i made these last christmas and my grandmother (the baker in the family) insisted that i had simply NOT made these with pudding. i had to email her the link to this recipe so that she would believe me! overall, excellent, excellent cookies. my son ate the mint topped ones, my daughter ate the chocolate chip ones and i ate the heath topped ones...something for everyone.

Absolute Mexican Cornbread

I halved the recipe and followed the advice of the others by cutting the butter down to 6 tbsps and 1/3 cup sugar with a full can of chiles and a bit of chile powder; coupled it with "Deboozie's Blue Ribbon Chili" great mix!!

Debdoozie's Blue Ribbon Chili

Even my 7 yr old ate this! I coupled it with the "Absolute Mexican Cornbread" and, needless to say, it was a keeper. I followed the recipe only substituting the dark red kidney beans for pinto beans and added a little bit of fresh jalapenos...other than that it really doesn't need any tweaking!
