Pesto Pasta with Green Beans and Potatoes

Reviewed: Jan. 16, 2013
Very nice recipe, I liked the tangy flavor that came from the yogurt. Used whole grain pasta but other than that I followed the recipe. Makes a nice dinner when paired w/a simple side salad. Thanks for sharing!

Thai-Style Peanut Sauce with Honey

Reviewed: Jan. 13, 2013
really nice sauce for a stir fry. I love that sweet and spicy combo. Just used this with a bag of frozen stir fry veggies and had it with brown rice for a delicious dinner. Thanks for sharing!

Snickerdoodle Cake I

Reviewed: Jan. 13, 2013
Very nice recipe, and it does taste like a snickerdoodle! I did find that adding 1/2 tsp cinnamon and 1/2 tsp. vanilla to the batter helped the flavor. I used butter instead of shortening (I never have shortening) and I really enjoyed the end product. 35 minutes at 350 was perfect for my oven. Thanks for sharing!

Make Ahead Lunch Wraps

Reviewed: Jan. 12, 2013
A very good idea for quick lunches and healthy with all the protein from the beans. A great base recipe, but it definitely needs some spice so I'd recommend adding cumin, garlic, etc. and maybe use your favorite salsa in place of the canned tomatoes w/chilis. I love having these for lunch; one wrap and I'm full (thus avoiding the urge to run to the vending machine at 3pm haha). Thanks for sharing!

Spanish-Style Quinoa

Reviewed: Jan. 1, 2013
A good recipe, but definitely needed more spice (increase the amount of cumin for sure) for my tastes and I think salsa would work better than tomato sauce. A nice way to cook quinoa, though, and you can make it a full meal by adding black beans. Excellent for lunch the next day, and I like the idea of putting them in peppers. Thanks for sharing!

Mexican Bean and Squash Soup

Reviewed: Jan. 1, 2013
Very nice soup, the lime at the end gives it a nice tang. Not sure that basil was the best idea, next time I think I'll try for mexican oregano or something. chipotle peppers add a nice touch. Definitely increase the amount of cumin, 1 tsp. wasn't enough for me. Thanks for sharing your recipe!

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

Reviewed: Jan. 1, 2013
I really liked how filling this soup is, and I like that it's full of healthy beans and sweet potatoes, but it did need some adjustments in the spice department. I agree with other reviewers that this recipe, as written, has too many competing flavors. I could tell by the ingredient list that this would create problems so I left out the onion and mustard powders, the thyme, rosemary, basil, and coriander. Sometimes its best to stick to certain flavors and really let them shine, rather than throwing everything in the pot. Still a very good base recipe for warm, comforting winter soup. Thanks for sharing!

Best Chocolate Chip Cookies

Reviewed: Dec. 23, 2012
Great recipe that makes for some beautiful cookies! My only issue with these was the spreading, but I think that's because I didn't leave the dough in the fridge long enough so I won't fault the recipe for that. 10 minutes is perfect for these. They look great on my holiday cookie table. Thanks for sharing!

White Chocolate and Cranberry Cookies

Reviewed: Dec. 23, 2012
Pretty good recipe, remember to stick the dough in the fridge for a bit to avoid spreading and add a pinch of salt to the dough (I add a tiny bit of salt to all my baked goods). 10 minutes in my oven was perfect, but all ovens vary so keep an eye on them. These are quite sweet so next time I think I'll cut out a 1/2 cup of the white sugar, but that's a matter of personal preference. Thanks for sharing this recipe!

Cinnamon Swirl Bread

Reviewed: Dec. 21, 2012
This was ok. I found the baking time to be off, it took over an hour to bake in my oven and the center was still raw. I found that the batter itself needed more flavor so I added cinnamon to the batter and increased the amount of cinnamon in the cinnamon/sugar mix. A nice, sweet bread that's good for dessert that just needs some adjustments, imho, to warrant 4 or 5 stars. Thanks for sharing!

Donut Muffins

Reviewed: Dec. 21, 2012
Excellent! Followed the recipe exactly and everybody gobbled them up. I got about 18 with my mini muffin tins, but I know these tins vary in size so that's not a problem. Definitely a keeper; next time I know I'll have to make a double batch because these do not last long in my house. Thanks for sharing!

Quinoa Black Bean Burgers

Reviewed: Dec. 16, 2012
Excellent recipe; so filling and tasty! I did use cayenne pepper and jalapeno rather than hot sauce, and I did increase the cumin, but other than that I followed the recipe. These are just as good when you bake them. I plan to make more and freeze them so I have them on hand for those days when I don't feel like cooking or don't have time. Thanks for sharing!

Garlic Basil Mashed Potatoes

Reviewed: Nov. 25, 2012
Very good mashed potatoes; I really enjoyed the basil in this but had to double the garlic powder to suit my tastes. Dried basil worked fine but I think this would be even better with fresh basil in the summer. Good side for an italian style meal. Thanks for sharing!

Whipped Cardamom Sweet Potatoes

Reviewed: Nov. 4, 2012
Excellent potatoes, I really enjoyed the cardamom, which takes a simple dish to the next level. I didn't whip the potatoes, I just mashed them up with a fork. I used cayenne pepper rather than white pepper, but otherwise I stuck to the recipe. The fried shallots are the perfect finish. Thanks for sharing!

Tropical Coconut Black Bean Soup

Reviewed: Sep. 20, 2012
A nice base recipe but rather bland as written. I added cumin, red chili powder, and some cinnamon. I cut the amount of peas in half because I wanted to enjoy the coconut flavor, which I brought out even more by sprinkling each bowl with some shredded, unsweetened coconut. Nice recipe to start with, but be sure to add some spices.

Sugo Rosso (Red Sauce)

Reviewed: Aug. 7, 2012
Very nice sauce, classic summertime flavors. fresh basil really makes the dish. I increased the garlic (b/c I can't get enough of it), and next time I might add a pinch of red pepper flakes for a little kick at the end. However, it is delicious just as written. Thanks for sharing!

Four Cheese Margherita Pizza

Reviewed: Aug. 6, 2012
Classic flavors that I love, but the addition of feta takes it to another level. This is great summer pizza when you have lots of basil and fresh tomatoes. Thanks for sharing!

All-Around Good Smoothie

Reviewed: Aug. 6, 2012
Wonderful smoothie, I left out the protein supplement since I didn't have any on hand but other than that I followed the recipe. Even without the protein it was quite filling. I like that I can switch the fruit for a different flavor, so far strawberries, blueberries, and peaches have all been very tasty. Thanks for sharing!

Fiesta Pita

Reviewed: Jul. 25, 2012
very nice recipe, and super easy to make. I prefer pepper jack or, if I can get it, queso fresco, in these types of recipes rather than feta. The hot sauce was not great in this, better to use a spicier salsa. Next time maybe I'll use black beans for even more protein. Overall a really good, filling dish. Thanks for sharing!
