Thanks for sharing!

Cherry Almond Oatmeal

I will preface this review by saying that I didn't have almond milk and I didn't have dried cherries, but I REALLY wanted to try this recipe b/c I was getting bored with my usual oatmeal recipes. I used almond extract (about 1 tsp) and dried cranberries. I sweetened to taste with splenda. That being said, this oatmeal was so good! I enjoyed every bite, and I'm going to go get almond milk and dried cherries today just so I can make the full batch of it (I only made enough for myself this morning) and enjoy. This was a great way to start my morning. Thanks for the recipe!

Healthy Garden Salad

I really love this salad! I didn't have grapeseed oil so I used olive oil instead. I stuck to the recipe otherwise and was really pleased with the results. It's a very filling salad and the dressing is delicious. I'm looking forward to trying this with grapeseed oil. I only made enough for myself because I was skeptical about how it would turn out...but I'll have to make a lot more next time. Thanks for sharing!

Harvest Salad

Excellent salad and so pretty too! I didn't have time to brown the walnuts so I skipped that step and I didn't have walnut oil so I used olive oil instead. Other than those two changes, I stuck with the recipe. I normally don't care for blue cheese but it is excellent in this dish. I enjoyed every bite of this. Thanks for sharing!

Spicy Veggie Sandwich

Pretty good sandwich. I don't like olives so I left them out, but besides that I stuck w/the recipe. Good sandwich to take to lunch, and the dressing is a nice change from the usual mayo or mustard. Thanks for sharing!

Honey Peanut Dressing

Loved this dressing over a salad of mixed greens, red peppers, cucumbers, carrots, and some dry roasted peanuts for added crunch. This would also be good as the dressing for an asian-style noodle salad. I followed the recipe exactly and wouldn't change a thing. Will definitely be making this again. Thanks for sharing!

Heavenly Blueberry Smoothie

Excellent smoothie with all sorts of good stuff in it. I used regular milk (don't keep soy milk in the house) and vanilla greek nonfat yogurt. I didn't freeze the banana and I don't think that detracted from the recipe. This smoothie has the perfect amount of sweetness for my tastes and is just so easy to put together. Thanks for sharing!

Moroccan Couscous

A delicious and filling lunch, I enjoyed every bite of this. I only left out the orange zest and cardamom (didn't have those items) and since I'm vegetarian I used veggie broth, but other than that I stuck w/the recipe. Great orange flavor that complements the spices well. This would be great for a dinner party. Thanks for sharing!

Sweet and Spicy Sweet Potatoes

So tasty, I love that sweet and spicy flavor combo. Normally I just bake sweet potatoes so this was a welcome change. didn't have poultry seasoning so I left that out but kept the other ingredients the same. This is a nice side dish for a dinner party. Thanks for sharing!

Spaghetti Squash I

Amazing! I can't believe I waited this long to try spaghetti squash. It's such a simple dish but so satisfying (and without the guilt that usually comes w/noodles). Seeding this was a bit of a process for me but the end results were well worth it. The great thing about this recipe is the versatility, I could see adding a lot of different veggies to it, and even different types of cheese. Thanks for sharing this one!

Chocolate Chocolate Chip Nut Muffins

Delicious, super-chocolatey muffins! I do recommend increasing the milk to 1 1/2 cups, this gave me muffins that were more moist. As always, don't mix that muffin batter too much! 20 minutes in my oven and they were perfectly done. My brother ate 3 in one sitting! Thanks for sharing :)

Mocha Coffee

Excellent coffee once you cut back a bit on the cocoa powder. I cut back to 1 1/2 tbsp. and it was perfect. Easy and of course cheaper than going to the coffee shop every day. Thanks for sharing!
