Boudreaux's Zydeco Stomp Gumbo

Reviewed: Apr. 3, 2011
Lupe and Jason, A++++ on your gumbo!!! I darn near followed it to a tee, but had to make a few changes based on what I had and bc I wanted it to be my own. Used 1/4 cup butter and 3/4 c olive/canola oil blend and the 1 c flour. Roux seemed thin, only cause i'm used to gravy. It does take 30-35 minutes (of constant stir/mixing) to get browned enough. Roux is key. Used a whole lb of Andouille sausage, shredded the breast meat of a cooked chicken and 2, yes 2 pounds of shrimp (51-60 ct) Shrimp went in at the end of cooking. Also, used Margeret Holmes Tomatoes and Okra (2 cans). Served with rice and a glass of wine, didn't have any Zydeco music.... maybe for breakfast.? So good!!!!! Thanks for sharing!!!!!!!

Drip Beef Sandwiches

Reviewed: Apr. 2, 2011
I thought this was more of a crockpot recipe than a stovetop one. I had to cut the recipe in half though, 5 lbs of meat equals 5 servings? Yikes, that's a big ole sandwich.....haha! I love the coffee filter idea. I used Better than Bouillon and chopped garlic that comes in the jar instead of garlic salt. Turned out great and the juice is a perfect dip to complement. Add all to the crockpot cover and let it go, no diassapointments!!!! PS, i don't know why someone would buy the wrong cut of meat and "butcher" the recipe and then rate it 2 stars. Learn from the mistake, but don't not try it bc someone deviated from the recipe and left a poor rating. Yummy!!!!! Thanks!!!!!!!

Morning Afternoon Night Iced Tea

Reviewed: Apr. 2, 2011
I thought this was very good. All I had on hand was flavored green tea bags, so I used that and 1 cup of 2% milk (bc that's what I drink) and a little more than 1/2 cup half and half (to make up for the lost fat and creaminess of the 2%). I only occasionally drink coffee in the mornings, but still want a little kick of caffeine. This is very light and will be a perfect iced drink, that's already made, to get me going. Especially living in a humid climate. Thanks!!!!!

Bat Wings

Reviewed: Jul. 28, 2010
I thought theses were great wings, not what i'm used too, but so simple to make and very tasty!!! Not a big fan of using large wings, i'm a drummette kind of girl. Also, I don't think people should be leaving 3 stars for a recipe they have never tried, seems odd to me. Thanks for the recipe!!!!!!!

Slow Cooker Chicken and Dumplings

Reviewed: Mar. 15, 2009
This was really very good. I did some of the modifications others suggested, 1 can cr or ckn and 1 can cr of mush. Before I added the biscuit dough, I added 1 can of veg all, I did only use 1 can of biscuit dough and it turned out wonderful. A little salt, pepper and garlic powder.......... so good and so easy!!!!!

Easter Grass Slaw

Reviewed: Oct. 12, 2008
I have this Taste of Home issue and think this is really some of the best slaw. I've been making it for a couple of years now. I love a sweet cole slaw and the apples add an additional sweetness and crunch. Not just for Easter. A defenite keeper!!

Crawfish Chowder

Reviewed: Jun. 6, 2008
I found this recipe a few years ago and have been in love ever since. I live in the South, so we've only eaten fried or boiled crawfish. This is a great, hearty change of pace. Would love to try the other persons review and add some sausage and potatos. Thanks!!

Salmon Dip

Reviewed: Jun. 6, 2008
This was yummy. I used a salmon fillet in it's own microwavable pouch, orange bourbon flavored. Also as some others recommended, used mayo instead of sour cream plus I added one dash of liquid smoke. Loved it!! Perfect for crackers or snacking with some toasted bread and veggies.
