Jam Filled Butter Cookies

Just got these out of the oven and they are delicious! The cookie is buttery and compliments the jam perfectly. I used rasberry preserves and am getting ready to make a second batch with apricot preserves. I did add a little vanilla to them and also used a baggie to pipe the jam into the thumbprints like another reviewer suggested. Easy cookies to whip up and wonderful taste! These will be a part of our annual Christmas cookie spread!

Baby Back Ribs

This was the first time I ever made ribs. This recipe was so simple and worth the time to cook them slowly for tenderness. I did not marinade my ribs in barbeque sauce for 8 hours, like suggested due to time. I simply grilled the ribs first for about 20 minutes total over low heat. Then I made the foil packs and put a bit of sauce over the ribs before wrapping them up. Then popped into a 275* oven for 2 hours. They were falling off the bone tender. Delicious!

Spinach Bars

The key to making this dish firm and done in 30 minutes is to make sure you drain the spinach very well. I defrosted my 16 oz. bag of spinach for 4 minutes in the microwave and then put it in a colonder and pressed with the back of a big spoon until most of the water was out. I also cut the cheese to 2 cups and added 1 cup feta. Delicious! My family all loved it.

French Onion Casserole

I used minute rice, as suggested by another rater, and also sauted my veggies with the ground beef, then drained the grease. I sprinkled a little cheese on top and baked for 30 minutes. It was fast, easy and my family really liked it.

French Fry Casserole

Overall, this recipe was very good. In fact it was better the next day as left- overs. I wasn't sure if the fries would be soggy the next day, and they were soft. But as it turned out, the softer texture was better and the flavors all melded together. I may try this next time with shredded potatoes (the hashed brown type in the refridgerated section).

EAGLE BRAND® Peanut Butter Fudge

This is almost too good to be true! It is delicious and there are so many possibilities for adding other yummy ingredients. It is the easiest fudge I have ever made and so delicious. A must try.

My Best Clam Chowder

This is really great clam chowder. I took someone's suggestion and added bacon. The vinegar gives it such a good flavor. Warning: It makes enough to feed an army. Next time I will cut the recipe in half.

Chocolate Pretzels

I made these with Hershey's chocolate mint truffle kisses and they are so good! I topped with green and red m&ms for a festive Christmas look. These are deeelish and so easy.

Chocolate Mice

Very time consuming, but worth it! I used Teddy Grahams and didn't have many left over to roll the mice in, so I mixed a packet of hot chocolate mix with the left over crumbs. It gave the mice a nice color. I also rolled them in coconut, but that didn't look very good, although yummy. They are very rich. I liked some of the other suggestions of cutting down on some of the chocolate. I doubled my batch and made some into round truffles and covered them w/sprinkles or coconut.

Spicy Grilled Shrimp

I am normally a "follow the recipe exactly" person, but I didn't have cayenne or lemons for this recipe. I put a dash of red pepper flakes in the marinade and all of the other ingredients, minus the lemon juice. I let my pound of prawns marinade for about 40 minutes and then squeezed the juice of a lime over them just before grilling. Wow, they were fabulous, simple and quick. I paired it with filet minon and my husband said it was the best meal I have ever cooked!
