Thai Peanut Dressing

Reviewed: Mar. 17, 2011
Followed the recipe exactly, but made enough for just 1 person since I live alone. wouldn't change a thing about this dressing, it is five stars as is. Adding some fresh ginger and a dash of siracha sauce takes it to another level. Thanks for the recipe!

Maple-Balsamic Vinaigrette

Reviewed: Mar. 17, 2011
This is fantastic poured over a salad of mixed greens, cranberries, walnuts, and feta cheese. I used 100% pure maple syrup and used a whisk rather than a blender (one less thing to clean). Thank you for the recipe :)

Pistachio Cake III

Reviewed: Mar. 14, 2011
This cake has a great flavor and it's easily to change things up by using other flavors of pudding and other types of cake mix. I thought the pistachio flavor was just fine, not too strong but just enough to be noticeable. The only change I made to the recipe was to leave out the green food coloring. If you're making this for a St. Patrick's day celebration it would be a good idea to add a few drops b/c without it you get a yellow-green color that doesn't quite "pop". Thanks for the recipe!

Smoked Paprika Vinaigrette

Reviewed: Mar. 14, 2011
This is a five star dressing with the regular paprika I used; I can only imagine how wonderful it must be with smoked paprika. I've already put smoked paprika on next week's grocery list and I plan on making the full amount (I cut it down to 1 serving for myself this time). Thanks for the recipe :)

Peanut Butter Pancakes

Reviewed: Mar. 13, 2011
I admit that these pancakes are rather thin and the batter has a tendency to get stuck on the spatula, but they taste amazing!! I didn't have honey so I didn't get to try the honey butter out, but I topped these pancakes with some strawberry preserves and they were a hit. Thanks for the recipe :)

Spicy Black Bean Empanadas

Reviewed: Mar. 10, 2011
Really good and easy to make. I did make some changes, starting with making 1/2 the recipe since I didn't need the full amount. I'm vegetarian so I left out the pork and used a full can of black beans instead. I had already starting making this when I realized that i didn't have tomato sauce so I used salsa instead, and it added fantastic flavor. I really enjoyed this recipe, I ate it as a meal by adding a salad with margarita dressing (from this site) but I know these would make great appetizers for a party. Thank you for the recipe!

Pico De Gallo

Reviewed: Mar. 10, 2011
This is decent, but a very basic recipe. As many others have mentioned, adding fresh lime juice and minced garlic rather than garlic powder makes a huge difference. This is a great addition for any fiesta. Thanks for the recipe!

Vinaigrette

Reviewed: Mar. 10, 2011
Really good stuff, and very easy to make. I used olive oil instead of vegetable oil and added some black pepper. Next time I'll leave out the salt, I don't think its needed here. Thanks for the recipe!

Poppy Seed Salad Dressing

Reviewed: Mar. 9, 2011
I really enjoyed this, but I think I'll cut back on the sugar next time. This gets better as it sits so I recommend making it ahead of time and storing it in the fridge until you're ready to eat. Thanks for the recipe!

African Peanut Soup

Reviewed: Mar. 7, 2011
Pretty good as written, the only thing I'll be doing next time is increasing the spices or taking Liz E.'s suggestion and using salsa in the place of the chopped tomatoes. As written it was very nice but a bit bland for my tastes. The tomato/peanut butter combination isn't for everyone, but I really enjoyed it so I'm sure I'll be making it again. Thanks for the recipe!

Festive Tossed Salad

Reviewed: Mar. 7, 2011
A simple tossed salad but oh so tasty! I was a bit concerned about the addition of dried cranberries; I didn't think they would go well in the salad. However, I decided to try it out anyway and I found that it all came together quite well. Thanks for the recipe!

Margarita Dressing

Reviewed: Mar. 5, 2011
Nice dressing, wouldn't change a thing about it. It tastes fresh and tart (but not too tart) and is great for a side salad when you're planning a Mexican-style meal. Thanks for the recipe!

Lemon Yogurt Muffins

Reviewed: Mar. 4, 2011
Such a nice muffin! I used lemon yogurt and added 1 more tablespoon of lemon juice to the mix. In 21 minutes I had 10 fluffy and moist muffins. I just loved these muffins! Thanks for the recipe, Nicole :)

Tacos in Pasta Shells

Reviewed: Mar. 4, 2011
Made two changes: used refried beans instead of ground beef (I'm a vegetarian) and used taco seasoning instead of chili powder. Really cool idea and easy to make. Thanks for the recipe :)

Balsamic Vinaigrette

Reviewed: Mar. 3, 2011
Delicious and so easy! Followed the recipe for the most part; only thing I did different was doubling the garlic (I can never have enough garlic). This will be something I make often. Thanks for the recipe!

Balsamic Roasted Red Potatoes

Reviewed: Mar. 2, 2011
Delicious potatoes! I really thought the amount of vinegar would be too much but other reviewers said it was just right so I tried it out. the vinegar is definitely not overpowering and it does caramelize and just tastes fantastic over the potatoes. The only thing I would do differently is add more nutmeg or leave it out entirely, since that flavor really didn't come through. Thanks for the recipe, I love finding new ways to make potatoes. :)

French Salad Dressing

Reviewed: Mar. 1, 2011
delicious! Made enough for just me and my bf and we both enjoyed it just as written. The only thing I'll add next time is some garlic (I can't get enough of the stuff). I think I'll even make more next time, so that I can bottle it. Thanks for the recipe!

Simple Sicilian Salad Dressing

Reviewed: Feb. 28, 2011
Simply and tasty. I enjoyed this with just some greens. The recipe has such simple ingredients, that quality becomes very important. Using really good olive oil and balsamic vinegar makes the recipe special, since there's little else besides that in the recipe. I think the oil/vinegar proportions were great, and the only thing I can think to do to improve this is add some minced garlic (but that's because I add garlic to everything that isn't dessert). Thanks for the recipe!

Sunday Morning Lemon Poppy Seed Pancakes

Reviewed: Feb. 27, 2011
lovely pancakes, light and fluffy with a lemon flavor that isn't overwhelming. Made it exactly as written and enjoyed every bite. If you're making it for a family of 4 I recommend doubling it, the original yield won't make enough. thanks for the recipe!
