Candy Coated Pecans

Easy to make and delicious! I used the amount of coating in the recipe for 2 cups pecans and it was just right. I stayed with the 275 F that the recipe asked for but needed to bake for almost 25 min (stirring every 10 min or so). The pecans came out with just the right amount of sweetness and very crispy.

Chicken and Red Wine Sauce

A simple and delicious dish. I came across this recipe when I was searching for a way to get rid of some leftover red wine in my fridge. I made it with 12 chicken wings and have followed other users' comments to cut down the brown sugar to 1/4 cup. I also fried the chicken first, took it out, made the sauce by first sauteeing onions and garlic before adding the chicken back to the sauce.

Grilled Lamb with Brown Sugar Glaze

Just made 11 lamb chops this past weekend using this recipe. I substituted tarragon and cinnamon with just rosemary instead. Also, I first pan seared each side for about 3 min before baking it for 10 min in 400C, they came out perfectly at medium (each chop was about 1.5 inch thick). Everyone loved it, will definitely make this again.

Chocolate and Almond Biscotti

I made biscotti using this recipe two days in a row. At my first trial (and it's my first time ever to make any biscotti), I pretty much followed the recipe except that I left out the almonds as I didn't have any and used orange vodka instead of whisky. The dough came out really dry even as I kept wetting my hands. The biscotti came out tasting alright but didn't look that great. Also, I found that there were way too many chocoloate chips. Determined to make some better biscotti, I adjusted the recipe by: - using 3 eggs instead of 2 - cutting the amount of choc chips in half - using sliced almonds - adding some orange zest The end result is a batch of much better looking biscotti with just the right amount of sweetness. I still find that it doesn't have the "smooth" look as most of the store-available biscotti. I think it's because there's no butter/oil used at all. However, I think it's a reasonable tradeoff of keeping this as a healthy snack.
