About this Cook
I'm recently married, and have found that I love nothing more than cooking a meal after work for my husband and I. I love recipes that are super flavorful and SPICY!! I've had to learn to adjust my cooking some, as my husband is White and I'm Mexican raised on very spicy food, and he's adjusted his pallate some, so overall we've come a long way...
My favorite things to cook
I love dishes that are quick and flavorful. Thanks to my Mexican heritage, I also LOVE spicy dishes, or dishes that I can add spice to!
My favorite family cooking traditions
Anything Mexican, though my husband's favorite is my basic Mexican rice with Chicken and Salsa. I also love my mole, a still secret family recipe!
My cooking triumphs
I like that I've learned to cook a lot of American dishes as well to mix it up some - I can have Mexican rice with every meal, however my husband is a different story!

Three Egg Omelet
This was super yummy! I cooked the onion and meat in a bit of butter, also adding diced turkey sausage patties, for about 5 minutes, then added the bell pepper and two shakes of dried parsley since I didn't have fresh, and cooked for another 7-8 minutes. I also added the tomato, salt and pepper in the last 2 minutes. Once done, I placed a small layer of finely shredded fiesta blend cheese on one half of the cooked egg (sprayed pan I used for egg with an olive oil spray and beat egg with salt and pepper added), then placed the mixture on top and folded the egg over that. Served some with sour cream and salsa. GREAT breakfast, thanks!!

Turkey Jambalaya
This was GREAT! We have been on south beach for some time now, and this recipe is a definite keeper for that. I ommitted the rice (obviously for south beach!) and I substituted a red bell pepper, so I only let it cook for 15 minutes after adding the sausage. I didn't add celery because I didn't have any. For my husband, I also added shrimp for the last 5 minutes of cooking. Awesome!!
