Vegetarian Jambalaya

Excellent dish, enjoyed every bite. Used long grain brown rice to make it a bit healthier, and used a cajun spice blend instead of all the separately listed spices. Delicious!

Sun-Dried Tomato and Arugula Pizza

I love sundried tomatoes and I love arugula. The only reason i am giving this four stars is because I think it the arugula should be in the pizza, not on top after the pizza is done, and I think it needed more seasoning. I would add oregano, garlic powder, and maybe some crushed red pepper flakes if you like some heat. Still a very good pizza and I will be making it again. Thanks for sharing!

Robin's Cheesy Chipotle Grits

Really tasty grits, just cut back on the salt and cumin (I cut both down to about 1/2 the stated amount) and adjust the amount of chipotle to your liking; I love spice so I used the entire amount called for. Not sure its necessary to have the green chilies when there's already so much going on, next time I'll leave them for another dish. Thanks for sharing, this is a great way to enjoy grits!

Creamy Oatmeal Berry Swirl

Really love this idea for quick and tasty oatmeal, only changes I made were 1) old fashioned oats rather than instant, and 2) omit the whipped topping. I find the old fashioned oats healthier and tastier than the ones in packets, and I just didn't have whipped topping on hand. Still made for a great, fast bowl of oatmeal. I really like the idea of using fruit yogurt instead of whipped topping. Will definitely try this with other types of preserves for some variety.

Chipotle Smashed Potatoes

Absolutely loved this, even after deciding to leave out the mayo and cut the amount of cheese and cream in half (to make it a bit healthier, even though I did end up adding another tablespoon of butter). I would definitely make the "full fat" version as stated for a party, the flavors are just wonderful and you can adjust the amount of chipotle pepper you want in there if you don't like spicy food. Thanks for sharing, I will be making these often!

Chocolate Chip Pie I

amazing! and I even cut back on the amount of sugar (did 1/3 cup of each kind), the amount of chocolate chips (3/4 cup), the amount of walnuts (1/2 cup) and the amount of butter (3/4 cup) ALL in an effort to make it just a *little* healthier and it was just as good as the first time, when I made it as written. I loved it then and I love it now that I know I can cut back on the bad stuff a touch and still have a great pie that will only require an extra 15 minutes on the treadmill rather than an extra 30 minutes. thanks for sharing this recipe, a big hit with me and my chocolate-loving roommates as well!

Oatmeal Pancakes II

I really like the idea of making pancakes a bit heartier by adding oatmeal. I like the texture of these and the ease of preparation. I also don't think the baking soda is necessary so I won't add it next time, but I did use regular milk (didnt have buttermilk) and while I thought they were very good I think they would be even better with the buttermilk. Very good way to make a kid-favorite breakfast a bit healthier. Thanks for sharing!

Apple Enchilada Dessert

Made the recipe as written and while I enjoyed it, I think I will do as others suggested and add some cinnamon and nutmeg to the filling. I also like the idea of adding some sweetened cream cheese inside (the cheesiness would make it more enchilada-like). The sauce on top does thicken a bit as it sits but not enough for me, next time I won't use the water. Overall a very tasty end product and super-easy to put together. Thanks for sharing this recipe!

Quinoa Vegetable Salad

I used all of the ingredients listed, but changed the method of preparation to make it a warm dish. basically sauteed all the veggies in olive oil and garlic, folded them into the cooked quinoa, and topped it off with the balsamic vinegar. Delicious, healthy, and perfect for lunch. thanks for sharing!

Honeybee Cookies

Great honey flavor and the texture is interesting, I enjoyed it but others found it odd. I found it was really important to stick these in the fridge for a bit before putting them in the oven, they do have a tendency to spread and keeping the dough chilled helps with that. Thanks for sharing!

Pesto Pasta with Green Beans and Potatoes

Very nice recipe, I liked the tangy flavor that came from the yogurt. Used whole grain pasta but other than that I followed the recipe. Makes a nice dinner when paired w/a simple side salad. Thanks for sharing!

Snickerdoodle Cake I

Very nice recipe, and it does taste like a snickerdoodle! I did find that adding 1/2 tsp cinnamon and 1/2 tsp. vanilla to the batter helped the flavor. I used butter instead of shortening (I never have shortening) and I really enjoyed the end product. 35 minutes at 350 was perfect for my oven. Thanks for sharing!

Make Ahead Lunch Wraps

A very good idea for quick lunches and healthy with all the protein from the beans. A great base recipe, but it definitely needs some spice so I'd recommend adding cumin, garlic, etc. and maybe use your favorite salsa in place of the canned tomatoes w/chilis. I love having these for lunch; one wrap and I'm full (thus avoiding the urge to run to the vending machine at 3pm haha). Thanks for sharing!

Spanish-Style Quinoa

A good recipe, but definitely needed more spice (increase the amount of cumin for sure) for my tastes and I think salsa would work better than tomato sauce. A nice way to cook quinoa, though, and you can make it a full meal by adding black beans. Excellent for lunch the next day, and I like the idea of putting them in peppers. Thanks for sharing!

Mexican Bean and Squash Soup

Very nice soup, the lime at the end gives it a nice tang. Not sure that basil was the best idea, next time I think I'll try for mexican oregano or something. chipotle peppers add a nice touch. Definitely increase the amount of cumin, 1 tsp. wasn't enough for me. Thanks for sharing your recipe!

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

I really liked how filling this soup is, and I like that it's full of healthy beans and sweet potatoes, but it did need some adjustments in the spice department. I agree with other reviewers that this recipe, as written, has too many competing flavors. I could tell by the ingredient list that this would create problems so I left out the onion and mustard powders, the thyme, rosemary, basil, and coriander. Sometimes its best to stick to certain flavors and really let them shine, rather than throwing everything in the pot. Still a very good base recipe for warm, comforting winter soup. Thanks for sharing!

Best Chocolate Chip Cookies

Great recipe that makes for some beautiful cookies! My only issue with these was the spreading, but I think that's because I didn't leave the dough in the fridge long enough so I won't fault the recipe for that. 10 minutes is perfect for these. They look great on my holiday cookie table. Thanks for sharing!
