Russian Mushroom and Potato Soup

This is really good! I wasn't sure about the dill, but it adds a nice touch. I didn't have a leek, so used a bit of onion instead. I like to make homemade soups in the fall and winter, and this is the perfect addition to my stash!

Mexican Rice II

I adjusted the ingredients to make the recipe for 10 people for an "Ocho de Mayo" party we had (the 5th was on a Tuesday!). Everyone LOVED the rice. The only change I made was used half white rice, half brown rice. The only reason I did that was becuase it's all I had on hand. Turned out awesome. Everyone asked for the recipe.

Szechwan Shrimp

The ingredients sound weird, but trust me, they work! I double the sauce part. I add the already cooked, deveined shrimps at the very end just to warm through. I also add steamed broccoli - my preference, but you could probably use any veggies. I serve with a fried rice from a packet. Quite tastey.

Cottage Cheese Chicken Enchiladas

These are awesome! I use flour tortillas - personal preference. I've also used chicken from the whole chicken instead of breasts - that is handy when you've got it on hand. I've even used ground beef seasoned with taco seasoning and they turned out nice. Freeze well. This is a "casserole" I have taken to lots of friends with new babies.

Rosemary Ranch Chicken Kabobs

These are wonderfully, melt in your mouth delicious! The only variation I made was leaving out the tiny amount of sugar - it just sounded weird to me. Even my husband who claims to "hate" ranch dressing raved over the finished product. We've made it lots of times and is definitely a summertime grilling favorite in our home.

Cucumber Sandwiches III

These little sandwiches were perfect! I was looking for a fun way to use summer cucs for a party I had, and this was just perfect. I used baguettes and one cuc slice/bread slice was a nice ratio. The dill is the icing on the cake.

Grilled Salmon I

This is an awesome compliment to salmon. My husband claims to not like salmon, yet he always goes on and on about how tastey this recipe is...go figure! The perfect amount of sweet and salty. I've never changed a thing!

Best Bruschetta Ever

This is an excellent recipe! My husband and I enjoy this during summer when there are more tomatoes than we know what to do with! We slice up a take and bake asiaog garlic batard from the grocery bakery, pile on the tomato mixture (which we've usually marinated for a day or so), then fire up the grill. We use a greased foil and toast the bruschetta - watch it, though. Open flames + bread can sometimes = more open flames and blackened bruschetta. The toastiness really adds a nice texture.

Souvlaki

Tastey and good for you! My husband who claims to hate green peppers even ate those! I prepared this exactly as written. Cooked it on the GF grill (since Iowa winters are SO cold). Delish. Served it with rice pilaf as suggested. The souvlaki is only 5 Weight Watcher points/serving!

These are simple and good. Not out of this world, but definitely good. I used frozen blueberries and wonder if fresh would be better (fresh usually is!).

Peppermint Brittle

Pretty good! After crunching up the candy canes, there's a fine powder left in the bag. I dumped that into the melted almond bark. It added a nice minty undertone to the whole piece of candy. I love how festive it looks, too.
