Jelly-Filled Muffins

OMG, these are hands down the best muffins ever! I used raspberry jam inside and for the topping I just mixed brown sugar with cinnamon and a little bit of butter and sprinkled it on top of uncooked muffins. I took the advice of other reviewers and baked for 15 minutes at 350, as I don't like overly brown muffins. I will make this again and again! What a treat - thanks for this amazing recipe!!!!

Sky High Yorkshire Pudding

Excellent and super easy. I might bake them for a few minutes less than 35 next time, as they seemed quite dark to me, although my husband and my guests argued that they were perfect!

Empire State Muffins

This is my new favorite muffin - and I make alot of muffins! The only changes I made were - instead of nuts, I used chopped pumpkin seeds - surprisingly great! - whole wheat flour, of course, and dried cranberries because that's all I had - might be even better with fresh or frozen ones though. And for any of you health nuts out there - agave syrup works marvelously in place of sugar in any muffin recipe - use less than sugar (3/4 Cup syrup for 1 Cup sugar) - doesn't cause a spike in blood sugar and it's unprocessed. I will certainly be making these again and again!

Banana Praline Muffins

Awesome. Possibly my favorite muffin. And so quick and easy. I didn't have sour cream, so used yogurt instead....took others advice and made a bit more pecan topping. I only had whole wheat/flax pancake mix and it turned out fabulous - and healthier!

Roasted Rosemary Cauliflower

What a great way to eat make cauliflower. I thought it tasted fantastic; I added some sliced carrots and some frozen brussel sprouts and some minced garlic. Would taste great without the additions too. My family wasn't as crazy about it as I was, but they are not vegetable fans like I am.

Pumpkin Wheat Honey Muffins

I didn't have any walnuts, so used grated carrot instead - I know, a strange substitution - but it actually worked really well. Just had to increase baking time by a few minutes. The kids don't know they're eating veggies and enjoying them too! The 2nd time I made them, I followed the recipe a bit closer - no carrots!, but still no walnuts, added a full cup of pumpkin as others suggested - and they turned out perfect. I still had to increase the baking time by a few minutes.

Pumpkin Protein Cookies

I made these minor changes: I had no soy flour, so used whole wheat plus a tablespoon of ground Salba. I don't believe Splenda is good for us so I used 1/2 cup of Agave Nectar for sweetener. I gave this recipe 5 stars for health value and because my children, including the fussiest toddler on earth, gobbled these up. They aren't my favorite cookie, but oh so easy to make and good for you!
