Simple White Cake

This is my very first cake from scratch, and I am so pleased w/the results! I think the key to this cake is (as many other people have mentioned) really taking the time to beat the butter and sugar together, then adding each egg separately and beating it all together for a good while. halfway through the baking process I realized I ran out of (of all things) vanilla extract, so I used almond instead and I highly recommend making this with almond extract. I did increase the milk to 3/4 cup as others suggested. My end result was a moist and fluffy cake that had a lovely almond flavor. This recipe was so easy and the results were so wonderful that I don't think I'll be using the box mixes again. I see now that there is a huge difference and taking the time to make this from scratch was well worth it. Thank you very much for this recipe!

Jalapeno Popper Grilled Cheese Sandwich

One of the best grilled cheese sandwiches I've had in a long time. Usually I stick w/american cheese and tomato w/buttered bread. This was a a fantastic idea! I did have to make a few changes b/c of what I had in my fridge. I used fresh jalapeno peppers, I left the sour cream out and just used cream cheese, and I used american cheese rather than colby-monterey jack. This really is delicious. Thanks for the recipe, I know I'll be making this often!

Moroccan Potato Bean Soup

A fantastic recipe, and easily adjusted based on how much heat your family can handle. I'm vegetarian so I left the chicken bouillon out and used veggie stock rather than water. I didn't have white pepper so I just stuck with black pepper, but other than those two things I stuck with the recipe. This is an excellent recipe and very hearty, perfect for a cold, rainy day. Thanks for sharing :)

Cream of Wheat Griddlecakes

These are great griddlecakes! I did make a few changes to the recipe to make these a bit healthier calorie-wise. I cut the amount of oil to 1/8 cup, used nonfat plain yogurt rather than sour cream, and used splenda rather than white sugar. The cream of wheat gives a great texture to the griddlecakes. I've even frozen a few for breakfast during the week! Thanks for the recipe :)

Black Bean and Corn Salad II

WOW! I was practically shoveling this stuff into my mouth; I couldn't get enough! I love all the flavors in this salad and I made the recipe almost exactly as written. The only change I made was to use red onion rather than green (all I had on hand) and add 1 tsp. ground cumin to the dressing mix. Absolutely delicious summer salad with readily available ingredients. Thanks for this recipe, I'll be using it often!

Queenie's Killer Tomato Bagel Sandwich

Simple, healthy, delicious. Can't really ask for much more in a bagel sandwich. I sprinkled some lemon pepper over the tomatoes, but other than that I stuck with the recipe. I could add all sorts of veggies to this and still have a great sandwich. Thanks for the recipe :)

Greek Salad I

I made this salad exactly as written and enjoyed it very much. All the flavors went well together and the dressing was nice and light. I keep a lot of these ingredients on hand so I'll be making this often; maybe next time I make it I'll try some of the other suggestions such as adding red wine vinegar and a touch of sugar. Spiced Quinoa

Very good recipe! I did have to double the spices, but that's a personal preference thing and I like things very spicy. I'm a vegetarian and I ran out of veggie stock so I used water instead and it turned out just fine; I bet its even better with the veggie stock. I didn't use the pine nuts b/c they are too expensive for me right now. The raisins really do a great job counteracting the spiciness of the quinoa, and the garbanzo beans just round out the whole dish. It's a great, healthy option for lunch. Thanks for the recipe!

Asian Ginger Dressing

This is a great dressing, but I did have to cut back on the soy sauce (used about 1/2 the amount) b/c I could tell it would be way too salty for me if I used all of it. The fresh ginger is a must and I think sesame oil gives a better asian flavor to the dressing than olive oil. Thanks for the recipe!

Addictive Sweet Potato Burritos

I was a bit apprehensive about these burritos, but I decided to just make a small batch and try them out anyway. I am so happy I made these! The flavors are unusual but surprisingly very tasty; definitely not a dish for picky eaters. I followed the recipe to the letter and think it's five star worthy. Next time I'll do as other people have suggested and try it out with black beans. Overall, a very filling burrito that tastes a lot better than one would think. Thanks for the recipe :)

Fresh Veggie Bagel Sandwich

A delicious and healthy sandwich! I used whole wheat bagel thins and didn't have sprouts so I had t leave them out. Other than that I followed the recipe exactly and was very pleased with the results. The great thing about this recipe is how adaptable it is. I could use all sorts of different veggies and add different types of cheeses for variation. Thanks for the recipe :)

Mustard Oil Dressing

Light and delicious, with just the right amount of tangy flavor. The only changes I made were: 1) I used olive oil only (ran out of vegetable oil), 2) I used garlic powder rather than garlic salt. A really great dressing, and very easy to make. Thanks for the recipe :)

Famous Japanese Restaurant-Style Salad Dressing

Absolutely delicious! The only change I made was to use 1/2 peanut oil and 1/2 sesame oil. I love the flavors and the longer it sits, the better it tastes. Next time, I'll leave out the salt and black pepper, I don't think it added anything to the dish and soy sauce makes the dressing salty enough for our tastes. Thanks for the recipe!

Cheesecake Cookie Cups

I really love how easy these are to make. The only change I made was to use raspberry filling rather than cherry (it was all I had on hand). When you want that cheesecake flavor but don't want to go through all the trouble of making a whole cheesecake, these are a fantastic substitute. Thanks for the recipe!

Roasted Chickpeas

This makes for a delicious AND healthy snack; the only change I made was to cut back the oil to 1 tbsp. doing that also seemed to help make the chickpeas crunchy. I'm definitely going to make these often. thanks for the recipe!

Home-Fried Potatoes

A great basic recipe. There's really no need to boil the potatoes, I just softened them up in the microwave. What I really like about this recipe is the fact that you get potatoes that are crispy on the outside and soft and creamy on the inside. Sure this doesn't have much going on in the way of spices, but those of us who want to play around with different spices and flavors can do so easily. I added garlic (can't have potatoes w/o that stuff) and some cheese melted over the top. Thanks for the recipe!

Tasty Tortellinis

I made this as a pasta salad and thought it had a very nice flavor. I left out olives (don't like them) and replaced them with cherry tomatoes. I also cut back on the oil (to about 1/2 cup) b/c I knew 3/4 cup would be too much for me. I also only used 1 tbsp. of mustard since I didn't want that flavor to be overpowering the vinegar and garlic. The only reason I am giving this four stars is because I did have to make changes to it to suit my tastes, but I did really enjoy it. Thanks for the recipe, Nancy :)

Mexican Bean Pie

This is a good idea for a filling meal, but it is pretty bland. I recommend increasing the spices and adding some salsa right into the bean mixture. Doing those two things do help the flavor, but the submitted recipe is just too bland for me. Thanks for sharing, though :)

Herbed Greek Roasted Potatoes with Feta Cheese

I absolutely loved the flavors in this recipe! The lemon flavor was present but not overpowering, the mint adds some freshness and the feta cheese just pulls everything together and, when sprinkled over the hot potatoes, becomes creamy and still tangy. This is absolutely five star-worthy, just as written. Thanks for sharing :)
