Brooklyn Girl's Penne Arrabiata

I'm giving this five stars for a fantastic sauce that is easy to make. I'm vegetarian so I left out the chicken and didn't think it would be fair to rate that part of the dish, obviously. This sauce is really delicious; it's spicy but not overwhelming...you mouth gets to enjoy all the flavors rather than just the heat. I could easily serve this to guests for a small dinner party. Thanks for sharing, Beth!

Makeover Creamy French Dressing

Good stuff, love that it's healthier than most french dressings. Didn't change a thing but next time I think I will leave out the cornstarch and water; it didn't seem to make much of a difference. Thanks for sharing :)

Butternut Squash Soup II

This is a great base recipe, but as written I did find it to be a bit bland. I added 1/2 tsp. cinnamon and 1/2 tsp. nutmeg and that really helped. I wanted to take the suggestion of topping the soup off with a dollop of sour cream, but I didn't have any so i tried substituting plain greek yogurt that I had laying around in the fridge. That worked wonderfully as well. Truly a fantastic soup for a cold fall afternoon. Thanks for sharing this recipe, Maplebird!

Jalapeno Popper Pizza

I really loved this!!! I left out the bacon (i'm a vegetarian) and I left out the crumb topping (didn't have any bread crumbs), but other than that I stuck to the recipe. This would make a great snack for a small get-together. Thanks so much for the recipe!

Yogurt-Herb Salad Dressing

Great dressing, and so healthy since it doesn't have oil! The only change I made was to use balsamic vinegar rather than cider vinegar simply because it was all I had available. I dont know how much that changed the flavors of the dressing but I still really enjoyed it. I've been looking for healthier dressings with a yogurt base rather than an oil base and this is a great option. Thanks for sharing!

Quinoa Side Dish

A nice, healthy side dish that doesn't compete with the other flavors in your meal. I did saute the onion and garlic in the butter for a few minutes before adding the quinoa and broth, but other than that I stuck to the recipe. I'm always looking for new ways to use quinoa because I use it as a protein source so often (I'm a vegetarian), so this recipe is a real gem for me. Thanks for sharing!

Downeast Maine Pumpkin Bread

Incredible! I cannot believe I waited so long to try this out. The only changes I made were: 1) used 1/2 cup oil & 1/2 cup unsweetened applesauce, 2) baked in 2 9x5 loaf pans. It did take a little over an hour to cook thoroughly in my oven, not the 50 minutes stated in the recipe; but not every oven is the same so that's not such a big deal. I really love how moist the bread is and the combination of spices. This is going to be a part of my Christmas baking for sure. Thank you for sharing your recipe, Laurie!

Big-Batch Butterscotch Cookies

A good base recipe, but adding butterscotch chips and a little salt makes it a five star recipe. I scaled the amount down from 120 to 40, so I added about 1/4 tsp. of salt and 1 cup butterscotch chips. They took about 11 minutes to bake up in my oven and everybody was pleased with them. Lentil Soup with Lemon

Fantastic soup, only change I made was using veggie broth rather than chicken broth (I'm a vegetarian). The flavors came together nicely and it was a filling lunch for a chilly sunday afternoon. Thanks for sharing!

Double Decker Tacos

Delicious recipe and it was fun to make. I made a vegetarian version of this by using veg. refried beans (spread on the soft tortilla) and black beans I had cooked up with some onion, green pepper, and jalapeno were used as the filling for the crisp taco shells The tacos stayed together nicely and I just chopped up the veggies and let everybody put whatever combination of lettuce, tomato, onion, cheese and sour cream they enjoy. Sun-Dried Tomato and Bow Tie Pasta

A really great, easy pasta dish. I didn't have bow tie pasta so I just used rotini, and pine nuts are a bit expensive for my budget so I had to leave them out. Nonetheless, it think the pasta turned out really well and was a tasty weekend lunch. Thanks for sharing :)

Tina's Greek Stuffed Peppers

I really enjoyed this different take on stuffed peppers. I left out the lamb b/c I'm vegetarian, but I figure I can still rate the recipe on preparation and overall flavor. I enjoyed the filling but the recipe does make a lot of it (not really a problem I'll just have that on it's own tomorrow). I had this with some herbed feta i had laying around and the flavors went together beautifully. I roasted the peppers at 350 and left them in the oven for a bit b/c I like my peppers nice and soft. Overall, a really filling and flavorful meal, even without the meat. Thanks for sharing, Tina!

Garlicky Quinoa and Garbanzo Bean Salad

so yummy! The only change I made was to cut the amount of olive oil in half (as other reviewers had done) and I dont think that modification took anything away from the flavor in the dish. healthy and easy, quick to put together for a light lunch. Thanks for sharing this recipe!

Greek Orzo Salad

yum yum yum! The only change I made to the recipe was to leave out the olives and put in some garbanzo beans instead (trying to make it bit more filling). This has a really nice flavor to it and I think it would go well with lots of dishes. Thanks for the recipe!

Greek Style Potatoes

This is a very yummy side dish, but I did have to adjust the cooking method to get the dish cooked in time for dinner. Rather than cook the potatoes in the oven the whole time I boiled them until about 1/2 done and then continued with the rest of the recipe (but of course left out the water). I really enjoyed the end result, but next time I'll add a bit more lemon (personal preference). Thanks for the recipe!

Oatmeal Carmelitas

These are absolutely decadent and so easy to put together. The only thing I did differently was to leave out the walnuts b/c I didn't have them in the pantry. my bars came out of the pan just fine and they were easy to cut after about an hour of cooling time. Thanks for sharing this recipe, I know I'll be making these a lot!
