My favorite things to cook
I love to cook for my family and everyone has a favorite dish. When I can perfect a dish that a loved one really likes, I am satisfied.
My favorite family cooking traditions
I remember my grandmother used to buy fresh produce from farm markets by the bushel. I am very lucky to live in the "garden state" and I too like to buy beautiful fruit and veggies from our local farmers. Just as I helped my grandmother "snap" beans and "shuck" corn and clean greens, my own children like to help with the prep as well.
My cooking triumphs
The very first time that I cooked an entire Thanksgiving dinner on my own and invited the family to eat at my house was a great accomplishment. Some dishes were better than others but at the end of dinner everyone was full and happy and that was a triumph for me.
My cooking tragedies
One word...QUICHE!

Caramel Apple Pork Chops
I just made this recipe using peaches instead of apples and it was very good. I will make this again I am sure. Thanks for the recipe!

Frogmore Stew
I have this all the time when the weather is hot. I cook it in beer with garlic, onion, and whole peppercorns in addition to the Old Bay seasoning. I like to add crabs as well. After draining, I put everything in a huge serving platter in the center of a paper covered table and serve with a butter and hot sauce combination. Wash everything down with ice cold beer and serve fresh fruit for dessert. It doesn't get any better...

Chicken Quesadillas
This is very close to the recipe I use to make quesadillas. My family likes "heat" so I use a chipotle seasoning instead of the fajita seasoning. I also use chiles instead of green peppers. I have never tried cooking these in the oven. I usually spread a thin layer of margarine on the tortillas and then cook them on my nonstick griddle on the stove. I've never had any soggy quesadillas using this method. I serve these with sour cream, salsa, and fresh guacamole. Delicioso!
