Ho Ho Cake

The filling was a little greasy tasting to me so I added about a cup of confectioners sugar. I then had too much filling for one cake - so I made two! They were well received at both gatherings I brought them too. I decorated the top with a curley-cue of filling to make it resemble a Hostess cupcake - a real conversation starter!

Fruit Pizza II

I loved the glaze in this recipe and was surprised at how easy and quickly everything came together. The first crust I made oozed over the edge in the oven and I didn't loosen it right away which was a problem. The second time I made the crust in a pan with sides and also used parchment paper on the bottom and up the sides so I could lift in out to cool and then serve on a flat tray. This worked perfectly and made for such a pretty presentation. This is a new favorite!

Melt-in-Your-Mouth Pecan Rolls

My son loved these, especially since he could help. Very quick to put together. I placed the first three ingredients in a glass 9 x 13 pan and microwaved for one minute then sprinkled the pecans on top and continued with the recipe as is. When I removed from the oven I flipped them out on a cookie sheet. I thought they looked a little doughy on the bottom so I put them back in the oven for another 5 minutes and they browned up perfectly! Thanks for the quickie, kid-friendly recipe.

Awesome recipe! Replacing my "from scratch" recipe as it is so easy and foolproof. I like to double the recipe and use butter beans instead of garbanzos. The sauce is perfection! The recipe is always requested.

Spaghetti Squash I

Awesome recipe! I pierced squash with a knife to vent steam and microwaved whole for 20 minutes. I skipped olives (preference)and added 2 cups of sliced mushrooms to make it more "meaty" when sauteeing the onions. I also added a splash or two of Marsala wine. We ate this as a main vegetarian dish that even my picky 10 year old enjoyed.

Black Bean and Corn Salad I

I love this recipe as written; however, I also like to add several cups of cooked and chilled spiral pasta to make a large colorful pasta salad for picnics and potlucks.
