Apple-Feta Tossed Salad

It's a great salad once you add some olive oil to the dressing. Without the olive oil, the dressing is, of course, terrible. I only made enough salad for myself so I used 1 tbsp. of olive oil and 1 tsp. of the vinegar. This is a great fall salad when all different varieties of apples are plentiful. Thanks for sharing!

Lentils and Rice with Fried Onions (Mujadarrah)

I tried this dish in a restaurant once and loved it, so I wanted to try making it on my own. Getting those onions nice and caramelized for this dish is so, so important. Also, I did read that this dish traditionally has cumin and cinnamon in it (as other reviewers have noted) so I added 1 tbsp. of cumin and 1 tsp. of cinnamon. I think that really helped this dish because it would have been too bland for me otherwise. I definitely recommend eating this with yogurt, that tang makes it oh so, so good. *Note*: if you want to eat this with brown rice, I'd recommend make your brown rice separate from the lentils and then mix it all up in your plate. I'm so happy I finally found a recipe for Mujadarrah. Thanks for sharing!

Brazilian Black Bean Stew

This was a very tasty and filling stew, but as written it is a bit bland. I am a vegetarian so I left out the meat. I had some veggie broth I needed to use up so I used that instead of water. Adding 3/4 tsp. of cumin to this dish really turns it into a 5 star recipe. I love how easy this is to put together and the fact that I can serve this on its own with a small side salad for a healthy lunch. Thanks for sharing!

Cinnamon Griddle Cakes

This recipe makes for fluffy, sweet pancakes that really do taste like cinnamon rolls. I did leave out the corn syrup (I never keep it in the house) and I used splenda rather than white sugar. I also cut the amount of butter down to 1/8th cup. The pancakes themselves came out beautifully. I was about to make the topping when I realized I had no confectioners' sugar (oops!) so I just used maple syrup instead...it was still a fantastic breakfast. Now I just have to remember to keep the confectioners' sugar around, because i can tell these will be requested often in my home. Thanks for sharing!

Lazy Dazy Cake I

Overall a very good cake, and easy to put together. I noticed a reviewer mentioned eggy-ness so I cut back to three eggs (can't stand eggy-ness) and after tasting the batter I added 1/2 tsp. of vanilla extract for more flavor. I agree with others that the baking time is wayyy off; mine was done in 20 minutes. The cake itself is nice and spongy; nothing too dense. but that topping....Oh WOW that topping is amazing for this cake. I would absolutely make this again, but with the changes I mentioned above. Thanks for sharing!

Black Bean Hummus

excellent recipe! I eat a lot of hummus and normally I make the traditional garbanzo bean kind. I wanted to try this one out because my little brother is allergic to garbanzo beans and I wanted him to be able to enjoy the wraps I was making for lunch. The only change I made to the recipe was to leave out the liquid from the canned beans (never liked it) and use about 1/2 tbsp. of olive oil instead. I love the flavor of this hummus and my brother has been dipping pita bread into it all day :) Thanks for sharing this recipe!

Gujarati Carrot and Peanut Salad

Love this salad! Reminds me of a salad my aunt used to make for big family dinners. I did leave out the sugar, but other than that I followed the recipe. This one brought back some great memories of home. Thanks for sharing!

Parmesan Garlic Bread

A nice, quick bread for those evenings when you're in a rush to get dinner on the table. I would omit the garlic salt and use all garlic powder, and I wouldn't bother melting the butter either, as other reviewers have mentioned. I do love the addition of herbs to this garlic bread; I thought the thyme was especially good in this recipe. Thanks for sharing!

Brooklyn Girl's Penne Arrabiata

I'm giving this five stars for a fantastic sauce that is easy to make. I'm vegetarian so I left out the chicken and didn't think it would be fair to rate that part of the dish, obviously. This sauce is really delicious; it's spicy but not overwhelming...you mouth gets to enjoy all the flavors rather than just the heat. I could easily serve this to guests for a small dinner party. Makeover Creamy French Dressing

Butternut Squash Soup II

This is a great base recipe, but as written I did find it to be a bit bland. I added 1/2 tsp. cinnamon and 1/2 tsp. nutmeg and that really helped. I wanted to take the suggestion of topping the soup off with a dollop of sour cream, but I didn't have any so i tried substituting plain greek yogurt that I had laying around in the fridge. That worked wonderfully as well. Truly a fantastic soup for a cold fall afternoon. Thanks for sharing this recipe, Maplebird!

Jalapeno Popper Pizza

I really loved this!!! I left out the bacon (i'm a vegetarian) and I left out the crumb topping (didn't have any bread crumbs), but other than that I stuck to the recipe. This would make a great snack for a small get-together. Thanks so much for the recipe!

Yogurt-Herb Salad Dressing

Great dressing, and so healthy since it doesn't have oil! The only change I made was to use balsamic vinegar rather than cider vinegar simply because it was all I had available. I dont know how much that changed the flavors of the dressing but I still really enjoyed it. I've been looking for healthier dressings with a yogurt base rather than an oil base and this is a great option. Thanks for sharing!

Quinoa Side Dish

A nice, healthy side dish that doesn't compete with the other flavors in your meal. I did saute the onion and garlic in the butter for a few minutes before adding the quinoa and broth, but other than that I stuck to the recipe. I'm always looking for new ways to use quinoa because I use it as a protein source so often (I'm a vegetarian), so this recipe is a real gem for me. Thanks for sharing!

Downeast Maine Pumpkin Bread

Incredible! I cannot believe I waited so long to try this out. The only changes I made were: 1) used 1/2 cup oil & 1/2 cup unsweetened applesauce, 2) baked in 2 9x5 loaf pans. It did take a little over an hour to cook thoroughly in my oven, not the 50 minutes stated in the recipe; but not every oven is the same so that's not such a big deal. I really love how moist the bread is and the combination of spices. This is going to be a part of my Christmas baking for sure. Thank you for sharing your recipe, Laurie!

Big-Batch Butterscotch Cookies

A good base recipe, but adding butterscotch chips and a little salt makes it a five star recipe. I scaled the amount down from 120 to 40, so I added about 1/4 tsp. of salt and 1 cup butterscotch chips. They took about 11 minutes to bake up in my oven and everybody was pleased with them. Double Decker Tacos

Delicious recipe and it was fun to make. I made a vegetarian version of this by using veg. refried beans (spread on the soft tortilla) and black beans I had cooked up with some onion, green pepper, and jalapeno were used as the filling for the crisp taco shells The tacos stayed together nicely and I just chopped up the veggies and let everybody put whatever combination of lettuce, tomato, onion, cheese and sour cream they enjoy. Thanks for sharing this recipe!
