Gingerbread Biscotti

Reviewed: Dec. 3, 2007
This recipe is perfect, just the way it is written. I bake lots of biscotti and have tried several recipes. I use oil in some of them with great results. This one is no exception. I decorated the biscotti with white chocolate laced with lemon flavoring. I may try a batch adding toasted almonds. Outstanding!

Irresistible Pecan Pie

Reviewed: Nov. 22, 2007
Irresistible is a perfect name for this pecan pie. Rich, and sweet with a lovely golden color. I used my own pie crust recipe. Be sure to have your eggs at room temperature and use the best ingredients. You'll be delighted with the results. Don't forget the ice cream or whipped cream!

Cranberry Gelatin Salad

Beautiful color and all the flavor expected in a Jello-based salad. This was easy to prepare and tasty. I left the nuts out but they would add some nice texture.

Sweet Potato Casserole II

Reviewed: Nov. 22, 2007
I used canned sweet potatoes in order to same some prep time for this casserole. I blended the ingredients with a fork which left the potatoes "chunky". Everyone enjoyed this addition to my Thanksgiving menu.

Green Bean Artichoke Casserole

Reviewed: Nov. 22, 2007
If you're looking for a twist on the old-time favorite green bean casserole...give this one a try. I followed the recipe except I used frozen French-cut green beans (I'm just not a fan of canned vegetables). This vegie casserole has a rich combination of flavors. It could over power some entrees.

If you're after a chocolately pie, this one fits the bill. I used about 1/2 cup of butter which was plenty. Be sure you bring the eggs to room temperature prior to making this. This is a special treat with vanilla ice cream. You're going to love this one!

D'Amaretti Biscotti

Reviewed: Nov. 7, 2007
This is such a wonderful biscotti recipe. I have used it to make several variations by substituting other flavors: orange zest with almonds and dried cranberries or dried cherries. Mini chocolate chips are also a wonderful addition. Everyone loves these when served with coffee or tea. Delight your co-workers!

Ham and Pineapple Pinwheels

Reviewed: Oct. 27, 2007
The whipped pineapple cream cheese was not available at our local grocery. I substituted regular whipped cream cheese mixed with the well-drained crushed pineapple. I used Virginia ham and refrigerated the tortilla rolls overnight before slicing them. I took them to BUNCO night where they were a big hit.

Dutch Apple Pie

Reviewed: Oct. 21, 2007
I made this pie using a bottom crust. I can't imagine apple pie without cinnamon so I added that to the topping. I used Jonagold apples. It baked up beautifully and was wonderful served with vanilla ice cream.

Pumpkin Zucchini Bread

Reviewed: Oct. 21, 2007
You just can't beat the combination of fall flavors in this wonderful easy to make quick bread. It has a dense texture similar to a pound cake. I added chopped walnuts and dried cranberries for some extra texture. The recipe made two nicely sized loaves. Follow the recipes and you won't be disappointed.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Oct. 21, 2007
I used skinless boneless chicken breasts which I browned in a little olive oil prior to placing them in the slow cooker with the other ingredients. I opted to use commercially made tortilla chips rather than taking time to make my own. We topped the soup with grated Cheddar, sour cream and passed the salsa. This is a wonderful soup for a cool autumn evening. Spicy and yummy.

Blueberry Pumpkin Muffins

Reviewed: Oct. 20, 2007
I followed this recipe to the letter using thawed frozen blueberries and canned pumpkin. I baked only 8 muffins based upon the volume of batter. I could have made a dozen, but I prefer larger muffins. These turned out very well and were quick to make. I think you will be pleased too.

Orange Pumpkin Loaf

Reviewed: Oct. 14, 2007
Imagine all the wonderful fragrances of the holidays: pumpkin, orange and spices. That's what this orange pumpkin loaf bakes up to be. I was a little skeptical about using and entire oranges, but the results are fantastic. I prefer dried cranberries to raisins so that's what I used. Otherwise, I made no changes to the recipe as written and suggest that you follow it as well. You won't be disappointed.

Green Tomato Raspberry Jam

Reviewed: Oct. 7, 2007
This was my first attempt at mock raspberry jam. I followed the recipe exactly using my Cuisinart to chop up the tomatoes. I filled six pint-sized jars. My family likes it pretty well and it is a reasonable substitute for real fruit jam. And, a fun way to use up all my green tomatoes.

Apple and Onion Beef Pot Roast

Reviewed: Oct. 7, 2007
So easy and so good. I browned the roast in a bit of olive oil before placing it in the slow cooker. I used two Granny Smith apples and skipped the gravy making. The au jus from the roast was good ladled over all. Pot roast just doesn't get any easier - or tastier.

Green Tomato Relish

Reviewed: Oct. 7, 2007
My mom made this relish every fall to use up all those green tomatoes! It was a family favorite. Mom died before she could pass along the recipe. How delighted I was to find it on Allrecipes. I reduced the sugar to 3 cups and canned in 12 oz. jam jars. Thanks, Linda, for sharing this recipe. It's a delicious walk down Memory Lane.
