Three Egg Omelet

This was super yummy! I cooked the onion and meat in a bit of butter, also adding diced turkey sausage patties, for about 5 minutes, then added the bell pepper and two shakes of dried parsley since I didn't have fresh, and cooked for another 7-8 minutes. I also added the tomato, salt and pepper in the last 2 minutes. Once done, I placed a small layer of finely shredded fiesta blend cheese on one half of the cooked egg (sprayed pan I used for egg with an olive oil spray and beat egg with salt and pepper added), then placed the mixture on top and folded the egg over that. Served some with sour cream and salsa. GREAT breakfast, thanks!!

Turkey Jambalaya

This was GREAT! We have been on south beach for some time now, and this recipe is a definite keeper for that. I ommitted the rice (obviously for south beach!) and I substituted a red bell pepper, so I only let it cook for 15 minutes after adding the sausage. I didn't add celery because I didn't have any. For my husband, I also added shrimp for the last 5 minutes of cooking. Awesome!!

Spicy Lime-Cilantro Marinated Flank Steak

This was an awesome recipe! I changed two things - I left out the honey to make it SB diet friendly, and I used olive oil instead of corn oil. Marinated strip steak in the refrigerator for 2 hours, then grilled. Served sliced over a ceaser salad - superb! Thanks1

Easy Chicken Fajita Soup

This was really good! I only changed a few things because of what I had on hand - I used regular diced tomatoes instead of fire roasted and a small can of diced fire roasted green chilies because I didn't have poblano peppers. I also added another half can of chicken broth because I like my soup to have lots of broth, and a shake of garlic powder. Yummy, thanks!

Sandy's Casserole

This is a great recipe, and unlike others, my noodles fully cooked. I didn't have canned chicken on hand, so I boiled then when done chopped 2 boneless chicken breasts. Used 1 can of cream of mushroom and 1 can of cream of chicken. Covered with foil (probably why my noodles were cooked) and baked for 45 minutes, stirring once half way. After 45 minutes, I removed foil and covered top with crispy french onions and baked for 10 more minutes uncovered. Yummy! Thanks for the recipe =o)

Saucy Cajun Chicken Breasts

This recipe was so simple and so yummy! I placed the frozen chicken and marinade in the refrigerator the night before. The next day in the early afternoon I took them out of the bag and shook off the excess marinade. I then placed them in the slow cooker with the bbq sauce (used hot & spicy sauce) and cooked on low. Once done, I shredded the chicken, then served with store bought kaiser cheese and onion rolls, chedder cheese slices, lettuce, and a bit of bbq sauce to make sandwiches. The chicken was so tender! But like everyone else, this was more of a bbq chicken than a cajun chicken. Thanks for the recipe =o)

Sour Cream 'n' Chive Potatoes

These were awesome!! I made my life easier by using 3 bags of the Steam and Mash potatoes - what a great invention for us that love mashed potatoes but hate the work! While they were cooking in the microwave, I mixed together all of the ingredients except the butter. Once the potatoes were done, I mashed them with the butter, then added the mixture of the rest of the ingredients. I had mashed potatoes in 15 minutes - what more could you ask for!

Bread and Celery Stuffing

I was suprised such a simple recipe could be so good! I made it as described the first time, then the second time I used a complete box of Stove Top turkey stuffing in place of the bread. Both ways it was super good and easy, though I found the consistency better using the box stuffing. I will be using this recipe for this year's holidays!

Three-Ingredient Green Bean Casserole

This was good, but the taste of the French dressing was a bit overpowering. Make sure you like this type of dressing before making this dish. However my husband and I still liked the combination, and will make it in the future, with a bit less dressing or an additional can of green beans =o)

Turkey Florentine

I followed the recipe to a T and added the bread crumbs on top - not sure what I did wrong, but this came out pretty "not creamy", almost as if it dried up while in the oven. Despite this, the flavor was pretty good once we mixed it all together, and we still ate it and had seconds. I will make this again, but will probably mix it all together, then top with the parmesean cheese and bread crumbs. Just to be safe, I may add more gravy or dip too =o)

Party Pinwheels

I made these for a party, and they were received well. I think the ranch flavor was a bit overpowering - next time I will use a bit less. I also will use the flavored wraps as mentioned by others instead of plain flour tortillas to distract a bit from the ranch flavor. Overall a good recipe. Thanks!

Wildfire Sausage Meatballs

Appetizer Chicken Kabobs

These were really good! The only minor issue was that I made them for my husband and myself the night before my party, and they were pretty salty. I think using the low sodium soy like others mentioned would be a better idea. Anyways I had already purchased enough soy sauce for the party, so I used the amount needed and added a splash of water to dilute the salt a bit. They were much better for my party!

Chicken Enchilada Dip

This was so yummy! I made it with the ingredients listed, except I used 4oz of mayo and 4oz of sour cream since truthfully that much mayo scares me. I also just boiled the chicken, then used a food processer to chop it to save time. Everyone loved it and I have requests to make it for the holidays. Thanks for the great recipe!
