Power Drink ***THE ORANGE***

I was looking for a smoothie that would hide the carrots for my 3 young kids. This was perfect, and I didn't even have all the ingredients on hand. I made this smoothie without the flax, dates, lemon or salt, but it was so delicious!

Sesame Shrimp Stir-Fry

Absolutely fabulous! We used canola oil and ground ginger, even ground garlic. We added broccoli and used green peppers instead of red. Other than looking a little monochromatic, it was perfect. My young kids devoured it! Thanks for such a great recipe.

Homemade Marshmallow Creme

I made this to add to fudge, and it worked wonderfully! The texture was wonderful and the taste was so similar to the jarred stuff. I followed another review and added less vanilla, but thought it was too strong of a powdered sugar taste without the full measure of vanilla. I also beat it for about 7 minutes before adding the powdered sugar, and it was perfect! Thank you for a great recipe! I would use it in a heartbeat again.

Shrimp Provencal

I've never tried any version of shrimp Provençal, so it's possible that I don't know what to expect of such a dish, but I wasn't pleased. It tasted more like a puree of veggies to me, though I didn't use white wine, and didn't have tomato paste (I substituted with tomato sauce). Obviously I'm no gourmet chef, or this would've been better. Just don't think I'll try again.

So delicious. I used pork cut for stew meat, and it was exceptional! I think I could make sweet and sour pork with a different sauce, same method. Thanks!

Strawberry Lemon Muffins

These were phenomenal! We loved the moistness, lemony flavor, with strawberry chunks. I did substitute 3/4 C of the white flour with quick oats, and added a TBS of flax, just to up the fiber factor. My kids had no idea. I think these would be great for breakfast, in fact, they're almost like eating a dessert! I disagree with other comments about them being too dense - they were chewy and light!

Snow Pudding

SO delightful! We loved this, and froze the bowl in the freezer for about 10 min. before hand, so that our snow pudding would stay thick like ice cream. We loved it so much that we made it several times in the winter.

BBQ Pork for Sandwiches

This recipe is great, but I had a bit of a disaster with it, as I bought 3 lbs. of ribs with the bone in. By the time it comes to adding the bbq sauce, they're super juicy, and the bbq sauce doesn't stick at all to the meat, which you have to eat off the bone or spend too long cutting it off. Not the same. Be sure to use BONELESS ribs, so that the meat can shred like it should, and not be so juicy that all the flavorful drippings slide right off!

Kind of confusing directions but so worth it! Just use a large glass pan, and you'll be set. The Jell-o sets up quickly that way, and you can save a bit of time.

Ranch Chicken Tacos

This was a speedy, wonderful meal. We used flour tortillas that you bake yourself, and it was that much better. I loved the sauce. My kiddos and MIL didn't like it, but they also don't ever eat Salsa (even the 1 TBSP) .
