Greek Lentil Soup (Fakes)

Reviewed: May 26, 2012
This is really great soup, and quite healthy. The only change I made to the recipe was to use half water/half veggie broth. As others have already mentioned, the vinegar is essential to this soup. Highly recommended, thanks for sharing this recipe!

Blueberry Buckle

Reviewed: May 25, 2012
Fantastic flavor, and that topping is so yummy! The only thing I can think to do is add a little vanilla (I add vanilla to everything I bake), but even without that it is still five stars. I substituted butter for the shortening (I never use shortening so its never in my pantry) but other than that I followed the recipe exactly and was blown away. Thanks for sharing!

Italian Zucchini Boats

Reviewed: May 25, 2012
Absolutely delicious, and filling enough (for me, anyway) for dinner! The only change I made was to increase the garlic (can't get enough of it) and sauteing some onions in olive oil, then adding the tomatoes zucchini pulp, and spices. Once that mix cooled down I added the bread crumbs, egg, and parmesan. This is especially good if you have a lot of zucchini to use up from your garden. Highly recommended, thanks for sharing!

Oven-Fried Bananas

Reviewed: May 24, 2012
yummy and really simple to make, I didn't change a thing but next time I think I'll cut back on the bread crumbs since I had plenty left over after using 1 banana. Thanks for sharing!

Peanut Butter and Banana Smoothie

Reviewed: May 22, 2012
Absolutely delicious and very filling, only change I made was using regular milk instead of soy because it was all I had in the fridge. The smoothie is easy to put together and gave me plenty of energy to get through a busy day. Thanks for sharing!

Shanghai Noodle Salad

Reviewed: May 21, 2012
Excellent salad, only change I made was to use sriracha sauce rather than red pepper flakes (I like it really spicy). I don't think I'll add the salt next time, the soy sauce has enough for me. this is really good either warm or cold. Thanks for sharing!

Chilled Strawberry Cream

Reviewed: May 19, 2012
Delicious and so, so simple! This is a recipe perfectly suited for summer because it doesn't require an oven. I loved it just as written, but I do think I could do the same thing with raspberries as well, which I figure would be just as tasty. Thank for sharing this one, it's a keeper for sure!

Pita Chips

Reviewed: May 19, 2012
These were fantastic, cut them thin and you will get that wonderful crunch. The seaonings can easily be changed for more variety, but this combination is outstanding and would go well with hummus. Thanks for sharing!

The Best Veggie Sandwich

Reviewed: May 18, 2012
This is a delicious sandwich; a great vegetarian option for lunch. I used a cheddar/jack blend because its all I had in the fridge, and I put the sprouts on after melting the cheese under the broiler (watch carefully or it will burn). Enjoyed every bite, will make again. Thanks for sharing!

Quinoa with Peas

Reviewed: May 17, 2012
Delicious and simple, I did use veggie broth since I'm a vegetarian but other than that I followed the recipe and enjoyed every bite. It's a great side dish, but other veggies and spices could easily be added to make it a main dish. The leftovers are perfect for a filling lunch. Thanks for sharing!

Cream Cheese and Parmesan Bread Spread

Reviewed: May 16, 2012
This is incredible stuff. Went really well with our pasta dinner, next time I think I'll spread this on the bread and then pop them in the broiler for a few minutes, as other reviewers have done. This is a keeper for sure. Thanks for sharing!

Thai Cucumber Tomato Salad

Reviewed: May 16, 2012
Nice salad, I did need to add some sesame oil and some garlic for more flavor though. I like how simple this salad is, and the peanuts add a good salty crunch. Thanks for sharing!

so good and so filling! followed the recipe exactly and enjoyed every bite; I like the idea other reviewers had about putting it all in a pita and will be trying that next time. Thanks for sharing this recipe!

Great Green Salad

Reviewed: May 14, 2012
excellent salad, the almonds give a nice crunch and pairs well with the avocado. The dressing is delicious, and you really can add lots of stuff to this salad if you wish, or enjoy it just as written. I didn't have mixed salad green so I used romaine, but other than that I followed the recipe. This is great for lunch. Thanks for sharing!

Black Beans and Rice

Reviewed: May 13, 2012
Great base recipe, just needs some more flavor to make it five-star worthy. I added a can of rotel and that really helped. I also increased the cumin but that's a personal preference and I know some people don't like a lot of cumin. One great thing about this dish is that it is so filling but still really healthy. This will become a part of my dinner rotation for those nights when I don't have a lot of time. Thanks for sharing!

Sweet Pepper Burritos

Reviewed: May 11, 2012
Good recipe, perfect for summers when you have an abundance of peppers and want something quick for dinner. Four stars only because it is rather mild, I had to double the cumin and even after that I added some fajita seasoning to give it the kick I wanted. The brown rice is good in this burrito, makes the whole thing more filling. Thanks for sharing!

Honey Balsamic Vinaigrette

Reviewed: May 10, 2012
Nice dressing, a little goes a long way for me (the vinegar in this was a bit much for me, I prefer more oil to vinegar in my dressings). I did enjoy the sweetness of the honey and the touch of heat brought from red pepper at the end (I added more b/c I love the sweet and spicy combo). This will go into my rotation of salad dressings, thanks for the recipe!

A great sandwich for a light lunch, I did toast the bagel but otherwise followed the recipe. The radishes are especially good here. Thanks for sharing!

Spicy Potato Soup I

Reviewed: May 6, 2012
I could tell from reading the recipe that this needed some significant alterations, but I liked the idea and I was in the mood for something spicy so I went ahead. I cut back on the amount of liquid (4-5 cups rather than 8) and used veggie broth for more flavor. I added garlic when I was frying up the potatoes, and I added about 1 1/2 tsp. paprika and 1 tsp. cumin. These changes made the soup much better, but there was still something missing to make it five stars. The idea is still good and it's pretty easy to make with ingredients I usually keep in stock. Thanks for sharing!
