Pizza Casserole

I love how quick and easy this is. I left out the beef and pepperoni b/c I'm vegetarian and just used more veggies (including some mushrooms). Everything else I kept the same. It's a great casserole that you can change up to suit different tastes. Thanks for the recipe!

Fresh Pea Soup

delicious! I used frozen peas and they worked fine. I used veggie broth instead of water (I had a box that I needed to finish), and I sauteed 1 clove of garlic in with the shallots. Using one of those hand-held blenders right in the pot makes preparation faster and clean-up easier (1 less thing to wash). Thanks for the recipe, I really enjoyed it!

Delicious Black Bean Burritos

Adding the cream cheese to the mix is a great idea, but the recipe, as written, gets four stars from me because it needs some cumin (I added about 2 tsp.) for flavor and it needs some tomatoes for moisture (I chopped up 1/2 of a regular tomato). As others have mentioned, this can be reheated for lunch the next day, and it tastes just as good. Thanks for the recipe!

School Day Biscuits

Easy, fast, and they taste a lot like a cinnamon roll. 400 seemed a bit high to me so I baked these according to the package directions. Thanks for this one, it's a great idea :)

Pizza Pinwheels

Very tasty, and I love the idea! it is a bit dry though, so when I made a second batch I added some pizza sauce to the inside of the pinwheels and that worked well. I also switch out pepperoni and add mushrooms and green peppers. Thanks for the recipe :)

Black Bean Vegetable Soup

Delicious soup, but I did have to increase the cumin and reduce the vegetable stock. I like that I can add different veggies to the soup to fill it out. This time I added green peppers, celery, and green beans. The longer this simmers the better it tastes. Thanks for the recipe, DeeDee!

To Die For Blueberry Muffins

Absolutely delicious! The muffin itself is moist and filled with blueberries, the topping makes it bakery-worthy. I've tried these with and and without the topping, and I love it both ways. I use frozen blueberries and they worked fine, but of course fresh would be amazing. This is an easy, quick recipe that yields great results. Thank you so much for this one, I really enjoyed it :)

Potato Cake

I really enjoyed this. I think the key to a flavorful potato cake is the mashed potatoes. If your potatoes don't have a lot of seasoning then your cakes obviously won't be very good. I used PAM in an effort to be healthy and I thought they turned out really great (but of course butter would be better). Thanks for the recipe!

Fava Bean Breakfast Spread

Delicious! I sauteed the onion and tomato in some olive oil first and then added the beans and the seasonings. This makes for a good, unique breakfast (at least in my house) and I think it would be just as tasty for lunch. Thanks for the recipe, Beverly!

Apple Pie by Grandma Ople

My very first fruit pie, and the results look and taste amazing! I cheated a bit by using refrigerated pie crust. I like my apple pie with some spice so I added a tsp. of cinnamon and 1/2 tsp. nutmeg. I took the advice of others and poured about 2/3 of the syrup into the apples, and then poured the rest after I had put the crust on top. I definitely recommend baking the pie underneath a baking sheet keep the oven clean. I think the key to avoiding a runny filling is to let the pie sit for a good while before cutting into it (I know it's hard!). You can really get the flavor of the apples in this pie, and I love that. As written (without the spice) this is a 4 star pie. Add some cinnamon and nutmeg and mix the syrup with the apples and its definitely five stars!

Wow. This is better than five stars. All I did differently was use veggie broth rather than chicken broth (I'm a vegetarian). I kept everything else the same. I love all the veggies in this, and the herbs make everything really flavorful. I made a huge pot of this and I'm really happy that I did. Thanks, Jamie!

Lemon Thyme Rice

I like the flavors involved, but I think it becomes five stars when you add a bit more lemon and cut the dried thyme down to 1 tsp. rather than 1 tbsp. (as others have mentioned). cooking up some diced onion and some garlic in the butter before adding the rice might be a good idea, too.

Good Old Fashioned Pancakes

I really enjoyed these, but next time I will cut the salt to 1/2 tsp. These pancakes are moist, fluffy, and so easy to make. I don't think I'll be using the boxed mixes anymore. Thanks for this recipe :)

Burrito Pie

Its a great dish, the only thing I did differently was swap 2 cans of black beans for the ground beef (I'm vegetarian). The dish does take a bit of time to prepare but you get leftovers for the next few days so for me it was worth the time. I didn't double the tortillas when layering, and it didn't end up soggy. Thanks for the recipe, I'll be using it often
