Emily's Famous Marshmallows

Reviewed: Dec. 23, 2014
I made 3 double batches of this recipe (mind you, following the tips of using a large pan for cooking the sugar mixture then adding the gelatin mixture in slowly and using my kitchenade mixer to do the mixing..... Big help). I made regular first (turned out perfect and SO GOOD), caramel 2nd which I only did because I goofed and didn't double the gelatin, used a 1/4 cup less water in the sugar mixture and cooked the sugar mixture on to high of a temp - all by accident. It had a caramelized flavor going on due to my mistakes and so I added some caramel extract and went with it. Besides the huge mess the sugar/gelatin mixture made when going into the egg whites due to it hardening as I poured it and so it didn't make the marshmallow fluff like combo the first batch did, they still turned out good. They were much more dense than the light and fluffy 1st batch. The last batch went fine. I only had 6 tablespoons of gelatin left and so that is what I used in the last doubled batch. I added mint extract and green food coloring. The also turned out great. All 3 had wonderful flavor. I will be making them again and will try experimenting with other flavors too. I would stick with the exact measurements recommended in the recipe after all this. They really did turn out the best. One other tip.... Lined my pan with wax paper and then put the powder sugar all around it. That made it very easy to pull the marshmallows out and place on a cutting board to slice into squares. Enjoy!!

Baked Buffalo Wings

Reviewed: Oct. 6, 2013
Have made this a few times and a few ways. Always wonderful. I like it best when I mix all the spices they suggest and then add onion powder, paprika but skip the salt. I put the spices on the meat directly sometimes and just in the flour other times. Always good either way. I do let the wings sit in the flour for a few hours and make sure the wings are dry when they go into the flour. When I bake them, I do it on a PAM sprayed rack over a cookie sheet. PAM is VERY important. I don't put the sauce on until they have 10 minutes left or less. Then I pull the wings out and sauce them up. I put them back on the sheet and finish up baking until they are not dripping and the sauce is baked on. So good.

Best Chocolate Chip Cookies

Reviewed: Dec. 11, 2011
No good, in my opinion. Was greatly disappointed in how quickly they went from underdone to overdone. 6 minutes was raw. 7 was burnt. Also no one suggested that you make the dough balls really small because these spread out.

Did not really love this... had never had Chicken A La King though and so maybe it is a wonderful comparison and A La Kings are just not my taste.

Sweet and Spicy Pumpkin Seeds

Reviewed: Dec. 11, 2011
SO GOOD! Will make these every year now that I tried them. I, also, added a little extra tabasco because I wanted my other half to like them. He stated that HE DOES NOT LIKE PUMPKIN SEEDS to me before I made them. I was determined to prove him wrong. I won!

Garlic Green Beans

Reviewed: Dec. 11, 2011
Very good. I made these for Thanksgiving and they were a hit with the 4 different families that attended. I wanted to make something fancier than the traditional steamed beans I would have made if it had just been a small group coming. I will continue to make these in the future.

Apple Pie by Grandma Ople

Reviewed: Dec. 11, 2011
Not really a fan of this pie. I did not like the results of pouring the liquid over the crust. It totally dissolved part of the crust. The flavor fell somewhere between a caramel apple pie and a regular pie. Was strange.

Buttery Cranberry Pie

Reviewed: Dec. 11, 2011
This was a very good pie and a great use of the extra cranberries I had left over from Thanksgiving. I was a little nervous after reading the reviews that it might be to tart and so I did do a couple of things. I used a little less cranberries (about half of what it called for) and then replaced the remainder with Raspberries. I also left out the lemon juice but would leave it in next time. The pie turned out good. I would make it again. The only other thing I would change is I would add some instant tapioca to the filling. It was a bit runny, even though it was tasty. One other detail... I used a deep dish pie crust. Wanted to be safe. Glad I did because it needed it.

Guacamole

Very good Guacamole recipe. Just like a place that made it fresh for us at the table in Mexico. Yummy. I took the leftovers and added feta cheese. Took it to work the next day with some chips. Everyone loved the twist. :) ENJOY!!

Kalua Pig in a Slow Cooker

Reviewed: Jun. 14, 2011
So easy! So good! Leftovers were usable as pork tacos (just add spanish rice and cheese) and pulled pork sandwiches (just add bbq sauce and a bun). I did make a 7 1/2 lb roast though so I had plenty of leftovers. Also, I have a 2010 Hamilton Beach slow cooker that tends to cook faster on low. It only took me 9 hours max on low setting for it to be done. We put it on the warm setting until we were ready to eat since we thought we had MANY more hours left until it would be done. Made me regret getting up before the sun to put this in the crock pot. I am thinking that the person who made it and posted it originally has a very OLD crock pot that cooks very slowly. Just keep that in mind when making this. Hate for anyone else to lose valuable sleep needlessly too. Other than that... VERY GOOD! VERY!!!!!

Butternut Squash Bake

Reviewed: Jun. 14, 2011
This was AMAZING! In my family, I am the only one who does not curl their nose at squash. I did, however, want to try making it in a less traditional way (aka sweet with brown sugar, butter and such). I can't believe how much I liked the squash with the bleu cheese. I am typically not a fan of bleu cheese but I loved it with this meal. I ate it with the Kalua Pork recipe (also amazing, easy and on this website) but think next time I will make it with steak. One last thing... my 5 year old ate it and so did my 40 year old husband. That is a HUGE accomplishment.... they loved it too. (super easy to make this if you use pre cut squash from the super market too).

Slow Cooker Beef Stroganoff I

Reviewed: Jun. 8, 2011
Very easy and very good. My 5 and 7 year old both loved it. I did not mention that it had mushrooms in it though and so they would not automatically say they don't like it. It worked. They had seconds.

Bacon Cheddar Deviled Eggs

Reviewed: Apr. 27, 2011
So yummy. I made them for Easter brunch. They were a HUGE hit and I find myself craving them now. I made them exactly how the recipe suggested except I bought the Oscar Myer real back pieces instead of cooking my own to save time. It worked well. I will try it in the future with bacon I cook when I have a little more time.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Nov. 28, 2010
I liked this recipe and will definitely make it again. It makes A LOT of cookies. I followed the directions exactly and they turned out well. Ok, I take that back. I almost followed it exactly. The only difference I did was I chilled the dough to make it easier to put on the cookie sheet, I cooked it on parchment paper to make it not stick to the sheet for sure and I used milk chocolate chips. I would say that is darn close to following exactly. I am looking forward to trying these with different pudding flavors in the future. But not the near future since we have A LOT of cookies already. :)

Turkey Meatballs in Garlic Sauce

Reviewed: Nov. 16, 2010
We liked this recipe very much. I did use dried oregano instead of parsley because that is what I had. Also (for the same reason) I used tomato juice instead of V-8 and Italian Bread Crumbs instead of butter flavored crackers. I cooked the sauce a bit longer in order to thicken it up to add on top. It was good that way too. I served it over brown rice and everyone enjoyed it very much. It is very good with squash as the flavors compliment one another.

Butternut Squash Supreme

Reviewed: Nov. 16, 2010
Very good. My 4 year old, 6 year old and other half were all first timers to squash and they were sure they were not going to like it. To their surprise they loved it. Everyone had seconds (or thirds). I did everything mostly the same as the recipe with the exception of using italian breadcrumbs on top instead of crackers because that is what I had. Also I followed the suggestion of another person and sauted the onions in a little olive oil before mixing them in. Will make it again. Be warned it can take a little time to make this so it is not a quick fix meal but well worth the time.
