Sweet Pepper Balsamic Bean Salad

I doubled the dressing, and toned it down with a little water. I used cider vinegar because I didn't have balsamic. I served the salad over rice and soy "ground beef" as a cold dinner. Everyone liked it, including the kids.

Homemade Salami

This was excellent - dry and spicy. The family liked it very much. Excellent with cheese and crackers. I would definitely slice it uniformly with my electric slicer before serving to guests, as the log shape was not very appealing.

Easy Chocolate Ice Cream

This was easy and we all loved it. I will definitely make this again. It has the consistency of soft-serve. I read one of the reviews and lowered the temperature in the freezer. I gave it a 4 out of 5 because the taste of the syrup is very pronounced. You can tell it is made with syrup, and not baking chocolate or cocoa powder.

Spanakopita (Greek Spinach Pie)

Went over really well at a Greek-themed dinner party. I made the following adjustments: 20 oz spinach, cooked and drained, 4 eggs, 2 C feta, 1 C ricotta, 18 sheets phyllo. I used all 18 sheets, and sprayed them with cooking spray. When I made it the first time, before the party, the crust along the side was thick, and leaked a little. So, in a brilliant move, I laryered 9 sheets of phyllo into the pan, added the filling, then layered 9 more sheets on top. Then I FLIPPED OVER the baking dish. That way, I was able to fold over the top layers attractively. Then I slid the package back into the baking dish. It looked professionally done.

Monkey Bread I

I will make this again, as it has a lot of potential. I did not have a bundt pan so I used a regular baking dish, and it did not bake evenly. I also thought it was a little dry. Next time I will use a bundt pan and double the syrup.

Slow Cooked Corned Beef for Sandwiches

This was very good. I particularly liked how it firmed up the next day. I was able to trim the fat, and slice it thinly for sandwiches, or a little thicker for dinner. I do wonder if this would be a good crockpot recipe. I don't always have that much time to watch a pot.

Karen A's Chocolate Dump Cake

I don't know what happened. The cake turned out very dry and the chips didn't melt. I'm giving it 2 stars because my husband and sons actually finished it. I'm not one to turn down either chocolate or cake, so you know there's a problem.

Sweet Restaurant Slaw

My family really liked this, and they are not big coleslaw fans. I substituted 1/2 the sugar with Splenda, and it was fine. Also, I added a lot of celery seed (1 T) instead of poppy. I used a whole cabbage, which is cheaper, and I was tempted to just slice it thinly, but I grated it instead, and it went over better. I don't know why - it's the same thing. Go figure.

Stuffed Pepper Soup IV

This was a good starter recipe. I used 2 lbs. sausage, 2 bell peppers, and omitted the broth. I added 2 T brown sugar and 2 T cider vinegar instead of the soy sauce. Mine was more like half soup, half casserole. Family loved it - including 4 teenage boys. No leftovers.

Spam™ and Napa Cabbage

This was a good, quick meal. I used 2 cans of Spam and a large head of Napa cabbage. I was surprised at how much the cabbage reduces in volume. I will make it again.

Gazpacho

This tasted fine after I adjusted the seasonings. I thought it was a little bland, so I added a lot more herbs. It tasted better, but the red color definitely took on a brownish cast. The onion was a little overpowering, in both flavor and texture, so I will use less next time. I will keep this on hand for snacking, it just wasn't wonderful.

Country Apple Dumplings

These were wonderful. My taste-testers didn't have enough thumbs to point up. I used diet 7-up, which tasted fine, but I think that in the future I will remove the cooked dumplings and thicken the sauce a bit before serving. What I especially liked that although some of the dough ripped a little, it didn't matter.

Microwave Bread and Butter Pickles

I followed the recipe as written, using Splenda instead of sugar. The cucumbers and onions came out yellow, which was ok, except it did not look like the picture. The cucumber itself was soft and limp, but the ONIONS were delicious. This is my new pickled onion recipe.
