French Toast I

Hubby and I enjoyed this, especially the spices. I think my only issue was that I used cheap white bread, which didn't hold up as well as thicker bread would have.

Lemon Orzo Primavera

I added more garlic and dried ground thyme. I also used chicken broth and left the lid on the pot. I added about 1/2 cup of water, and my boyfriend and I both enjoyed it.

Breaded Chicken Limone

My boyfriend LOVED this. It is unlike anything we've tasted, and the flavors just melded perfectly. I used half the butter and just used more olive oil in the beginning, and a dash of garlic salt at the end. Seriously delicious.

Carrot Cake III

My boyfriend is a huge fan of carrot cake, so this was my first attempt making one for him. Only put 1.5 cups confectioner's sugar in which produced a fluffier, more cream cheese-flavored icing which he loved. "It was delicious," he said. "It blew me away."

Grilled Lemon-Pepper Zucchini

This was not as yummy as I had hoped. I did it in the oven as I don't have a grill. 350 for 30 minutes. Garlic salt helped, but it was still rather underwhelming.

Braised Balsamic Chicken

This was absolutely delicious! I don't know why someone would make a balsamic dish if they don't like balsamic vinegar, but I am a fan of that kind of vinegar and I thought it was extra-tasty with the tomatoes. I have used both fresh and canned, and it always comes out perfectly with lots of flavors. I have left out the onion on occasion with no decrease in the yumminess. The seasonings are awesome, too. I love that this is an easy chicken dish with so few ingredients! It has become a regular dish in our house for nights when I want something quick, easy, and healthy.

Tomatatoes

My boyfriend and I really liked these; the tomatillos added a bit of a kick. I pureed them as another reviewer suggested before adding them to the potatoes. There were still skins, but we eat mashed potatoes with the potato skins anyway, so it wasn't a big deal. Make sure you know what tomatillos taste like before trying this recipe, because they are sour to begin with.

Baked Orange Roughy Italian-Style

As a beginning cook, this was easy, yummy, and made it seem like I've been cooking for years! I used only Parmesan, substituted olive oil for butter, and made my own Italian breadcrumb mix with regular breadcrumbs and Italian seasonings. Scrumptious!

Unbelievable Chicken

Amazing Brown Rice Salad

Very, very good! I used pearl onions instead of red onions since I'm not a big onion fan, and I used chopped pecans instead of celery. The cranberries and balsamic were an oddly good combination. I made it for a pot luck at work and got a thumbs up!
