About this Cook
A casual cook - no formal training or even much informal training from parents or other relatives. I enjoy creating and like to be casual about ingredients, adding more or less or changing around depending on what I'm doing. I do most of the meal preparation at home. Would love to be more creative, but unfortunately don't have much time for that. I love fresh ingredients and try to incorporate as much fresh produce as possible.
My favorite things to cook
I love to grill - anything really but especially steaks, chicken, and sausage. I also really like to cook Italian - my family's favorites are Pasta Carbonara and Eggplant Parmesian.
My cooking tragedies
Sometimes things just don't work out. Every so often I'll try a new recipe that just bombs - even I won't eat it!! A few times I've tried something mildly spicy that I and even my wife like but the kids hate.

Apple Cole Slaw
Great recipe! Made it the first time to bring to a BBQ as a side dish; everyone raved about it which was surprising as the BBQ was great too. The dressing, which is so simple and doesn't sound good, nicely sets off the flavors and doesn't overpower. Definitely a winner!

Penne con Sauccia
Very fast and easy, and a big hit with my wife and both kids (6 and 11)! My younger is dairy-allergic, and this is a good recipe for that because you can just add the parmesian cheese at the table to each person's own portion. I ommited the pepper flakes, since the sausage and the premade sauce provided some spice and the kids don't like spicy food.
