Gourmet Microwave Popcorn

This is a fantastic! The seasoning possibilities are endless: chilli powder, paprika, black pepper, lemon pepper, finely ground dill, whatever you like! The olive makes the flavour much richer and sophisticated than the microwave popcorn you purchase from the store.

Easy Sugar Cookies

Tasty and easy cookies. I reduced the butter just a bit and they still stayed together rather well. Just for some seasonal fun I pressed a chocolate chip and some black and orange sprinkles into each cookies before baking. I think they look a little like bloodshot eyeballs. This is my new sugar cookie recipe!

Buttertart Squares

Perfectly delicious! I would change nothing. Love the oats and coconut, they really bring this square together. The shortbread is soft and crumbly but needs to be handled gently in order to avoid breakage. Do grease the pan evenly. This recipe has become a family favourite and I make it for every holiday and family gathering (and sometimes in between). With a few copyright protected tweaks (*wink*) this recipe won first prize at my local fall fair!

Grandma Chase's Nanaimo Bars

Thanks Grandma Chase, this is a great recipe! My family LOVED them. I added red food colouring to the middle layer in celebration of Canada Day! I also replaced the walnuts with coconut (Sorry, but it just isn't that classic Canadian dessert without it). I will definitely make these again!

Easy Vegetarian Red Beans Lasagna

I rated this based on the changes I made. I didn't have everything the recipe called for so I didn't use garlic, I used yellow peppers instead of red, I used italian stewed tomatoes instead of regular diced, I had romano beans on hand and I used cooked spinach lasagna noodles. I also changed the white sauce by using cream cheese in place of butter, adding only about 1/4 cup light parmesan cheese and putting in about 1/3 cup of light shredded mozzarella. I topped it with a bit of light cheddar and mozzarella (no gruyere). SUPRINSINGLY my whole picky family loved it! (Even my pepper hating brother)

Lemon Cake with Lemon Filling and Lemon Butter Frosting

Wonderful! Moist, delicious and GORGEOUS! This was a big hit with my whole extended family. I replaced all the lemon with orange (because I have a non-lemon loving sister) and it worked out marvelously. In the interest of saving eggs, I used the whites leftover from making the filling in the cake batter instead of using three whole eggs. It worked out just fine and I would definitely recommend that everyone try this.

Golden Pumpkin Rolls

Perfect! These are absoutely delicious. They aren't too sweet and they are wonderfully soft. I used cinnamon, nutmeg and white pepper instead of cloves. They were great with my vegetarian pumpkin chili. According to my dad I have to "keep this recipe. Don't lose it!"

Bread Pudding Apple Pie

Marvelous, even without the crust. I used fruit and berry rye bread and added a bit of cinnamon to the crumble topping. It turned out to be very similar to a coffee cake. For a drier, firmer texture, I would use only one apple or maybe a bit less yogurt or applesauce.

Mystery Chocolate Cake

Marvelous! My dad unintentionally challenged me to hide beets in baked goods. He thought it sounded wrong. I scaled the recipe to 16 servings and made it into 12 cupcakes. I added 1/2 tsp. of cinnamon, replaced the oil with applesauce and lowered the sugar a bit. I needed to puree the beets because mashing them left too many indiscrete chunks. I'm about to test them on my sister who doesn't know they have beets in them! Can't wait to fool my dad too!

Mom's Best Peanut Brittle

This is a very easy and delicious brittle recipe. I used split raw cashews instead of peanuts and threw in a bit of vanilla extract with the butter and baking soda. The vanilla plays well off of the buttery cashew flavour. I will use this recipe next time (with pistachios? almonds? hazelnuts?).

Canadian Butter Tarts

These went over really well with my buttertart loving family. I had some trouble getting the dough to come together but it turned out wonderfully flakey. With the bit of leftover dough I made a few mini tarts in a mini muffin pan. I filled them with a mixture of jam and coconut. They were also a big hit!

Aunt Jane's Brown Bread

I wanted to make some fresh (and quick) bread to go with the chili I made for dinner. I didn't have any molasses at the time, so I was forced to use honey. It turned out great! My family loved it! It was probably a bit too sweet to eat with chili, but I'll definitely make it again. Next time I'll try it with molasses.

Heavenly Cinnamon Rolls

These look and smell great and I love how low in fat they are! The texture is wonderfully soft as well. However, they need to be a bit sweeter. I will definitely make them again with some more sugar and maybe some cinnamon in the dough.

Vegan Cheesecake

This is a sweet, custard-like, vanilla flavoured cake. I made smaller tarts and they turned out well. They don't taste like tofu so this is even great to serve to proclaimed tofu haters. I'm going to keep experimenting with baking time for optimum moistness/firmness.

Sour Cream Turkey Enchiladas

This was a hit with my turkey loving family. Although the turkey flavour might have been a bit heavy for the mild flavour of the cheese and sour cream, the sauce was amazing with yellow pepper instead of jalapeno. I will definitely make this again (as an alternative to the use-up-the-leftover-turkey pot pie).

Saltine Toffee Cookies

Soooo addictive. When you get a crumb without chocolate on it, the flavour of the soda cracker seems to show through A BIT, but as long as everything is thoroughly smothered in chocolate they're AMAZING. I experimented with different toppings (coconut, chopped almond, cocoa crisped rice, white chocolate...) with limitless success. I'm definitely making these again at Christmas.

Quick and Easy Brownies

This recipe taught me a lot about brownies. I made these to satisfy a request from my family for a treat. I used chocolate chips instead of walnuts and served them with Dream Whip, creating a craving-satisfying dessert. Personally I found these weren't quite sweet enough and tasted somewhat eggy. Next time I would likely use less flour as previous reviewers suggested and perhaps one less egg.

Graham Cracker Crust I

There was too much butter for the amount of graham cracker crumbs, so I mixed in about another half cup. I did not add the cinnamon but I'm sure it would be delicious. It was fanastic under my pumpkin pie!
