Garlic and Artichoke Pizza

I really enjoyed this pizza; but I just knew colby/monterey-jack wouldn't be a good fit for my tastes so I used a blend of italian cheeses and finished it off with a sprinkle of romano. I love artichokes and can't get enough garlic so this was a winner in my book. Next time I'll add some oregano, basil, or red pepper flakes as various reviewers have mentioned. thanks for sharing!

Pasta with Baby Broccoli and Beans

Delicious and healthy; I loved all the flavors in this and the fava beans are a nice addition that helps keep you full. Basil would be a great garnish when in season. Thanks for sharing!

Jim's Cheddar Onion Soda Bread

This was my first time trying any type of soda bread and I really enjoyed it. I did have to add more buttermilk as other reviewers have mentioned but that wasn't a big deal. I did feel that this was a bit bland and while I would make it again I would increase the amount of onion (I used green onions) and cheddar, I might even add something extra like some sun dried tomotoes. Overall it was pretty good; thanks for sharing!

Baked Potato Soup V

In terms of flavor, this soup is AMAZING. It is so comforting and creamy; a fantastic comfort food. The great thing (for me) was that I could use light sour cream, 2%milk, and cut the butter down to 1/2 cup and still have great results. I didn't add bacon (I'm a vegetarian). My only problem is with the amount of liquid. It simply didn't call for enough liquid; as written the recipe is so thick its hard to stir and definitely not "soup." I just added some veggie broth and *ta da*! perfect :) That's not a big problem in my book but it is something I hope others look out for. Regardless, this is a soup I will make again. Graham Griddle Cakes

I really enjoyed these, but I did find that I needed to add more graham cracker crumbs to get the flavor to come through. I kept the rest of the ingredients the same and it made for a nice breakfast and a good way to use up some extra graham cracker crumbs I had from making a pie earlier. Thanks for sharing!

Butterscotch Brownies III

This rating is for the brownies only. The frosting got such consistently bad reviews I decided it wasn't worth the time or ingredients. This is absolutely sweet enough without the frosting; to get more of that butterscotch flavor (rather than just brown sugar) I added about 1/2 cup of butterscotch chips. The brownies are quite good; it does help to cut back on the flour a bit (I cut back to 2/3 cup) and I cut back on the sugar since I knew I was adding the chips. The reviews were all over the place on this one and everybody who made it as written gave it really poor reviews, so I was apprehensive but I love butterscotch so I gave it a shot w/the changes mentioned above (a compilation of the most popular adjustments from other reviews) and I think it came out pretty good. I'd make it again but with those changes. Thanks for sharing your recipe; it was great for my sweet tooth fix :)

Pumpkin Chipotle Pasta Sauce

I absolutely loved this, and I really wouldn't change a thing. I would advise that people be careful with the chipotle peppers if they are sensitive to spicy foods. This is definitely for people who are adventurous when it comes to new flavor combos. I love trying new things so I really enjoyed it; my fiance, however, wasn't as impressed and found it "too weird." Thanks for sharing this one, I will be making it again!

Cajun Corn Soup

Very good soup but I think it needs more in the spice department. Better to use an excellent cajun spice blend for this recipe. I also didn't bother blending it at any point and I think it turned out just fine. Thanks for sharing!

Vegetarian Jambalaya

Excellent dish, enjoyed every bite. Used long grain brown rice to make it a bit healthier, and used a cajun spice blend instead of all the separately listed spices. Delicious!

Sun-Dried Tomato and Arugula Pizza

I love sundried tomatoes and I love arugula. The only reason i am giving this four stars is because I think it the arugula should be in the pizza, not on top after the pizza is done, and I think it needed more seasoning. I would add oregano, garlic powder, and maybe some crushed red pepper flakes if you like some heat. Still a very good pizza and I will be making it again. Thanks for sharing!

Robin's Cheesy Chipotle Grits

Really tasty grits, just cut back on the salt and cumin (I cut both down to about 1/2 the stated amount) and adjust the amount of chipotle to your liking; I love spice so I used the entire amount called for. Not sure its necessary to have the green chilies when there's already so much going on, next time I'll leave them for another dish. Thanks for sharing, this is a great way to enjoy grits!

Creamy Oatmeal Berry Swirl

Really love this idea for quick and tasty oatmeal, only changes I made were 1) old fashioned oats rather than instant, and 2) omit the whipped topping. I find the old fashioned oats healthier and tastier than the ones in packets, and I just didn't have whipped topping on hand. Still made for a great, fast bowl of oatmeal. I really like the idea of using fruit yogurt instead of whipped topping. Will definitely try this with other types of preserves for some variety.

Chipotle Smashed Potatoes

Absolutely loved this, even after deciding to leave out the mayo and cut the amount of cheese and cream in half (to make it a bit healthier, even though I did end up adding another tablespoon of butter). I would definitely make the "full fat" version as stated for a party, the flavors are just wonderful and you can adjust the amount of chipotle pepper you want in there if you don't like spicy food. Thanks for sharing, I will be making these often!

Chocolate Chip Pie I

amazing! and I even cut back on the amount of sugar (did 1/3 cup of each kind), the amount of chocolate chips (3/4 cup), the amount of walnuts (1/2 cup) and the amount of butter (3/4 cup) ALL in an effort to make it just a *little* healthier and it was just as good as the first time, when I made it as written. I loved it then and I love it now that I know I can cut back on the bad stuff a touch and still have a great pie that will only require an extra 15 minutes on the treadmill rather than an extra 30 minutes. thanks for sharing this recipe, a big hit with me and my chocolate-loving roommates as well!

Oatmeal Pancakes II

I really like the idea of making pancakes a bit heartier by adding oatmeal. I like the texture of these and the ease of preparation. I also don't think the baking soda is necessary so I won't add it next time, but I did use regular milk (didnt have buttermilk) and while I thought they were very good I think they would be even better with the buttermilk. Very good way to make a kid-favorite breakfast a bit healthier. Thanks for sharing!

Apple Enchilada Dessert

Made the recipe as written and while I enjoyed it, I think I will do as others suggested and add some cinnamon and nutmeg to the filling. I also like the idea of adding some sweetened cream cheese inside (the cheesiness would make it more enchilada-like). The sauce on top does thicken a bit as it sits but not enough for me, next time I won't use the water. Overall a very tasty end product and super-easy to put together. Thanks for sharing this recipe!

Quinoa Vegetable Salad

I used all of the ingredients listed, but changed the method of preparation to make it a warm dish. basically sauteed all the veggies in olive oil and garlic, folded them into the cooked quinoa, and topped it off with the balsamic vinegar. Delicious, healthy, and perfect for lunch. thanks for sharing!

Honeybee Cookies

Great honey flavor and the texture is interesting, I enjoyed it but others found it odd. I found it was really important to stick these in the fridge for a bit before putting them in the oven, they do have a tendency to spread and keeping the dough chilled helps with that. Thanks for sharing!
