Cheesy Acorn Squash

It was awesome. I had some leftover chicken handy so I shredded it and added it to the stuffing. I didn't have celery handy, but it tasted great anyway. I think I found a great Thanksgiving side dish!

Apricot Salsa Chicken

Awesome recipe! I'm on a diet and I prefer fresh fruit, so I made my own salsa out of chopped apricots, onion, chipotle chilies, tomatoes, and hot habanero peppers. I used whole wheat flour. Instead of paprika I used cayenne, and instead of nectar I mixed honey and Pam (or melted butter would work) together to get a slightly thinner consistency than the honey. Thank you sooo much for this recipe. It was wonderful and I'm sure I'll make it again.

Chipotle Peach Salsa with Cilantro

Loved this salsa. Didn't have peaches so I used canned pears, oregano instead of cilantro and white onion instead of red. I also used a can of diced tomatoes with (hot) habanero chilies. That's all I had on hand, and it was oh soooo delicious! Great recipe!

Black Bean and Salsa Soup

This soup was AWESOME. I used vegetable stock instead of chicken, added about 1/2 cup of fresh chopped onion, and a teaspoon of sour cream before blending. Wonderful!

Creamy Zucchini Soup

Fabulous recipe! I love spicy food so the red pepper flakes were just my style. Anybody sensitive to spicy foods should leave the pepper flakes out. It's a great soup! I added a dollop of sour cream with the cottage cheese. I plan to thicken it up to drizzle over steamed or cold veggies! I forgot...I'm on a diet, so I used Pam instead of butter. I also used just 1/4 cup of low fat cottage cheese and a small dollop of low fat sour cream.
