Creamy Thyme Spread

Great dip with crackers and veggies. The longer it sits the better it tastes so I would make it ahead of time and let it sit in the fridge overnight before serving to get the best flavor out of it.

Balela Salad

Absolutely delicious! Don't change a thing and remember that this just isn't a salad where you can substitute canned tomatoes or dried herbs and get the same flavor, fresh is the only way to go here on the veggies and herbs. Thanks for sharing this one!

Bowties and Broccoli

A basic recipe that you can build up to your tastes by adding spices and herbs. Kids really enjoy this recipe but for adults, I'd add some crushed red pepper and even some basil. This is a tasty (and cheap) lunch for the family. Thanks for sharing!

Award Winning Peaches and Cream Pie

This makes for a delicious pie, but some tweaking is needed in the execution. I followed the recipe as written and my only problem with the pie was the crust being soggy. Pre-baking the crust would obviously resolve that problem, I just wanted to rate this recipe as written first. I'll make it again for sure, it was a big hit in my house! thanks for sharing :)

Spinach Triangles

As written, the filling is rather bland so I'm rating it 3 stars. Add some nutmeg and garlic to take things up a notch. This does make a lot of filling but that's okay because the filling goes great over some pita or other flatbread for individual spinach pizzas! Overall a decent recipe, just needs more flavor.

Spring Delight Salad

Great salad, easily adaptable to what you have on hand and your own personal preferences. I like a good bite to my salad so I added red onion and I don't like mushrooms so I omitted them, but otherwise kept it as written. Good stuff, thanks for sharing!

Creamy Lemon Dressing

This is quite tasty as written, but becomes five stars if you add a touch of honey (that helps with the acidity coming from the lemon). I didn't have sour cream so I used plain yogurt, which worked fine (I'm sure sour cream would also have been tasty). Nice dressing for a variety of salads. Thanks for sharing!

Spicy African Yam Soup

I'd give this 5 stars for taste but three stars for appearance, so I've averaged it out to 4 stars. I would definitely make it again but I would puree the sweet potatoes, onion, garlic, salsa, and zucchini. Then, I would add the garbanzo beans (you could even dry roast them with some cayenne pepper for additional flavor) and leave out the rice entirely. As written, this comes out more as a stew than a soup (delicious stew, but still). Initially this combo of flavors doesn't look very good but it really does taste fantastic. All you really have to do to make it vegetarian is use veggie broth.

Spanish Rice II

This is a very good recipe for spanish rice, my only recommendation is to add some fresh garlic and some cumin. Great side dish, just needs a bit more spice to make it five stars (just my opinion). Thank you for sharing your recipe!

Lime-Cilantro Vinaigrette

Very tasty dressing and you can use it with a variety of dishes. Add some avocado to make it extra creamy and good enough to use as a dip. I would cut back a bit on the sugar next time, but this is still a great recipe. Thank you for sharing!

Tropical Paradise Pancakes

The pancakes are nice and a good change from your typical pancakes, but I did feel that changes are needed. The OJ taste overpowers the other flavors, so I would dilute the OJ (1/2 OJ and 1/2 water as another reviewer suggested). Also, I didn't get much coconut flavor and I added the full 1/4 cup as called for--maybe I'll try using sweetened coconut flakes or coconut extract next time as I was really hoping to get nice coconut flavor. As written, three stars is appropriate but the above changes would certainly put these pancakes into my family's rotation of weekend treats. Thanks for sharing your recipe!

Red Bean Salad with Feta and Peppers

Healthy Coconut Oatmeal

This is great for breakfast, but it is a bit too sweet to be healthy. I used unsweetened coconut flakes and omitted the raisins to cut back on the sweetness. Walnuts are a tasty addition and provide crunchiness. I am sure this is just delicious as written but if you are trying to cut back on sugar and watch your calorie intake the above changes should be helpful. Thanks for sharing your recipe!

Saffron Mash Potatoes

Delicious recipe! I used veggie stock rather than chicken stock but other than that I didn't make changes to the ingredients. To get really get all the flavor out of your saffron (for this many other recipes that call for both saffron and milk), I recommend dry roasting it for a few minutes in a pan and then crushing it with mortar and pestle. Add the milk to that bowl and mix until all the saffron is incorporated and the milk turns to that gorgeous golden yellow. Then, add that milk to your potatoes. This is a great twist on your usual mashed potatoes, next time I'll even try it with sweet potatoes. Thanks for sharing!

Whipped Cream Cake II

This is a fantastic tasting, light cake. You can frost this with creamy chocolate frosting (from this site) as I did or you can fill it with fruit and frost it with a basic vanilla buttercream. Baked to perfection in my oven in 25 minutes. Thanks for sharing this recipe!

Creamy Chocolate Frosting

Great chocolate frosting!. Definitely creamy and chocolatey without being overpowering. I paired this with Whipped Cream Cake II and it was a hit! The only change I made was to use heavy cream rather than evaporated milk (didn't want to open one just for this frosting as I normally don't use it). Add that milk/cream gradually as you may need more or less depending on your needs/tastes. Thanks for sharing!

Green Chili Grilled Cheese

Excellent twist to traditional grilled cheese! I recommend using sourdough bread. If you really want to heat things up, use 1/2 monterey jack, 1/2 cheddar cheese.

Waffles I

This is a great recipe and I will definitely use it again. I love how easy it is to put together, but I would increase the amount of vanilla and maybe add some cinnamon next time. I may try to cut back a bit on the oil to see how it turns out as well, just so it is a bit healthier. This is, however, a great waffle recipe just as written. Thanks for sharing!
