This is very good. It makes a HUGE bowl... a lot more than shown in the pic, at least 10 servings. I added the zest and juice of one lime, and made sure to add enough cilantro that you got some in each bite!

Oven Roasted Potatoes

I can't wait to try this. I just saw a recipe similar to this on Sandra Lee, but she used a combination of sweet potatoes, red potatoes, and Yukons, all cut in the same size, so that there would be good variety of color.

Mandarin Almond Salad

I used slivered almonds, and toasted them under the broiler until they were fragrant, which gave them a ton of flavor with no added calories or sugar. I did this while putting the salad together, then with the dressing, substituted agave nectar for the sugar. I also added an extra tablespoon of red wine vinegar and a 1/4 cup of gluten-free soy sauce. Great!

Personal Portobello Pizza

Make sure to remove the gills of fresh mushrooms before cooking. Added Parmesan cheese, and cooked for about 15 minutes--until the cheese came out with the golden spots (just like a real pizza). Don't use too much cheese or sauce or it will overflow while cooking. However, the sauce marinates the mushroom while cooking and it comes out with a delicious flavor!

Marinated Grilled Shrimp

Made this exactly as the original recipe suggested--but substituted ketchup for the tomato sauce and 1 1 and 1/2 tablespoons dried basil for the two tablespoons of fresh basil. I didn't even marinate at all, just put the shrimp, with marinade on the stovetop griddle and cooked for about 4 minutes first side, 3 minutes second side. The marinade was AMAZING! I have done this in saute pot before too and the sauce was so good it could have easily been used as a soup base or pasta sauce. My boyfriend said "Wow" (nodding his head) "Remember this one!" It wasn't too flavorful, but he liked how it didn't mask the shrimp flavor. I served this with Italian Kale.

Sushi-Inspired Tuna Salad
