Baked Omelet

My husband and I love this. I adjusted it for 2 and baked it in a small loaf pan. Perfect. I had some evaporated milk that was about to expire so used that in place of the milk. This will be a regular breakfast for us.

Savory Beef Stew

My husbank and I did not like this stew. It was cold and snowy today so I thought stew sounded good. I had everything for this recipe except the peas. Next time I will stick to a traditional stew that includes tomatoes. We just didn't like the flavor or texture - too mushy.

Hungry Man's Baked Chicken

I will not make this again. The taste was just ok but the appearance was not at all appealing. I cut the s/p to 1 tsp each. After 40 min at 390 degrees, the chicken was still very red. Same thing after another 20 min. I turned the heat to 425 and baked another 30 minutes. My husband said he would not want it again and he loves chicken.

Hawaiian Fruit Crumble

Very good, fast and easy. I looked for a way to use up leftover cranberry sauce and since I had everything needed for this recipe, decided to try it. Wow. I will make it even when I don't have leftover cranberry sauce.

Cottage Dill Bread

I tried this for a dinner party and everyone loved it. It was perfect with the marinated chicken breasts and veggies. I used a combination of dill weed and dill seeds. Of course, I used 1 1/2 teaspoons (not Tablespoons) of yeast.

Apple Stuffed Chicken Breast

After reading the reviews, I made this with some minor changes and it was very good. I used parmesan cheese instead of cheddar; added cinnamon and brown sugar and raisins; added a dash of ground red pepper (really added some pop); added dashes of several other spices - sage, garlic powder, etc. Then to keep the stuffing from falling out of the ends, I wrapped each breast with a strip of bacon. I used juice (blueberry/pomegranate) instead of wine. My husband really like this recipe and it is an attractive dish so it would be very nice for company. We will definitely have this again.

Orange Biscotti

These are very good. I used orange juice in place of the liqueur and added a tsp of orange extract. I doubled the recipe. I reserved some of the almonds to sprinkle on the top of the loaves before baking. Next time I will cut back on the cinnamon to about half - personal preference. I formed the dough on the cookie sheet which was covered by foil - much easier to handle.

Anise Biscotti

Sooo good! My first try at making biscotti and it is easy and delicious. I didn't want to vary from the recipe but didn't have brandy so used Peach Schnapps - no problem. I used a serrated bread knife that worked well - no broken cookies. I have already decided that these will be in my holiday baking for gifts list.
