Vegan Red Lentil Soup

Reviewed: Jun. 13, 2014
Great soup, all the flavors come together nicely. Might increase the fenugreek seeds next time to bring out more flavor or use the powder. A nice soup to experiment with, as others have mentioned, but also delicious just as written. Will definitely make again. Thanks!

Chewy Coconut Cookies

Reviewed: Dec. 21, 2013
I like how easy this recipe is but I did find it lacking in coconut flavor. I do think swapping coconut extract for the vanilla would help and toasting the coconut would help as well. I will make them again and see how they taste with those changes. I did find that putting the dough in the fridge helped prevent flatness and spreading. Overall a very good recipe that my coconut loving mother enjoyed, but it does need a little 'oomph' to take it to five stars. Thank you for sharing your recipe!

Cream Cheese Dessert Wedges

Reviewed: Dec. 8, 2013
Followed the recipe exactly but could not get the filling to set. I had to throw it out but I'm pretty sure its something that I did, and not something wrong with the recipe. I'm an experienced baker and, while I love making recipes from scratch, I really appreciate the ease of quick recipes like this one and I'm disappointed that it didn't turn out for me. The flavor was great, though. If it had turned out for me I know it would have been a big hit.

Peanut Butter Banana Quesadilla

Reviewed: Nov. 9, 2013
A classic combination of flavors served quesadilla style. I enjoyed this very much; the only thing I would suggest is to cut back on the peanut butter a bit; I think it was just too much for one tortilla (especially because it gets gooey as the quesadilla heats up). Nonetheless, I loved every bite. Thanks for sharing!

Three Sisters Soup

Reviewed: Nov. 8, 2013
I thought this nice and comforting; a lovely fall soup. I can see where it would benefit from the addition of spices (and I love using all sorts of spices) but I enjoyed it without any additions other than increasing the black pepper. Thanks for sharing!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Reviewed: Oct. 19, 2013
A wonderfully filling and healthy fall soup with a lovely mix of flavors. I recommend leaving the veggies, apple, and lentils as is and skipping the pureeing part. That makes it more like a stew than a soup but the texture is much better. Thanks for sharing, will definitely be making it again!

Porotos Granados (Chilean Bean Stew)

Reviewed: Sep. 21, 2013
Very tasty and filling; used northern beans only (didn't have lima beans on hand). Make sure to use plenty of basil and sprinkle some of the chopped pepper on top of your bowl if you like a bit of extra kick. Thanks for sharing!

Mediterranean Linguine with Basil and Tomatoes

Reviewed: Sep. 15, 2013
A lovely and super simple pasta dinner. The fact that this dish uses so few ingredients and the preparation is so simple means that all of the ingredients should be good quality and fresh. I like the addition of vinegar but I would cut back a bit on the oil to make it 5 star-worthy. This was a great way to use up some of the basil and tomatoes in my garden. Thanks for sharing!

Quinoa Almond Pilaf

Reviewed: Aug. 18, 2013
Lovely lunch dish, you can increase the flavor by using broth to cook the quinoa instead of water. I made enough for three servings and after having it the first day added some lemon juice to complement the thyme. A good recipe to add/subtract ingredients based on what you have on hand, but it is also very tasty just as written. Thanks for sharing!

Blueberry Flax Pancakes

Reviewed: Aug. 13, 2013
Very nice pancakes, just be sure to keep adding milk until you get the right consistency because the flax tends to readily suck up the liquid. A healthier version of pancakes that would work well with other berries; perfect for summertime. Thanks for sharing!

Spicy Avocado Sauce

Reviewed: Aug. 11, 2013
Very good, I had this as a dip with chips first and then added some lime juice and 1/2 extra avocado to make as a dressing for a bean salad. Went over very well with the family and I've no doubt will be a tasty taco topping. Thanks for sharing!

Chickpea and Quinoa Salad with Lemon and Tahini

Reviewed: Aug. 11, 2013
Tasty and filling; perfect for a healthy lunch. I would cut back on the tahini just a touch (I love the stuff but I felt the flavor was too prominent and I would like some more lemon to come through next time) and I will add some tomatoes and cucumber from my garden for a burst of color. Definitely will make again, thanks for sharing!

Peach Muffins

Reviewed: Aug. 3, 2013
I'd give this five stars for flavor, but these muffins didn't rise very nicely for me. Not sure why as I followed the directions precisely, but they just stayed flat. I'll keep tinkering with it to get the pretty, domed tops. The flavor was great, though. An excellent use for summertime peaches. Thanks for sharing!

Cream Cheesy Cubed Zucchini with Lemon and Oregano

Reviewed: Jul. 28, 2013
Very nice side dish, I would make it again but I would use about 1/2 the amount of olive oil (it was too much for me) and I would increas the lemon and add garlic. A good way to get my husband to eat some of the zucchini in my garden! Thanks for sharing :)

Orange Cake

Reviewed: Jul. 27, 2013
This is five star-worthy if you use vanilla pudding (lemon totally alters the flavor and makes it a lemon cake) and add orange extract AND orange zest. I also found that making a glaze of orange juice and powdered sugar worked better than the orange syrup called for here. A great idea and I will make it again, but with the above-mentioned changes.

Grands!® Biscuit Taco Cups

Reviewed: Jul. 20, 2013
A nice idea, but I don't think the taco filling quite fits. I tried it the first time as written (except I left out the beef and used black beans since I'm a vegetarian). It as alright in terms of flavor but since I loved the biscuit cup idea I tried it again with chili and that was better. I think kids would really enjoy the novelty of this, also.

Pleasantly surprised with how well the cumin worked in this dish. Easy and fast, would certainly make again as a side dish or pair it with a salad for lunch. Thanks for sharing!

Raspberry Pain au Chocolat (Raspberry Chocolate Croissants)

Reviewed: Jun. 6, 2013
AWESOME taste and super easy to make! The ingredient proportions were fine by me, The prep method is made a lot easier if you just cut the puff pastry sheets into thirds, spread the nutella and raspberry, fold over, seal the edges with a fork, and cut three slits to vent. Just be sure not to overstuff with filling or it will all come out and be messy (you don't need as much as you think). Thanks for sharing this recipe, it was big hit with my family!

Hot Jam Breakfast Sandwiches

Reviewed: May 23, 2013
Lovely combination of flavors and could also be used as a brunch option or even a dessert/sweet snack. The jam/cinnamon/butter/coconut mix could also just be used as a spread. Thanks for sharing your recipe :)
