Cranberry Pumpkin Banana Bread

First off Jenny, this was a FABULOUS idea to combine such wonderful flavors. 4 stars however because of the changes I made to suit my personal preferences, since the cake lacked that WOW! feature to my tastebuds. I added 1 tsp each of dried orange peel, nutmeg, and ground cloves as well as 1/2 tsp. ginger, and an extra 1/2 tsp. of cinnamon. Also, I'm a firm believer that if you decide to leave your diet for a bit and indulge, the indulgence better be over-the-top-worthy, so I added an extra 1/4 cup white sugar, and 1/4 cup pumpkin spice coffee creamer to the batter. Half-&-half would work just as well, but this added some great flavors. To finish I had some leftover cranberry sauce in my can, so after I poured half the batter in the pan, I spooned about 3-4 tablespoons cranberry sauce on top, then poured the rest of the batter on. VERY moist, and it looked rather pretty. :) Thanks for giving me the perfect base to work off of, Jenny!

The shells came out SO good!! I was very pleased. I DID add a tad more sugar, just because I tend to do that, but that's just me. Also, the wine was the PERFECT touch to bring the flavors together. The filling, on the other hand was tasty, but not firm enough to pipe well into the shells. (It came out quite a mess, so I ended up scooping the filling with the shells in the end, since this was a trial run for me.) I would HIGHLY recommend draining the ricotta overnight BEFORE you begin this process, and you'll end up much happier. I also added some vanilla, and left out the citron in place of mini chocolate chips, since I'm not a fan of citron. :D All in all, this was a success for me, and Pop will be pleased when I come home for Christmas and make him this treat. Thanks!! Note: The shell making is NOT a one-person job. I did it (and nearly set the dorm on fire MANY times) so it's POSSIBLE, but way easier and more fun if you have someone rolling and forming the dough around the tubes, while someone else is frying them and then removing the shells, since they take around 30 seconds to cook.

Spicy Sweet Stovetop Popcorn

Added a tsp. of salt. Also, spray pam on your pot before you add the coconut oil--This is one STICKY recipe. This definitely TASTED healthier than movie popcorn, but then again, I like the fatty taste of buttery popcorn. :) Needless to say, this was an...interesting recipe to try, and I might repeat the experience, but only if I feel guilty about eating fatty popcorn again. ;P

For those having trouble for them crisping, I always use 4 cups of flour, and instead of margarine, 1 cup vegetable oil. I've never had a problem with them not being crisp and delicate. Also, if you HATE anise like me, 1 tsp of vanilla, and 1/2 tsp. lemon extract will do nicely in its stead.

Buffet Meatballs

Simply AWESOME. I made these for a culture fair, and I was representing Italy, and I didn't have the time or money to make my mothers meatballs and sauce, so I tried these. They're not authentic Italian...But they still disappeared just the same. I had 5 lbs of meatballs, so I added half a cup more of everything, and it was superb. Thanks for sharing!

Italian Cream Cheese and Ricotta Cheesecake

WOW. This was...I mean, WOW. Thank you SO MUCH for sharing this fantastic recipe! I know how it is to have a recipe you want all to yourself, so thanks again for sharing it. :) Drained the ricotta with cheesecloth for an hour before adding, and since I was out of lemon juice, I added dried lemon peel I had on hand. If you're having trouble with the cheesecake cracking, fill a pan with water, and place it under the cheesecake to let it steam with the cake. DO NOT OPEN OVEN until AFTER the 2 hours. It's important to keep the temperature constant.

Too Much Chocolate Cake

FANTASTIC!! I recommend to NOT refridgerate this cake. It would've been fine the day of, rather than waiting a day. Still, a big hit--Covered with chocolate covered strawberries and the chocolate satiny glaze from this site. ALMOST too much chocolate...ALMOST. ;D

Grandma's Lemon Meringue Pie

This was AWFUL. I've read this over and over again and still can't figure what went wrong, but this was probably the WORST lemon meringue pie I've made. I try a different recipe each year for my dad's birthday, and I'm not sure what it was, but the flavors didn't blend and the meringue flattened out to almost nothing as it chilled in the fridge.

Peanut Butter Kiss Cookies

Would've given it five stars if the batter hadn't been so greasy! I followed directions to a TEE, and I was literally squeezing grease droplets from my fingertips. I used Jif peanut butter, so maybe that had something to do with it, so maybe some flour next time. Cookies were chewy and a little crisp, and otherwise good except for the grease!!

Cheesy Baked Cauliflower

I followed the recipe and found it to be rather blah for me. I ended up adding some fresh ground pepper and salt, but it wasn't the best. It LOOKED fantastic though, so 4 stars for a pretty dish.

Coconut Poke Cake

All I can say is WOW. I've NEVER received as many reviews for a cake as I did when I presented this at my sister's 21st birthday. It was a HIT!! I was worried because I accidentally picked up a can of coco frio, (which is coconut cream already mixed with sugars, ready for a pina colada). I mixed a half cup of half anf half in it, and poured that over the cakes instead, but the worry was unwarranted. I'll stick with what I did. Also added a few drops of coconut extract to the cake batter prior to baking. Voila--Fantastique!!!

Raspberry and Almond Shortbread Thumbprints

My family likes traditional Italian Christmas cookies, and I like to try new things. 10 days before Christmas I made one batch of these and set them out on the counter to see what the general reaction would be, and by the time Christmas came and went, I had to make 3 more batches! Cranberry Sauce

I was rather worried about trying whole cranberry sauce because I know cranberries are very tart and untasty by themselves, but NEVER AGAIN will I go back to canned cranberry sauce! I doubled the recipe, followed some advice and did half brown, half white sugar and used orange, pineapple and a tbsp. lemon juice and it was PERFECT. My pop added the peel of an orange, and a cinnammon stick overnight and removed right before serving. The flavors were tangy, sweet, subtle, and undeniably harvesty. It wasn't bitter and it was EVEN BETTER with turkey leftovers days later. Cranberries are so cheap and plentiful at this time of year, everyone should at least TRY this recipe. :)
