Jalapeno Hot Sauce

This was a really good green sauce. Makes a large amount - more then I can use - but this was still a yummy green sauce.

Chili con Carne II

Every bite is cinnamon. Cinnamon and tomatoes! So I tried to save this chili - because this wasn't cheap to make. So I threw in some spices - and still the only thing you can taste and smell is CINNAMON. I spent a good hour trying to get rid of the cinnamon - couldn't get rid of it. CINNAMON was always in every bite.

Chocolate Zucchini Bread II

I've made this a couple of times. Every time I make it - it gets rave reviews. Especially from men. My husband loves this bread. I made a couple of loafs as gifts to relatives and neighbors. My husband took 2 loafs to work. His coworkers made a point to come over and rave that is was the best zucchini bread they ever had. Even the FedEx driver ate a couple of slices. The only thing I do different - is I just break the walnuts in half.

Szechuan Beef

The best thing about Chinese food - you can add whatever vegetables you like. I used broccoli, cauliflower, green pepper, onions and sliced almonds. I also double the sauce. Very yummy!

Tommy's Ham Casserole

This was pretty good. I had left over ziti in the fridge. So I cut up the ziti into a size similar to elbow mac. The only problem is the ziti was precooked - so it was a little dry. So I just added more milk to the recipe. Another variation is to cook the ham with some honey - gives it a little sweet to the ham.

Oven Omelet

I made this for my husband. He loves ham, eggs and potoes. So hey - this recipes has all 3 of them. Guess what - he liked it. Oh yeah - I did add strips of bacon ontop. He loves bacon too! I recommend cooking this on the top rack in the oven.

Dry Rub for Ribs

I've made this 3 times. The first time I followed the exact recipe - other than I only use Sea Salt. It was toooooo salty. I can't imagine how salty it would have been with morton's salt. 2nd time - I only used 2 grinds of the sea salt crystals, way way better. It is a very good rub - just either cut out the salt - or just put a dash or 2 of salt.
