This makes for a nice, light lunch. Be sure to use a good quality olive oil. Thanks for the recipe!

Mama's Best Broiled Tomato Sandwich

Reviewed: Jan. 4, 2011
fantastic sandwich! Followed the directions exactly and I was very pleased with the outcome. As with all dishes that involve a broiler, it's important to keep your eye on the oven because it can burn quickly. Thanks for the recipe!

Strawberry Pie II

Reviewed: Jan. 3, 2011
Followed the directions exactly and it turned out great. I knew it would take a long time to set up in the fridge so I made it in the morning and by evening it was perfect. Thanks for the recipe!

Chocolate Chocolate Chip Cookies I

Reviewed: Jan. 2, 2011
Delicious cookies, very chocolate-y! I followed the recipe exactly and was very pleased with the results. 8 minutes worked fine on my oven, they looked a bit undercooked when I took them out but finished cooking right on the sheet. I recommend chilling the dough as well, this kept my cookies from becoming flat. Thanks for the recipe, I really enjoyed these cookies.

Cajun Pasta Fresca

Reviewed: Dec. 12, 2010
such a delicious pasta dish! I did add some diced onions and green peppers b/c I needed to use them up, and it only added to the wonderful flavors in the dish. Thanks for the recipe, it's a keeper!

Peanut Buttercup Hot Chocolate

Reviewed: Dec. 7, 2010
I'm only sorry that I didn't try this sooner. I think the key is to make sure you make you cocoa really hot and mix it a lot while still hot, I think this helped mix the peanut butter into the cocoa. Jif creamy natural worked fine for me. Thank you so much for the recipe, it's delicious!

Black Bean and Salsa Soup

Reviewed: Dec. 4, 2010
So tasty and so easy to make! The ingredients are simple and they come together quickly. I doubled the cumin (personal preference, I really love that stuff) and used hot salsa. To make things easier I used my immersion blender and mixed it all up right in the pot. I will be making this a lot. Thank you so much for this recipe!

Green Bean and Potato Salad

Reviewed: Dec. 4, 2010
I really enjoyed this salad; it's nice to have a potato salad without all the mayo. The flavors are really great and it tastes even better after sitting overnight, but I have to agree with others that there is too much of the dressing. I'll probably cut the dressing in half and use the same amount of potatoes/green beans next time. Thanks for the recipe!

Black Bean and Rice Enchiladas

Reviewed: Dec. 3, 2010
excellent dish! I used taco seasoning rather than "chili powder" but other than that I kept things the same. I really enjoyed this, even though there wasn't as much cheese as other enchiladas I've had. Thanks for the recipe!

Brooke's Best Bombshell Brownies

Reviewed: Dec. 1, 2010
This is my first attempt at brownies from scratch, and I am very pleased with the results. The only change I made was using 1/2 white sugar and 1/2 brown sugar. I planned on doing this with all white sugar as the recipe stated (I like to try a recipe exactly as written the first time, then make changes from there), but I was out of white sugar and had no time to go to the store. Luckily, the other reviews that recommend this combination of sugars are absolutely right! This is a very rich, very chocolate-y brownie, so I recommend enjoying them with a glass of milk. Thanks for the recipe, Brooke!

Quinoa and Black Beans

Reviewed: Nov. 30, 2010
I love how filling and healthy this is! I did double the spices because I like my food pretty spicy and it was rather bland for me with the measurements in the recipe. I also used 1 can of black beans rather than 2 because I felt that 2 cans would result in too many beans and not enough quinoa. Thanks for the recipe, I'll be making this one often.

Italian Dressing Mix

Reviewed: Nov. 18, 2010
Really good mix of herbs/spices, but I find that it is a more flavorful dressing if you use red wine vinegar or balsamic vinegar instead of the regular white vinegar. I'll be making this often :)

Pizza Casserole

Reviewed: Nov. 18, 2010
I love how quick and easy this is. I left out the beef and pepperoni b/c I'm vegetarian and just used more veggies (including some mushrooms). Everything else I kept the same. It's a great casserole that you can change up to suit different tastes. Thanks for the recipe!

Fresh Pea Soup

Reviewed: Nov. 18, 2010
delicious! I used frozen peas and they worked fine. I used veggie broth instead of water (I had a box that I needed to finish), and I sauteed 1 clove of garlic in with the shallots. Using one of those hand-held blenders right in the pot makes preparation faster and clean-up easier (1 less thing to wash). Thanks for the recipe, I really enjoyed it!

Delicious Black Bean Burritos

Reviewed: Nov. 15, 2010
Adding the cream cheese to the mix is a great idea, but the recipe, as written, gets four stars from me because it needs some cumin (I added about 2 tsp.) for flavor and it needs some tomatoes for moisture (I chopped up 1/2 of a regular tomato). As others have mentioned, this can be reheated for lunch the next day, and it tastes just as good. Thanks for the recipe!

School Day Biscuits

Easy, fast, and they taste a lot like a cinnamon roll. 400 seemed a bit high to me so I baked these according to the package directions. Thanks for this one, it's a great idea :)

Pizza Pinwheels

Reviewed: Nov. 13, 2010
Very tasty, and I love the idea! it is a bit dry though, so when I made a second batch I added some pizza sauce to the inside of the pinwheels and that worked well. I also switch out pepperoni and add mushrooms and green peppers. Thanks for the recipe :)

Pineapple Upside-down Cake Martinis

delicious and so simple! I love that I didn't have to go get special/complicated ingredients for this drink. Be careful, as others have said they will sneak up on you :)

Black Bean Vegetable Soup

Reviewed: Nov. 12, 2010
Delicious soup, but I did have to increase the cumin and reduce the vegetable stock. I like that I can add different veggies to the soup to fill it out. This time I added green peppers, celery, and green beans. The longer this simmers the better it tastes. Thanks for the recipe, DeeDee!

To Die For Blueberry Muffins

Reviewed: Nov. 12, 2010
Absolutely delicious! The muffin itself is moist and filled with blueberries, the topping makes it bakery-worthy. I've tried these with and and without the topping, and I love it both ways. I use frozen blueberries and they worked fine, but of course fresh would be amazing. This is an easy, quick recipe that yields great results. Thank you so much for this one, I really enjoyed it :)
