Garbanzo Bean Burgers

Reviewed: Oct. 10, 2010
This does need a binder, some breadcrumbs, and more seasonings (I added garlic, lemon pepper, and oregano). Making those changes turns it into a five star burger, making the recipe as-is results in a four star filling for pita bread, topped with greek yogurt sauce.

Big Germans

Reviewed: Oct. 10, 2010
I'm giving this four stars for the flavor and how easy it is to prepare, but I can't give it five stars because it didn't rise! I followed the directions exactly, but the center stayed flat while the sides rose up a bit and started to turn brown. I'm pretty sure it's a cooking temp. issue so I'll be playing around with the oven to see if I can get it right, but man was it a bummer when I looked in the oven :(

Honey Mustard Dressing II

Reviewed: Oct. 9, 2010
Simple and delicious! I used fat free plain yogurt instead of mayo (never liked mayo) and I thought it tasted great. I think the proportions are spot-on, but they can be easily adjusted to suit individual tastes (another bonus). Thanks for sharing this one, I'll be using it often :)

Amy's Spicy Beans and Rice

Reviewed: Oct. 8, 2010
As written, this is about 3 stars because it isn't all that flavorful, it's too liquid-y, and it calls for too little rice for this amount of beans. I made more rice, drained the beans, then added salsa, garlic, and lime juice (which takes care of the dryness other reviewers had mentioned). I also increased the cumin powder to 2 1/2 tsp. and left out the olives (never liked them). With these changes, it is a great, filling dish that has plenty of flavor. I'll make it again, but with the changes mentioned above.

Awesome and Easy Creamy Corn Casserole

Reviewed: Oct. 5, 2010
This one's a winner! I followed the recipe as stated and have no complaints. It's worth five stars as written, and I think changing it up a bit by adding peppers, onions, or even some cheddar cheese would make it 5+ stars. This is one of those comfort foods and I highly recommend it

Absolutely Fabulous Greek/House Dressing

Reviewed: Oct. 4, 2010
I really enjoyed this. The combination of ingredients is fantastic and it's all stuff that I have in my pantry. My only (small) problem with the recipe is that it calls for a bit too much vinegar for my tastes. I've found that using equal parts olive oil and vinegar works best for me. This is something I'll be making often. Thanks for the recipe :)

Sauteed Apples

Reviewed: Sep. 30, 2010
This recipe makes for some delicious and very pretty looking apples. I used gala apples because that was what I had on hand and followed the recipe, resulting in soft and sweet apples that smelled as good as they tasted. Thanks for the recipe!

Indonesian Spiced Rice

Reviewed: Sep. 29, 2010
Delicious! I cut the recipe in half since other reviewers noted that it makes a lot. Since I am vegetarian I used veggie broth rather than chicken broth, but I kept everything else the same. This rice dish is spicy, but not so much that it masks the other flavors...and that's just how I like it. Thanks for this one, it's a keeper :)

Creamy Au Gratin Potatoes

Reviewed: Sep. 28, 2010
This is a great comfort dish. Simple, cheesy goodness. My only problem with this dish was the amount of oil it produced, but that's to be expected with something so cheesy and so high in calories. I did bake it for about 15 minutes without the foil on top, which gave the potatoes a nice golden brown crunch on top. This is a great recipe for those days when you want something simple, familiar, and soothing. Thanks for the recipe!

Love this! It's got great flavor, fills you up, and is actually rather healthy. I'll be making this one often. Thanks for the recipe!

Baked Tortilla Chips

Reviewed: Sep. 26, 2010
So good! I followed the recipe for the most part; I left out the salt because my dad is on a low-salt diet. I don't even think these need salt at all, they are flavorful and they do crisp up nicely (for a chip that's baked, anyway). I think next time I'll try using PAM, but believe me I'll be making this a lot. Thank so much for this recipe!

Italian Style Brunch Cakes

Reviewed: Sep. 25, 2010
I really enjoyed these. I served them with some warmed pasta sauce on the size. My only (small) complaint is that without the pasta sauce to dip them in, these were rather bland on their own. I think the recipe needs more Italian seasoning and maybe some crushed red pepper for a kick. Still, I will be making these again, I'll just increase the spices. Thanks for the recipe!

Butterscotch Oatmeal

Reviewed: Sep. 25, 2010
Delicious, filling, and way better than the stuff that comes in individual packets. I cut down on the butter to make it a bit healthier and cut back on the sugar just a tad, and I thought it was plenty sweet. This one's a keeper. Thanks, Kianas!

Indian Peanut Stew

Reviewed: Sep. 24, 2010
I was skeptical about this one because i didn't think the flavors would go well at all, but I very, very pleased with this dish! I made the rice they way I normally make it, and I increased the cayenne pepper because I like my food very spicy. Other than that, I followed the recipe to the letter and got a very filling, very flavorful dinner. Thanks so much, Hoolie! I'll be making this one often

Garden Veggie Pizza Squares

Reviewed: Sep. 21, 2010
A delicious appetizer! I used reduced fat crescent rolls and light cream cheese, and I don't think that ruined the flavor at all. I left the broccoli out b/c I didn't have any but used some shredded sharp cheddar cheese for added flavor. This is definitely something I'll be making again. Thanks!

Blackberry Puff Pastry Tarts

Reviewed: Sep. 19, 2010
Five stars for the great taste! I used frozen berries and that was a mistake that caused the pastry filling to be very runny, so I definitely don't recommend frozen berries in this recipe. I used pastry sheets rather than shells and I didn't have turbinado sugar so I just sprinkled brown sugar and I think that worked quite well.

Spinach Lasagna III

Reviewed: Sep. 17, 2010
Delicious lasagna! I left the mushrooms out b/c I didn't have any on hand and used fresh basil rather than dried, but other than that I stuck to the recipe. Using no-boil noodles cuts down on prep-time (and it's one less pot to clean). Thanks for the recipe :)

Black Bean Spinach Pizza

Reviewed: Sep. 15, 2010
Oh wow, "gourmet" is right! I didn't think that these flavors would come together, but I was very pleasantly surprised. I used the ingredients in the amounts stated in the recipe, and the only thing I did differently in making it was add the salsa to the black bean mixture, which made it easier to spread over the crust. Thank you so much for the recipe, it will be nice to have a change from the usual pizza :)

Basil, Tomato and Mozzarella Sandwich

Reviewed: Sep. 15, 2010
This is a great for a simple, fresh tasting lunch. I drizzled the balsamic over the bread and the tomatoes rather than using it as a dip, and I just chopped the basil. Next time I think I'll try toasting the bread a bit. Thanks for a great vegetarian lunch option!
