Baked Basil Fries

Reviewed: Jul. 30, 2011
These are really tasty fries, and a nice taste from the frozen ones in the grocery store. i think I'll cook them longer next time to get the crispiness that i prefer in my fries. Followed the recipe exactly and they were a delicious snack. Thanks for sharing!

Teriyaki Potatoes

Reviewed: Jul. 27, 2011
A surprisingly tasty dish and so so easy to put together. I was very unsure about this so I made enough for myself to try before serving it to others later in the week. I was very pleasantly surprised! I do recommend using garlic powder rather than garlic salt, and using either teriyaki sauce or soy sauce...the recipe as written struck me as being a bit too salty so I made those changes but otherwise stuck with the recipe as written. This is a lovely and different side dish, I'd recommend it!

Farmer's Market Vegetarian Quesadillas

Reviewed: Jul. 26, 2011
A great way to use up fresh veggies sitting in the crisper. I didn't have mushrooms so I left them out but otherwise I stuck with the recipe. I really liked how the flavors in the vegetables comes through, but my boyfriend insists on much more seasoning for his food, so I'll probably add a few spices next time. Thanks for sharing this recipe!

25-Minute Tunisian Vegetable Couscous

Reviewed: Jul. 18, 2011
This is a wonderfully healthy dish; full of veggies that I love. That being said, it is rather bland for me, and I agree with other reviewers that the spices have to be doubled (at least!). I am sure this will be a five star dish once I've added more spices. Thanks for sharing a very healthy couscous recipe!

Potato and Bean Enchiladas

Reviewed: Jul. 15, 2011
A yummy, filling vegetarian recipe. I did find it to be a bit bland and a bit dry as written, so I put some of the tomatillo sauce inside with the potato/bean mix as other reviewers suggested, and I added about 1/2 jalapeno, diced. These enchiladas were enjoyed by all, thank you for sharing!

Mexican Bean Salad

Reviewed: Jul. 15, 2011
Delicious, healthy, and easily adjusted for individual tastes. I added more chili powder since I like things spicy, and left out the cilantro because I didn't have any on hand but other than that I stuck with the recipe. This made more than 8 servings for me, but I dont mind having the leftovers because I'm pretty sure it will taste even better after sitting in the fridge overnight. Thanks for sharing this recipe!

Herbed Noodles

Reviewed: Jul. 14, 2011
a great side dish, easy to adjust to individual tastes and what is in your kitchen. I didn't have chives so I had to leave them out, but I did add some garlic and parmesan cheese. I think I'll use fresh basil next time, while it's still in season. Thanks for sharing this recipe!

Our Favorite Balsamic Vinaigrette

Reviewed: Jul. 14, 2011
Really love this vinaigrette, it's got the perfect balance of flavors for my tastes. I enjoyed this over a simple garden salad of lettuce, tomatoes, red onion, and green peppers. Thanks for sharing this recipe!

Kentucky Butter Cake

Reviewed: Jul. 13, 2011
This is a very rich cake, but so so good. I didn't have a bundt pan so I used a 9 by 13 cake pan and I was very pleased with the end results. I think I can cut back on that butter sauce a bit when I make this for my family (I did love it but I try to cut back on the butter where i can), but I will be taking the suggestion of other reviewers and trying it with rum extract. Thanks for this recipe, its a keeper for sure!

Spicy Spicy Ranch Dressing

Reviewed: Jul. 10, 2011
Nice dressing, i think it would also work well as a dipping sauce. Only change I made was to use homemade ranch dressing rather than the bottled kind. Thanks for the recipe :)

Oriental Vinaigrette

Reviewed: Jul. 9, 2011
I cut it down to 1 serving since I was the only one having salad, and I really enjoyed this recipe. It's not really a vinaigrette, more like honey mustard dressing with asian flavors (as other reviewers also noted). The only change I would make is to cut back on the honey a bit, b/c it was a little sweeter than I generally like. Thanks for the recipe!

Roasted Garlic Tyrokavteri

Reviewed: Jul. 7, 2011
Very yummy dip, but I would recommend cutting down on the lemon juice (I used about half the written amount). This was great with toasted pita chips. Thanks for the recipe!

Quinoa with Asian Flavors

Reviewed: Jul. 6, 2011
I love finding new ways to prepare quinoa, and this recipe is one that I really enjoyed. The only change I made was to use sesame oil rather than olive oil for that extra asian flavor. Some toasted peanuts or cashews would also give this dish some texture. thanks for the recipe!

Coconut Cream Pie I

Reviewed: Jul. 5, 2011
Delicious and so easy to make! I'm rating it four stars because I did use two 3.4 oz boxes of coconut pudding rather than vanilla pudding to bring out that coconut flavor. Also, I toasted my coconut before sprinkling it on top. I used a store-bought shortbread crust. My family loved it, especially my little brother who went back for two more servings. Thanks for this simple and tasty recipe :)

Broccoli with Garlic Butter and Cashews

Reviewed: Jun. 30, 2011
Very good and so easy to make! I do think I'll cut back on the butter next time (I am trying to get rid of these last ten pounds before I reach my goal). I did add about 1/2 tsp. of cornstarch to thicken (as other reviewers had done) and I used frozen broccoli and rice vinegar b/c I didn't have white vinegar on hand. This was great over some brown rice and it can probably be adapted to include other vegetables (carrots, some onion, bell peppers, baby corn, etc.). Thanks for sharing this recipe :)

Spicy Three Pepper Hummus

Reviewed: Jun. 24, 2011
Fantastic spicy hummus with lots of garlic (which I love). I didn't have jarred jalapeno peppers so I used 1 and 1/2 fresh jalapenos. I added about 2 tbsp. water to the hummus just to get the proper consistency and I'm enjoying every bite right now, yummy!!!

Basil Tomato Soup

Reviewed: Jun. 21, 2011
Easy, delicious soup for summertime. I'm a vegetarian so I used veggie broth rather than chicken broth and I didn't have whipping cream so I used milk instead. other than that I kept to the recipe and served this soup with a side salad and some warm french bread, which made for a really lovely lunch. Thanks for the recipe!

Lemony Quinoa

Reviewed: Jun. 10, 2011
Very Good base recipe, I did need to add some garlic and increase the spices to make it more flavorful, and I used veggie stock rather than water and that helped with the flavor as well. Quinoa is a delicious, healthy grain and I am always looking for different ways to prepare it. Thanks for the recipe!
