Chilled Strawberry Cream

Delicious and so, so simple! This is a recipe perfectly suited for summer because it doesn't require an oven. I loved it just as written, but I do think I could do the same thing with raspberries as well, which I figure would be just as tasty. Thank for sharing this one, it's a keeper for sure!

Pita Chips

These were fantastic, cut them thin and you will get that wonderful crunch. The seaonings can easily be changed for more variety, but this combination is outstanding and would go well with hummus. Thanks for sharing!

The Best Veggie Sandwich

This is a delicious sandwich; a great vegetarian option for lunch. I used a cheddar/jack blend because its all I had in the fridge, and I put the sprouts on after melting the cheese under the broiler (watch carefully or it will burn). Enjoyed every bite, will make again. Thanks for sharing!

Quinoa with Peas

Delicious and simple, I did use veggie broth since I'm a vegetarian but other than that I followed the recipe and enjoyed every bite. It's a great side dish, but other veggies and spices could easily be added to make it a main dish. The leftovers are perfect for a filling lunch. Thanks for sharing!

Cream Cheese and Parmesan Bread Spread

This is incredible stuff. Went really well with our pasta dinner, next time I think I'll spread this on the bread and then pop them in the broiler for a few minutes, as other reviewers have done. This is a keeper for sure. Thanks for sharing!

Thai Cucumber Tomato Salad

Nice salad, I did need to add some sesame oil and some garlic for more flavor though. I like how simple this salad is, and the peanuts add a good salty crunch. Thanks for sharing!

Great Green Salad

excellent salad, the almonds give a nice crunch and pairs well with the avocado. The dressing is delicious, and you really can add lots of stuff to this salad if you wish, or enjoy it just as written. I didn't have mixed salad green so I used romaine, but other than that I followed the recipe. This is great for lunch. Thanks for sharing!

Black Beans and Rice

Great base recipe, just needs some more flavor to make it five-star worthy. I added a can of rotel and that really helped. I also increased the cumin but that's a personal preference and I know some people don't like a lot of cumin. One great thing about this dish is that it is so filling but still really healthy. This will become a part of my dinner rotation for those nights when I don't have a lot of time. Thanks for sharing!

Sweet Pepper Burritos

Good recipe, perfect for summers when you have an abundance of peppers and want something quick for dinner. Four stars only because it is rather mild, I had to double the cumin and even after that I added some fajita seasoning to give it the kick I wanted. The brown rice is good in this burrito, makes the whole thing more filling. Thanks for sharing!

Honey Balsamic Vinaigrette

Nice dressing, a little goes a long way for me (the vinegar in this was a bit much for me, I prefer more oil to vinegar in my dressings). I did enjoy the sweetness of the honey and the touch of heat brought from red pepper at the end (I added more b/c I love the sweet and spicy combo). This will go into my rotation of salad dressings, thanks for the recipe!

Spicy Potato Soup I

I could tell from reading the recipe that this needed some significant alterations, but I liked the idea and I was in the mood for something spicy so I went ahead. I cut back on the amount of liquid (4-5 cups rather than 8) and used veggie broth for more flavor. I added garlic when I was frying up the potatoes, and I added about 1 1/2 tsp. paprika and 1 tsp. cumin. These changes made the soup much better, but there was still something missing to make it five stars. The idea is still good and it's pretty easy to make with ingredients I usually keep in stock. Thanks for sharing!

Spanish Garlic and Vegetable Soup

A very nice soup, and super-healthy! I did use veggie broth instead of water and I cut the amount of liquid down, which I think gives the soup a better consistency. I used only 1/2 head of cabbage since it's all I had.This could use a boost of flavor, I added some red pepper flakes for heat, but it is still missing something to make it a five-star soup for me. Thanks for sharing!

Todd's Famous Blueberry Pancakes

This is a great recipe for blueberry pancakes. They come out moist from all the blueberries but still fluffy. I do agree with other reviewers that fresh blueberries would make for a much prettier pancake; I used frozen and while the pancakes were very tasty they were green. I didn't have the time to wait for an hour but I waited 30 minutes and thought they came out perfectly fine; next time I'll be sure to plan ahead and see if it makes a difference. Thanks for sharing this recipe!

Garlicky Summer Squash and Fresh Corn

A great base recipe, easy to put together and useful when you're trying to use up extra zucchini and yellow squash. The flavors are a nice and fresh but a bit bland for my tastes so I added dried oregano and basil in the end. A good side dish for summer. Thanks for sharing!

Greek Couscous

Fantastic for a healthy lunch. Used veggie broth rather than chicken broth (since I'm a vegetarian) and left out the olives (don't like them), but other than that I stuck to the recipe and my family loved it. The "dressing" is quite good, the flavors come together very nicely. Thanks for sharing this recipe!

Best Marinara Sauce Yet

Excellent sauce and so easy to put together. I think the white wine does make a difference so I recommend it. I didn't have stewed tomatoes so I used diced, and I added about 1 tsp. of brown sugar to cut the acidity. Next time I'll increase the oregano and add some basil, but other than that I think this recipe is very good as written. Thanks for sharing!

Quick and Easy Peanut Butter Oatmeal
