Oriental Vinaigrette

I cut it down to 1 serving since I was the only one having salad, and I really enjoyed this recipe. It's not really a vinaigrette, more like honey mustard dressing with asian flavors (as other reviewers also noted). The only change I would make is to cut back on the honey a bit, b/c it was a little sweeter than I generally like. Thanks for the recipe!

Roasted Garlic Tyrokavteri

Very yummy dip, but I would recommend cutting down on the lemon juice (I used about half the written amount). This was great with toasted pita chips. Thanks for the recipe!

Quinoa with Asian Flavors

I love finding new ways to prepare quinoa, and this recipe is one that I really enjoyed. The only change I made was to use sesame oil rather than olive oil for that extra asian flavor. Some toasted peanuts or cashews would also give this dish some texture. thanks for the recipe!

Coconut Cream Pie I

Delicious and so easy to make! I'm rating it four stars because I did use two 3.4 oz boxes of coconut pudding rather than vanilla pudding to bring out that coconut flavor. Also, I toasted my coconut before sprinkling it on top. I used a store-bought shortbread crust. My family loved it, especially my little brother who went back for two more servings. Thanks for this simple and tasty recipe :)

Broccoli with Garlic Butter and Cashews

Very good and so easy to make! I do think I'll cut back on the butter next time (I am trying to get rid of these last ten pounds before I reach my goal). I did add about 1/2 tsp. of cornstarch to thicken (as other reviewers had done) and I used frozen broccoli and rice vinegar b/c I didn't have white vinegar on hand. This was great over some brown rice and it can probably be adapted to include other vegetables (carrots, some onion, bell peppers, baby corn, etc.). Thanks for sharing this recipe :)

Spicy Three Pepper Hummus

Fantastic spicy hummus with lots of garlic (which I love). I didn't have jarred jalapeno peppers so I used 1 and 1/2 fresh jalapenos. I added about 2 tbsp. water to the hummus just to get the proper consistency and I'm enjoying every bite right now, yummy!!!

Basil Tomato Soup

Easy, delicious soup for summertime. I'm a vegetarian so I used veggie broth rather than chicken broth and I didn't have whipping cream so I used milk instead. other than that I kept to the recipe and served this soup with a side salad and some warm french bread, which made for a really lovely lunch. Thanks for the recipe!

Lemony Quinoa

Very Good base recipe, I did need to add some garlic and increase the spices to make it more flavorful, and I used veggie stock rather than water and that helped with the flavor as well. Quinoa is a delicious, healthy grain and I am always looking for different ways to prepare it. Thanks for the recipe!

Beef and Bean Chimichangas

Great recipe with lots of room for adding your own spin on things. You can stick w/the beef or you can just go vegetarian and use black beans along with the refried beans. I followed as written for my first time trying the recipe out but I can see plenty of room for changes. I think other reviewers had good ideas about freezing some and using them for other meals, or even making smaller versions and serving them up at parties as an appetizer. Thanks for sharing :)

Easy Spicy Roasted Potatoes

Good potatoes, definitely easy to put together. I would recommend cutting back on the oil and salt; I found them to be a bit too salty. Also, it would be better to add the onions halfway through the cooking process, b/c (as others have mentioned) my onions got burned before the potatoes were done. Really enjoyed the flavors, just needs a few adjustments. thanks for the recipe :)

Zucchini Patties

A great idea for using zucchini, but rather bland as written. I added black pepper, garlic powder, and parsley. I also tried to drain a lot of moisture from the zucchini so the patties would form. These taste great with some marinara sauce on the side for dipping. Thanks for the recipe!

Mrs. Sigg's Snickerdoodles

I loved these snickerdoodles! I've never made this type of cookie before but I do love eating them, so I thought I should give it a shot. These are simple to do and the results are addictive. I didn't have cream of tartar (I never do) so I just used lemon juice (2 tsp. for every 1 tsp of cream of tartar) and that worked very well. The process of coating the dough in the cinnamon sugar becomes much easier (and less messy) when you just put the mix in a baggie and drop the dough balls in 1 at a time. Enjoy :)

Pistou Soup

A very nice and filling soup, it has great flavor once you add the pistou. I sauteed onions and garlic in some olive oil before adding the rest of the veggies and the broth, and I added the zucchini and beans last (as others mentioned) b/c I knew it would become too soft if I added it with the potatoes and carrots. Enjoy with some crusty french bread and parmesan over the top!

Vegetarian Open Faced Sandwich

A delicious sandwich that is also pretty filling. I left out the mushrooms b/c I don't like them and I broiled the eggplant by itself before putting it on the sandwich, but other than that I stuck with the recipe. I enjoyed this with a bowl of soup for a healthy and light dinner; perfect for summertime. Thanks for the recipe!

No-Cream Pasta Primavera

Delicious pasta primavera, perfect for enjoying spring vegetables. I ran out of balsamic vinegar so I left it out and I thought it was still really tasty. Next time I make this I'll be sure to try it with that as well. The recipe seems like its asking for a lot but it is well worth the effort of getting all those veggies. Thanks for sharing!
