Pineapple Rice Casserole

Reviewed: Jun. 27, 2009
Definitely add more cheese, brown sugar & cinnamon to rice mixture. Also, save drained pineapple juice & add enough water to prepare rice. Adds nice flavor & it keeps it from being too soupy. I would give this 3.5 stars..a little different, but not stellar

Quick Chicken with Asparagus and Provolone

Reviewed: Jun. 27, 2009
If you are not into pounding chicken...try slicing it in half lenthwise with a sharp knife. I have quit pounding! JUST BE VERY CAREFUL... This is a great basic recipe that has lots of possibilities for changing it into something new every night. Try topping it with salsa & pepperjack, OR fresh bruschetta & mozzarella, OR broccoli & cheddar cheese, OR fresh spinach & goat/feta cheese, OR fresh mushrooms & onions & provolone OR spaghetti sauce & parm cheese served over pasta. Lots of ways to change it up.

This is great and oh, so easy! I liked the added garlic clove to the jar. I didn't have dried red pepper on hand, so I added 1 tsp red pepper flakes to each jar.

Whole Wheat Blueberry Pancakes

Reviewed: Sep. 13, 2008
One of the best whole wheat pancake recipes ever! Because I used 1/2c flour & 3/4c whole wheat, I added 1/3c ground flaxseed. Also, as another reader suggested, I added cinnamon and vanilla. The extra 2Tbs milk made the batter perfect for us. I didn't have blueberries on hand, but it was still delish!

Easy Peach Cobbler

Reviewed: Jun. 5, 2008
This is much better if you use 4 to 6 FRESH peaches! I also added 1/2 c blueberries. For a little more flavor, I added a couple of tablespoons of apricot preserves to peaches. This might make the canned peaches a little more flavorful.
